BREEZY LEMON-BERRY DESSERT
I love the combination of berries and lemon, and wanted to come up with a light, refreshing and tasty dessert that used them both. -Anna Ginsberg, Austin, Texas.

Steps:
- In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook over low heat, stirring until gelatin is completely dissolved. Remove from the heat and set aside. , Cut ladyfingers in half widthwise; arrange cut side down around the sides of an ungreased 9-in. springform pan. Place remaining ladyfingers in the bottom of the pan (bottom will not be completely covered)., In a large bowl, whisk the milk, creamer and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in gelatin mixture. Fold in 3 cups whipped topping., Spread 2 cups of filling evenly into prepared pan; top with mixed berries. Spread with remaining filling (filling will be higher than ladyfinger border). Cover and refrigerate for 5 hours or until set. Garnish with remaining whipped topping and the strawberries.

LEMON AND BERRY ICEBOX CAKE

Steps:
- Place the cream, powdered sugar and vanilla in a large bowl and, using a hand mixer, whip until stiff.
- Spoon one-third of the whipped cream mixture into a 10-inch round springform pan, smoothing evenly with a spatula. Top with half of the lemon cookies. Stir the raspberry preserves and disperse as evenly as possible over the cookies. Sprinkle over half of the raspberries, then top with another third of the whipped cream, followed by the remaining cookies. Stir the blueberry preserves and distribute as evenly as possible over the cookies. Sprinkle over half of the blueberries, then top with the remaining whipped cream and spread evenly. Garnish with the remaining fresh berries. Cover and refrigerate for 6 hours.
- Run a paring knife around the springform pan and release the wall of the pan from around the cake, leaving the cake on the bottom of the pan. Transfer to a serving platter, top with the mint leaves and slice.
LEMON CHIFFON BLUEBERRY DESSERT

- Combine cracker crumbs, 1/3 cup sugar and butter, reserving 2 tablespoons for topping. Press remaining crumb mixture into a 13x9-in. dish. Sprinkle with 1 cup blueberries., In a small bowl, dissolve gelatin in boiling water; cool. In a large bowl, beat cream cheese and remaining sugar. Add vanilla; mix well. Slowly add dissolved gelatin. Fold in whipped topping. Spread over blueberries. Refrigerate, covered, until set, about 3 hours. Top with reserved crumb mixture and remaining blueberries. Refrigerate leftovers.

CREAMY LEMON - BLUEBERRY DESSERT
This is a decadent dessert masquerading as the light, springy flavors of lemon and blueberry. I could see changing up the flavors making it chocolate with chocolate chips, or any number of variations, really. A Kraft Foods recipe.

Steps:
- Heat oven to 325 degrees.
- Mix wafer crumbs with butter and 3 tablespoons sugar; press into bottom of 13 x 9 pan. Bake 10 minutes.
- Beat cream cheese, 1 cup sugar and flour in large bowl with mixer until well blended.
- Add sour cream and mix well.
- Add eggs, one at a time, mixing on low speed after each, just until blended.
- Stir in dry pudding mix until well blended. Gently stir in 1 cup berries.
- Bake 1 hour or until almost set. Center will still be jiggly.
- Cool completely. Refrigerate 4 hours. Top with Cool Whip and remaining berries just before serving.
