CREAMY LEMON BUTTER SHRIMP PASTA WITH SPINACH AND CARAMELIZED GARLIC



Creamy Lemon Butter Shrimp Pasta with Spinach and Caramelized Garlic image

16 garlic cloves, peeled
1/4 teaspoon kosher salt
Olive oil spray
8 ounces fettuccine or pasta of choice, cooked according to package directions
1/4 cup (1/2 stick) unsalted butter
1 pound frozen peeled and deveined shrimp, thawed and pat dry
Kosher salt and black pepper, to taste
2/3 cup heavy cream
2/3 cup low-sodium chicken broth
1/4 cup freshly grated Parmesan cheese
1/4 cup dry white wine
2 tablespoons capers
Juice of 1 lemon
1/2 tablespoon paprika
Pinch of crushed red pepper
2 cups baby spinach
Fresh basil and / or parsley, to top
French bread, to serve

Steps:

  • Preheat oven to 350°F. Spray a baking sheet with cooking spray. Set aside.
  • Toss the garlic with kosher salt in a small bowl. Pour the garlic mixture onto the prepared pan and bake until caramelized, about 15-20 minutes, tossing occasionally.
  • As the garlic cooks, prepare the shrimp. Melt the butter in a large pan over medium-high heat. Season the shrimp with salt and pepper and add to the pan. Cook until just pink and cooked through, about 3 minutes total, flipping halfway through. Remove the shrimp from the pan and set aside.
  • Reduce the heat to medium and add in the cream, chicken broth, parmesan cheese, white wine, and capers. Cook, stirring, until the parmesan has melted into the sauce. Add in the caramelized garlic, lemon juice, paprika, crushed red pepper, and spinach and cook for an additional minute.
  • Add in the cooked shrimp and pasta. Stir and continue to cook until heated through. Serve warm, topped with basil and parsley, with french bread, for dipping.

This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Meanwhile, melt the butter and olive oil in a large skillet over medium-low heat. Stir in the garlic, and cook until softened, 3 to 4 minutes. Add the shrimp, white wine, lemon juice, and red pepper flakes. Cook and stir until the shrimp is no longer translucent in the center, about 6 minutes. Stir in the black pepper, parsley, and lemon zest before tossing with the angel hair pasta.

1 lb shrimp, peeled and deveined

1 tablespoon butter
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon pepper
1 ½ cups milk
1 ½ cups chicken broth
8 oz fettuccine pasta
4 cups spinach
1 teaspoon salt
½ teaspoon pepper
½ teaspoon italian seasoning
¼ cup grated parmesan cheese, extra to garnish

Steps:

  • In a heated pot, melt butter and olive oil. Add garlic and shrimp, seasoning with salt and pepper.
  • Cook until shrimp is pink, then put aside.
  • In the same pot, add milk, broth, and pasta.
  • Cook for 10 minutes, stirring occasionally, so that the pasta does not stick to each other.
  • Once pasta is al dente, add in spinach, salt, pepper, seasoning, and cheese, and mix until spinach is wilted and everything is coated in the sauce.
  • Add the shrimp back in and give it a stir until fully incorporated.
  • Serve with some extra parmesan cheese, if desired.
