Creamy Mushroom Sauce image

This all-purpose mushroom sauce is very creamy and can be used over pasta, roast beef, chicken, pork, or baked potatoes.

2 tablespoons unsalted butter
½ tablespoon olive oil
1 (10 ounce) package sliced fresh mushrooms
2 cloves garlic, minced
1 pinch salt and ground black pepper to taste
¼ cup white wine
1 cup heavy cream
½ cup chicken broth
½ cup freshly grated Parmesan cheese
2 teaspoons chopped fresh thyme

Steps:

  • Heat butter and olive oil in a skillet over medium-high heat until butter is melted. Add mushrooms and cook until golden brown, 4 to 5 minutes. Season with garlic, salt, and pepper. Cook until garlic is fragrant, about 1 minute. Pour in wine, and allow to sizzle while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until wine is mostly evaporated, about 1 minute.
  • Stir in cream and chicken broth, lower heat to medium, and simmer slowly, stirring occasionally, until sauce thickens but does not separate, 2 to 3 minutes. Stir in thyme and adjust seasoning with salt and pepper, if needed.

1/4 cup butter or 1/4 cup margarine
2 tablespoons minced onions
1 lb mushroom, thinly sliced
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup half-and-half
2 tablespoons dry sherry

Steps:

  • Melt butter in 10 inch skillet over medium heat.
  • Cook onions for 3- 5 minutes or until tender.
  • Add mushrooms; cook, covered, stirring occasionally, for 10- 15 minutes or until tender.
  • Stir in half& half and sherry and cook for another 2 minutes- just to warm.

nonstick cooking spray
1 (8 ounce) package sliced fresh button mushrooms
2 cloves garlic, pressed
1 ½ tablespoons unsalted butter
1 ½ tablespoons all-purpose flour
1 ½ cups 2% milk
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Heat a large skillet over medium heat; do not use a nonstick skillet for this sauce. Spray lightly with cooking spray; add mushrooms. Cover and cook, stirring occasionally, until mushrooms just begin to release their juices. Add garlic and stir. Cover and cook, stirring occasionally, until mushrooms have released more juices and garlic is nicely cooked. Transfer mushroom/garlic mixture with juices to a bowl and set aside.
  • Wipe the skillet out with a paper towel; you do not want burnt garlic bits in your sauce. Melt butter in the skillet over medium-low heat until beginning to bubble and foam. Sprinkle in flour and whisk continuously to form a roux. Once the roux has darkened slightly, add milk, a few tablespoons at a time, whisking smooth between each addition.
  • When all of the milk has been incorporated, add mushroom mixture and juices back into the pan and bring to a very slow simmer. Season with salt and pepper.

This is something I made up yrs ago, I use at the bottom of stuffed potatoes for a surprse, other uses, with chicken, pasta, make thinner for a great soup,use on poached fish, as a hot dip, over favourite cut of Steak, just has so many uses, try adding a little wine with the fried onions make it richer.

1 onion (finely chopped)
1 clove fresh garlic, mashed with a little salt (use back of knife to mash)
2 teaspoons butter
1 teaspoon olive oil
1 teaspoon tarragon leaves or 1 teaspoon coriander
200 g mushrooms, sliced
1 cup sour cream
1 teaspoon chicken stock powder or 1 teaspoon vegetable stock
1 tablespoon all-purpose flour, mixed to thin batter with water
salt
ground black pepper

Steps:

  • Heat Oil& Butter, fry off Onion& Garlic without colour, add Mushroom and herbs, cook until Mushrooms get soft (a few mins), add Sour Cream& Chicken Stock simmer for a few mins, if the mixture is thin add the water flour batter, correct the seasoning with salt& pepper.

I got this sauce out of a vegetarian cook book. I have made some adjustments, and I encourage you to as well. Goes best with filled pastas, especially cheesy filled pastas.

1 (16 ounce) package tortellini
1 cup heavy cream
1 tablespoon olive oil
1 garlic clove, minced
8 large button mushrooms, sliced
1/2 cup shredded fresh parmesan cheese
salt
pepper

Steps:

  • Cook filled pasta according to package directions.
  • Heat the oil over medium heat.
  • Add the mushrooms and the garlic at the same time, stirring until mushrooms are tender.
  • Add the heavy cream and bring to a boil, stirring constantly.
  • Return the sauce to low heat and simmer for 10-20 minutes.
  • Turn off the heat and stir in the cheese, salt, and pepper.
  • Serve immediately over pasta.
  • Enjoy!
