Icy, refreshing granita isn't known for being creamy. But we tried making it with whipped topping, and the results were delicious!

3 Tbsp. MAXWELL HOUSE Naturally Decaffeinated Instant Coffee
1/4 cup granular no-calorie sweetener
2 cups boiling water
1/2 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Dissolve instant coffee and granulated sweetener in boiling water in large bowl. Add whipped topping; stir until well blended. Pour into 8-inch square pan.
  • Freeze 4 hours or until firm.
  • Draw fork repeatedly through frozen mixture just before serving. Spoon shavings evenly into 6 dessert dishes. Store leftover dessert in freezer.

I should call this lazy granita as the use of the food processor makes this simple and less labor intensive than the typical process of watching the freezing ice and regularly breaking it up. This is a delightful summer treat that satisifies the need for an evening sweet. Cooking time is freezing time.

1 3/4 cups strong coffee, at room temperature
3/8 ounce Splenda sugar substitute, add more to taste (6 packages)
1 tablespoon rum (optional)
1 tablespoon brandy (optional)
1/4 teaspoon rum extract (optional)
1 tablespoon flavored sugar-free syrup (optional)

Steps:

  • Add splenda and any desired flavorings into coffee. Pour into ice cube trays until mostly frozen - about 60 to 90 minutes. There may be a little liquid at the bottom of the cubes. That's fine.
  • Put ice cubes in food processor and pulse until you have slush with no visible chunks.
  • Place slush in a covered bowl back in the freezer for 30 minutes or until ready to serve.
  • If you are freezing 30-90 minutes, remove bowl from freezer and scrape the slushy ice into serving cups.
  • If you are freezing much longer, you may want to return the granita to the food processor for a quick whirl before serving.

This is a very simple treat that can be used with your favorite fruit juices to make many different variations. My favorite variation has banana in it. It brings a bit of creaminess to the icy treat. The small bottles of prepackaged juice in the produce section are the perfect amount of juice for this recipe--just pick a flavor! Don't let the mixture freeze completely before you scrape. The secret is to scrape as it freezes.

½ cup water
1 (15.2 ounce) bottle berry juice blend (such as Bolthouse® Blue Goodness®)

Steps:

  • Mix sugar and water together in a glass, microwave-safe, 8x8-inch dish. Microwave on high for 2 minutes. Mix with a fork until all sugar is dissolved. Stir in juice.
  • Freeze for 1 hour. Scrape mixture with a fork. Return to the freezer in increments of 30 minutes, scraping with a fork to create small granules after each one. The granita is ready when it resembles icy sand, about 3 hours total.

2 fluid ounces pomegranate syrup
1 orange slice
2 teaspoons white sugar

Steps:

  • Place the ice, Cointreau, rum, and pomegranate syrup into a blender, blend until smooth. Moisten the rim of a tumbler with the cut edge of the orange slice, and dip the glass into the sugar to line the rim. Pour the granita into the glass, and garnish with the orange slice to serve.

This concoction feels granita-like to me, granita being - as you may know - a sort of slushy Italian dessert usually made from water, sugar and fruit or other flavorings. Obviously, this isn't that. In fact, I cheat completely, beginning with a pint of good-quality sorbet and then simply adding the other ingredients, two of which contain alcohol.
