- Heat 1 tbsp coconut oil in a skillet/frying pan, stir in 1/2 of the diced onion and 1 large clove of minced garlic and sauté for a few minutes over medium heat.
- Add rice, stir for about 1 minute until the rice is opaque. Pour in the wine, keep stirring constantly until the wine is absorbed.
- Add 1/2 cup vegetable broth and cook on low heat until the broth is absorbed. Stir frequently and add more broth, 1/4 cup at a time until the liquid is absorbed and the risotto is al dente and creamy (about 15 minutes).
- In a different skillet/frying pan heat the remaining 1 tbsp coconut oil, stir in the remaining diced onion and minced garlic and sauté for a few minutes over medium heat.
- Add the mushrooms and chickpeas and sauté for 3-5 minutes. Also, add balsamic vinegar, soy sauce, coconut milk, and let simmer for about 5 minutes, stirring occasionally. Season with black pepper, red pepper flakes, salt, and fresh parsley to taste.
- Finally, combine the mushroom/chickpea mixture with the cooked risotto rice, stir in the nutritional yeast flakes and enjoy! Check the recipe notes below.

- Heat the oil in a pan and add the onion and garlic once hot
- Fry for 5 minutes until softened
- Add the mushrooms and porcini mushrooms and fry for around 10 minutes until mushroom are golden brown
- Dissolve the stock cube in 475ml (2 cups) boiling water
- Place the rice in the pan and add the stock a little at a time, stirring regularly - this releases the starch from the rice, creating a creamy texture
- Continue until all the stock has been used up - this should take around 15 minutes, and the rice should be cooked by this point
- Add the almond milk, nutritional yeast and salt + pepper, and mix well - cook for a further few minutes
- Turn off the heat and leave the pan with the lid on for 5 minutes before serving
- Best enjoyed immediately!

- Add the olive oil to a pot with the chopped onion and sauté on medium high for a couple of minutes until softened.
- Add sliced mushrooms and garlic and toss with the onions.
- Cover the pot and cook for a couple of minutes until the mushrooms have released some of their water.
- Then remove the lid and add the rice and sauté it with the onions, mushrooms and garlic.
- Then add 3 cups of vegetable stock, stir well, cover and simmer for around 20 minutes until the broth is mostly absorbed. *(See Notes)
- Then add 1 and 1/2 cups vegetable stock, stir well again, cover and simmer for around 10 minutes until the broth is mostly absorbed.
- Then add a final 1 and 1/2 cups of vegetable stock, stir well again, cover and simmer for a final 5-10 minutes.
- It's ready when all the stock has been mostly absorbed by the rice.
- Turn off the heat and stir in the 2 Tbsp of vegan butter.
- Add sea salt and black pepper to taste.
- Serve it topped with fresh chopped parsley and ground black pepper. Some vegan parmesan can also be really tasty sprinkled on top. You can either make up a batch of homemade vegan parmesan or use a store-bought option.

- Heat the vegetable broth in a small pan and set aside. Keep warm, you want to keep this warm so that it doesn't reduce the heat of the risotto and mess with the texture of the dish.
- In a pan over medium high heat, heat the oil. Add in the onion and the garlic, stirring to combine. Reduce heat to medium and cook until the onions are translucent and the garlic is fragrant, about 5 minutes.
- Add in the arborio rice, and stir. Allow the rice to toast for about 3 minutes, until the edges become slightly translucent. Add in the white wine to deglaze the pan. Stir and allow the rice to absorb the wine.
- When the wine is completely absorbed, add in about a ladle or 1/4 cup of the still warm vegetable broth. The pan should be warm enough for the rice to absorb the rice in a few minutes. Swirl and allow the rice to absorb the broth completely.
- Repeat, ladle by ladle (easier to scoop), until each is completely absorbed, stirring and swirling to help the rice absorb evenly. After about 12 minutes of cooking, taste your rice. Careful, it's hot! From there, add ladle by ladle and when you reach 3 cups in, taste the rice after each ladle. You want your rice to be al dente or whichever texture you desire.
- After the rice has reached al dente, turn off the heat. Add in the sea salt, black pepper, vegan butter, vegan parmesan, and the lemon or lime juice. Stir to combine completely and let it all absorb in with the residual heat, for about 3 minutes. Remove from the stove.
- You can stir the mushrooms in the risotto, or serve them on top of each individually served risotto. Serve immediately with additional vegan parmesan cheese and mushrooms. Enjoy!
- In a pan over medium high heat, melt the vegan butter. Swirl around the pan.
- Add in the slices of mushroom, stirring to combine in the butter. Let the mushrooms sit for about 3-5 minutes until they begin to caramelize. Flip and repeat for about 3-5 minutes until the other side is caramelized too.
- Season with sea salt to taste and serve with or on top of risotto. Enjoy!

- Heat the olive oil in a large sauté pan. Add the shallot and garlic and cook on a medium-low heat until softened.
- Add the mushrooms and cook for a further minute.

VEGAN MUSHROOM RISOTTO

- Soak cashews in hot water while preparing the risotto.
- Over medium high heat, in a large and deep pan, saute the diced onions and garlic with the herbes de provence in a splash of vegetable broth until they begin to soften. Add chopped mushrooms and saute for 3-4 minutes until the mushrooms soften and reduce, adding a bit of extra vegetable broth if necessary.
- Add the arborio rice to the hot pan and saute with the vegetables for a couple of minutes until the rice begins to turn a light golden brown. (*Saute continuously to ensure that the rice does not burn).
- Add 2 cups of the vegetable broth and stir until the rice has soaked up the broth. Add a cup more broth and stir continuously until the rice has soaked up the broth. Add the dry white wine (if using) and stir until the rice has soaked up the wine. Add another ½ cup of vegetable broth and continue stirring until the rice soaks up the broth. Continue adding vegetable broth, by the ½ cup, until the rice is just cooked. (Note: I used a total of 5½ cups of broth but you might need a bit more or less depending on the heat of your stove etc.)
- Stir in truffle oil (optional), nutritional yeast, lemon juice and frozen peas. Stir for a couple of minutes until the peas are lightly cooked. Add sea salt and pepper to taste.
- Drain and rinse the soaked cashews. Using an immersion blender, blend the cashews, lemon juice, nutritional yeast and water until a creamy and smooth mixture is formed. Add additional water, by the tablespoon, until the desired consistency is reached. Season with sea salt to taste.
- Stir the cashew cream into the risotto (or, alternatively, leave the cashew cream on the side and allow people to add it directly to the risotto on their plate) and garnish with fresh basil.

- Start by bring the vegetable stock to boil in a pot then reduce heat and keep warm. This is a very important step in making the risotto as we need the stock to be hot when we start cooking the rice.
- In a separate medium-sized pot, heat the olive oil over medium-low heat. Add the onions, garlic and thyme and sauté for 3-5 minutes until onions are translucent and fragrant.
- Place the chopped mushrooms in the pot with the onion and cook for an additional 5 minutes. The mushrooms will release liquid in this process. Cook the mushrooms until the have fully absorbed the liquid and the pan is almost dry.
- Add the rice to the pot and "toast" the rice by sautéing it with the other ingredients for 1 minute. This is an important step to enhance the flavour of the risotto as it helps open the pores of the rice.
- Begin cooking the rice by slowly adding the hot stock 1 cup at a time. Ensure you are constantly stirring the rice with a wooden spoon while the stock is being absorbed. The more consistently you stir the rice, the more evenly cooked and creamy in consistency the final risotto will be. Continue to add 1 cup of stock at a time and stir until all stock is incorporated and the rice is cooked al dente. It should be tender but still have some chewiness. This step should take 25 - 30 minutes.
- Once the rice is cooked, season with salt and fold in the parsley and lemon zest. Remove from heat and stir in a tablespoon of vegan butter. Serve with more fresh parsley and fresh cracked black pepper.

- Turn the Instant Pot on and press the "Saute" mode. Set it to 5 minutes and medium heat.
- Add the olive oil to the pot, followed by the sliced mushrooms and diced shallots. Lightly sauté the mushrooms and shallots together until the mushrooms are cooked through and the shallots are translucent.
- While the Instant Pot is still on sauté mode, add in the farro and sea salt to the pot and lightly toast the farro with the mushrooms and shallots for 2-3 minutes.

- Heat 2 tbsp of olive oil in a large non-stick pan and over medium heat. Add garlic, stir for 30-40 seconds and then discard. To the same pan add onion and sauté stirring occasionally for 7 minutes until translucent.
- Add Arborio rice to the onion and stir for constantly for 1-2 minutes until rice kernels start to become translucent.

CREAMY MUSHROOM QUINOA RISOTTO

- Put 1 Tbs olive oil into a large pan and heat over medium heat.
- Add the minced shallot and garlic to the pan, mix into the oil with a rubber spatula and cook for 2 minutes.
- Add the quinoa to the pan, mix into the garlic and onion, and cook for 1 minute.
- Add the coconut milk to the pan, mix, and cook until the coconut milk is absorbed. This should happen pretty quickly, like in a matter of 10-15 seconds.
- Then add 1/2 cup of chicken stock to the pan and wait for the liquid to be absorbed by the quinoa. Keep adding 1/2 cup of chicken stock to the pan every time the liquid is absorbed.
- After about 1 cup of the chicken stock has been added, put all the spices (salt, pepper, nutmeg, and rosemary) into the pan and mix. Then keep adding the chicken stock 1/2 cup at a time. I ended up using about 3 cup of chicken stock.
- From start to finish, the quinoa risotto took me 35 minutes. But you'll know yours is done when it is soft and fluffy and creamy.
- In a separate pan, cook the mushrooms until they are browned. This can be done before, during, or after the quinoa risotto is done. I put a splash of olive oil into a large frying pan, and let the mushrooms cook over medium heat until they were browned. This should take 8-10 minutes.
- Then, put the mushrooms and cheese or nutritional yeast into the quinoa, mix, and serve.
- Serves 4 as a side-dish.

- Prepare the broth and keep it warm (on the stove for example).
- Give the mushrooms a quick wash and slice them up.
- Heat up a large sauce or frying pan and fry the mushrooms with a little oil until cooked - about 5 minutes.
- In the meantime, dice the onion and garlic. When the mushrooms are ready, move them to the side for later.
- Using the same pan (minus mushrooms), fry the onions, adding more oil if necessary. Cook until soft.

- Prepare broth: Add dried shiitakes to a high speed blender, and blend until a fine powder. Let the powder settle before opening blender lid. - Heat the vegetable stock in a pot and have it on a gentle simmer, ready for the risotto.
- In a large pot on medium heat, add the ¼ cup of olive oil, onions and garlic and saute for a couple of minutes until the garlic and onions start to get a bit of colour.
- Add in the dry rice and stir to combine. Saute the rice like this for around 5 minutes. This will lightly toast the rice.
- Pour in one ladle of stock, which should be just enough to cover the rice. You don't want the stock to cover more than just the rice. Mix well. Make sure to mix every 30 seconds to a minute, so it doesn't stick to the bottom and cooks evenly.
- As soon as the stock starts to evaporate from the bottom of the pot, add in more stock. Keep repeating the process until you use all the stock.
