MOM'S GOULASH IN THE MICROWAVE
There were no microwaves when my mom made this, so she did it on the stove top. She never gave us the recipe and I have discovered it through trial and error. You never forget the taste! I started with a recipe in a microwave cookbook and have adjusted the ingredients over time. If anyone is home when you are cooking, you will have company in the kitchen! Serve with Caesar salad, oven-baked garlic butter French bread and red wine. Microwave temperatures vary, so keep checking to see if these power levels work for you.

Steps:
- Bring a pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain.
- Meanwhile, crumble the ground beef into a 2 quart or larger casserole dish. Add the onion, celery and garlic. Cook in the microwave on High for 5 to 6 minutes, or until beef is no longer pink. Stir once during cooking. Drain off the grease.
- Stir the tomatoes, tomato sauce and sugar into the beef, and season with paprika, oregano, caraway seed, cayenne pepper and salt. Cover, and cook in the microwave on power level 8 for about 14 minutes, or until celery is tender and the flavors have blended.
- Remove from the microwave, and mix in the cooked macaroni. Cook for 2 to 3 more minutes, until heated through. Serve.

MOM'S GOULASH
This is a wonderful and simple recipe from my German Mother. I usually make this soup a day before serving since it tastes better the day after making it.

Steps:
- Season beef with salt, pepper, and paprika.
- Brown seasoned beef and onion in oil until all sides are brown. Cover with water and simmer for 3 to 4 hours or until tender. Add water whenever level goes below the ingredients.
- An hour before serving, add potatoes and chili.

MOM'S GOULASH
I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

- Saute hamburger with chopped onion. Drain grease.
- Add Worcestershire sauce, salt and pepper.
- Cook macaroni in boiling water until tender; drain.
- Add cooked macaroni to hamburger.
- Add canned tomatoes, peas and/or corn.
- Cook until thick, stirring occasionally.
- Top with Parmesan cheese, optional.

- Fry hamburger, pepper, and onion in large skillet.
- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
- Add remaining ingredients and heat well.
- Add macaroni and heat through.
MY MOM'S GOULASH

- Mix all of the ingredients together except the noodles and cook until onion and celery are tender.
- Add this to 1-lb macaroni noodles or a package of egg noodles which has been cooked.
- in a separate pot according to directions.

- Then add the Bay leaf and Marjoram in the last 30 minutes of cooking.

- In a large pot brown hamburger with onion.
- In a separate pot cook noodles.
- Drain excess fat from hamburger.
- Add mushrooms, celery, tomatoes, catchup, salt and pepper to hamburger.

- Preheat the oven to 375˚ F. Lightly grease a 9 x 13″ baking dish. Brown the meat in a large skillet over medium heat, crumbling it up as it cooks. Drain off the excess fat, if necessary. When the meat is no longer pink, stir in the tomato paste, tomato sauce, sugar, basil, oregano, and salt to taste. Stir in the water. Reduce the heat and simmer, covered, 15-20 minutes. Meanwhile, bring a large pot of water to boil. Cook the pasta just until al dente. Drain well and set aside. In a small bowl, combine the sour cream, cream cheese, and egg. Mix well to blend. Stir in the green onions. To assemble, spread a very thin layer of the sauce mixture over the bottom of the baking dish. Top with half of the pasta. Spread half of the sour cream mixture over the pasta, then top with half of the remaining sauce. Repeat layers with the remaining pasta, sour cream mixture and sauce. Sprinkle shredded mozzarella evenly over the top. Bake for 30 minutes, or until the cheese is browned and bubbling. Let stand at least 5 minutes before serving.

- Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
- Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.

GOULASH RECIPE FROM MY MOTHER
This is a recipe that I learned to make from my Mother, who learned to make from her Mother. It is a comfort food to all of us kids and now the grandchildren!!!

- Cook the macaroni according to package directions.
- In a large skillet, over medium heat, brown ground beef with onion, till there is no pink left in the beef and then add garlic for a few minutes to cook, then drain beef mixture.
- Return pan to heat and add the can of diced tomatoes, salt and pepper to taste and allow to heat for about 5 minutes.
- Add completely drained pasta and allow to blend for several minutes.
- Add cheese and stir until blended and melted.
- Note: We always had this with sliced bread and butter and either apple sauce with cinnamon or green beans with butter.

MOM'S GOULASH
Steps:
- Slice bacon into 1 inch squares and cook till almost crisp. Drain and set aside.
- Cut both onions in half, cut side down thickly julienne. Using same skillet pat dry. Add butter and oil to skillet and saute peppers for about 10 minutes. Add onions and cook until onions just begin to get translucent. Add diced garlic. Add bacon and set on very low heat on back burner stirring occasionally!!
- In large skillet brown your ground beef and drain well. Add bacon, peppers, garlic, and onions to beef. Add tomatoes and kidney beans. Cover and simmer on very low heat always remembering to stir occasionally!!
- Now cook your pasta a little pasta al dente until all dark yellow disappears from shells! Drain and mix all together in very large pot. Ready to serve!!!

MOM MOM'S GOULASH
Steps:
- Heat ground beef in skillet. When almost browned thoroughly, add onion and let sweat until translucent. Add garlic last so it does not brown and turn bitter.
- In a large pot, boil pasta according to package directions until al dente. Drain pasta and return to pot.
- Add ground beef mixture, tomatoes, seasonings if needed, and enough water to make the sauce as thick or thin as you prefer.
- Let simmer until warmed all the way through, approximately 20 minutes. Serve with garlic bread.
