- Heat a large pan to medium/high heat. Place butter and oil. Add chicken breasts and cook 3-5 minutes per side or until golden. Remove from pan and set aside. [br][br]

- Season the chicken on both sides with salt and pepper.
- Heat a large, heavy-bottomed skillet over medium heat. Add the oil and heat until shimmering.
- Add the chicken to the skillet and cook until browned on each side and cooked through, about 8 minutes total. Remove chicken to a plate and set aside.
- Add the chicken broth, to the pan and whisk to deglaze the pan. Add the lemon juice and garlic to the pan and bring to a boil over medium heat.
- Allow chicken stock to reduce by half, about 10 minutes.
- Whisk the butter and cream into the chicken stock until butter has melted and mixture is smooth and creamy.
- Return chicken to the skillet and sprinkle with fresh dill. Cook for 1 minute to rewarm the chicken.
- Serve immediately.

- Wash chicken cutlets and thoroughly pat dry with paper towel. Season with salt. Melt the butter in a large oven-proof frying pan (or skillet) on medium heat. Place the chicken cutlets, skin side down, and fry until golden and crisp (place a lid on the frying pan to avoid the fat from the chicken spitting all over the stove). Turn chicken and continue to fry until browned. Take off the heat; transfer chicken onto a plate and drain most of the fat from the pan (leave about 2 tablespoons of the oil for flavour).
- Return the pan to the stove and reduce heat to low. Add the chopped onion, minced and crushed garlic, paprika and lemon pepper (if using) to the oil left in the pan, occasionally stirring until garlic is fragrant and onion is transparent. Season with salt to taste and add in the thyme.
- At this point, preheat your oven to grill/broil setting on medium heat.
- Pour in the stock/broth, cream and lemon juice and bring to a slow simmer. Return the chicken back into the pan; cover with lid and allow to simmer gently in the sauce for a further 10 minutes, or until cooked through.
- Place the pan into the oven and allow the skin to crisp up (it takes about 5 minutes).
- Serve with lemon wedges or slices and fresh sprigs of Thyme.

- Heat 1 tablespoon of coconut oil in a large ovenproof skillet over high heat.
- Liberally season both sides of the chicken breasts with salt and pepper before transferring to the hot skillet.

- On a cutting board, cut the chicken breasts in half, widthwise.
- Lay chicken flat and season both sides with salt and pepper.
- Gently coat the chicken pieces in the flour, shaking off any excess.
- Heat a skillet on medium-high heat and add the butter and oil, swirling together to coat the pan.
- Place the chicken breasts into the pan and cook for 3-5 minutes or until golden brown.

BAKED CREAMY LEMON GARLIC CHICKEN RECIPE

- Preheat the oven to 400 degrees F.
- While the oven is pre-heating, place chicken in a 12 inch enameled cast iron dutch oven. (You could also use a 9x13 baking pan, but it will probably take about 5 minutes or so longer because it doesn't conduct heat as well.)
- Combine the herb sauce ingredients in a bowl and mix with a basting brush.
- Brush the herb sauce evenly over the top of the chicken. Place in the oven. If frozen, cook for 20 minutes. If not, cook for 10 minutes.
- While the chicken is cooking, peel all the garlic cloves, then throw them randomly in the pan at the end of the 10 or 20 minutes mentioned above.
- Put the chicken back in the oven for 10 more minutes while you prepare the lemon cream sauce in the same bowl you used for the herb sauce.
- Dump the lemon cream sauce in the pan over the garlic but not over the chicken.
- Cook for another 20 minutes. (I usually take a 5 minute break, then start the rice cooking in my Instant Pot * so it will be done at the same time as the chicken). Cream should be bubbling and slightly thicker.
- Serve with cooked rice, pasta, zoodles *, quinoa * or cauliflower rice - depending on your diet.
- Chicken can be served as is (if doing so, add the butter to the sauce and stir until melted and combined, then serve), or, if a thicker sauce is desired, you can pour the sauce from the baking dish into a saucepan and bring to a boil over high heat. Let cook down for 2-3 minutes, or just until the sauce thickens to the degree you want it to and becomes glossy. Whisk the butter into the sauce until melted and combined. Pour over the chicken and serve.
- Garnish with the lemon slices and basil.

- Preheat oven to 375 F.
- Mix 3 teaspoons of lemon pepper seasoning with flour. Pat the tops (skin side) of chicken thighs with this seasoning mixture.
- Heat 2 tablespoons olive oil on high-medium heat in a large skillet.
- Add chicken thighs skin side down and cook for about 4 minutes on high-medium heat until browned, uncovered. Sprinkle the other side of chicken with 1 teaspoon more of lemon pepper seasoning.
- Flip the chicken thighs over and cook for 2 minutes on the other side. Remove from heat.
- Line baking sheet with aluminum foil. Place chicken thighs skin side up (crispy side up) on the baking sheet and bake at 375 F for about 15-20 minutes, until the chicken is fully cooked, the juices run clear and the chicken is no longer pink in the center.
- In the mean time, while the chicken is baking, make the sauce. Thoroughly clean and dry the skillet you used for cooking chicken thighs.
- Heat 1 teaspoon olive oil and 1/2 tablespoon butter on medium heat in this cleaned skillet.
- Add minced garlic and cook, constantly stirring, for about 30 seconds.
- Add chicken stock and 1 teaspoon lemon pepper seasoning to the skillet and bring to boil.
- Add heavy cream and bring to boil.

- Cut each chicken breast in half lengthwise to get thinner cutlets. Over plastic wrap, slightly pound the chicken to even thickness as needed using a meat mallet. This is for even cooking and to tenderize the chicken a bit.
- Season both sides of the chicken cutlets with salt, pepper, and Italian seasoning (per chicken cutlet, use about ¼ teaspoon each: Kosher salt, ground black pepper, Italian herb seasoning). Dredge the seasoned chicken in flour and shake off any excess.

- Season flour with salt and pepper. Dredge chicken tenders in flour mixture until coated.
