1 teaspoon kosher salt
1 teaspoon freshly ground pepper
2 tablespoon flour
1 tablespoon olive oil
1 tablespoon butter
1/2 cup heavy cream
1 1/4 cups low-sodium chicken broth

500 g (1lb) shrimp / prawns (peeled and deveined )
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chilli flakes

1 cup white wine (I used Sauvignon Blanc)
1 cup heavy cream
1-2 tsp fresh lemon juice
salt and pepper (to taste)

Steps:

  • Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
  • Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
  • Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
  • Stir to coat the shrimp in the spices.
  • Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
  • Remove and set aside.

  • Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
  • Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
  • Taste and adjust seasoning if necessary.
  • Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
  • Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).

  • While the pasta is cooking, in a bowl combine the shrimp, 2 tablespoons olive oil, and 2 tablespoons cajun seasoning. Toss to coat.
  • In a large skillet over medium heat, heat 1 tablespoon extra virgin olive oil, add the shrimp and cook until pink and cooked through, about 7 minutes. Remove the shrimp and set aside.
  • Give the pan a quick cleaning and return to the stove top. Over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 30 seconds. Whisk in the flour. Very slowly, whisk in the half and half. You want to just whisk in a small bit at a time, so that you can create a roux. If you whisk in too much at a time you won't get a nice creamy sauce.

  • Heat the oil in a large, deep skillet or dutch oven over medium-high heat. Place the shrimp in a bowl and sprinkle with 1 teaspoon Cajun seasoning, 1/4 teaspoon garlic powder, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Toss to coat. Once the oil is hot but not yet smoking, add the shrimp and cook just until they turn from gray to pink, are lightly firm, and fully cooked through, about 3 to 5 minutes. (Be careful not to overcook!) With a slotted spoon, immediately remove them to a large plate or large bowl. Reduce the skillet heat to medium.
  • Heat 1 tablespoon butter over medium heat. Add the red, orange, and green bell peppers. Cook 3 minutes, then add the mushrooms and sprinkle with 1 teaspoon Cajun seasoning and the remaining 1/4 teaspoon garlic powder, 1/2 teaspoon kosher salt, and 1/8 teaspoon black pepper. Sauté until the mushrooms are tender and have given off their liquid, about 5 additional minutes. Add the tomatoes and cook until most of their liquid has cooked off, about 3 minutes. Add two-thirds of the green onions. With a large spoon, scoop up the vegetables into the plate or bowl with the shrimp.
