Creamy Cucumber and Tomato Salad with a creamy homemade dressing.

Ingredients

3 medium tomatoes
1 English cucumber
1/2 medium onion
1 large garlic clove
3 Tbsp mayo
2 Tbsp sour cream
1/8 tsp pepper
Salt to taste

Steps:

Cut 3 tomatoes into 1" pieces, cut 2 cucumbers in half and slice and thinly slice 1/2 of the onion. Combine all of the prepared vegetables in a medium bowl.
In a small bowl, combine 3 Tbsp of mayo, 2 Tbsp of sour cream, 1 pressed garlic clove and pepper. Mix well.
Mix the dressing into the vegetables. Add salt to taste just before serving.

Combine cucumbers, tomatoes, onion, creamy salad dressing, sugar, salt, and black pepper in a salad bowl. If salad seems too sweet, add more salad dressing; if too tart, add more sugar. Chill before serving.

Steps:

Spread cucumber slices on paper towels to absorb excess water. This helps to keep the salad from getting too runny in the fridge. In a large bowl, combine mayo, sour cream and spicy mustard. Toss with cucumbers, onions, and tomatoes. Add Vinegar and seasonings to taste, making sure to evenly coat the veggies. Cover dish in plastic wrap and chill before serving. Enjoy!

This is an easy and delicious recipe to make when you have an overload of garden-fresh cucumbers, I use cherry tomatoes sliced in half since I have an abundance of them from my garden, and I use wine vinegar for this but regular white vinegar will do just fine! You might prefer a sweeter dressing so adjust the sugar and vinegar to taste. I have even added in some small broccoli and/or cauliflower florets to this.
