Number Of Ingredients 23

2 Tbl. butter
½ lb. salt pork, diced into ¼" pieces*
¼ cup water
4 Tbl. butter (1/2 stick)
3 large ribs celery, thinly sliced (1/8"), 4 ribs if a little small
1 large onion, small diced (1/4")
1/3 cup flour
2 cups chicken broth or stock
2 cups milk
3 lbs. russet potatoes, peeled and diced into ½" cubes
1 large bay leaf
2 tsp. Better Than Bouillon Chicken base
1/2 tsp. dried thyme, crush between fingers when adding
1/2 tsp. ground white pepper
1/4 tsp. garlic powder
1/8 tsp. Old Bay Seasoning
1/16 tsp. onion powder
1/3 cup clam juice reserved from drained can or water (*depends on how strong of a clam flavor you'd like)
2 (10 oz. each) cans whole shelled baby clams, first can drained reserving 1/3 cup for above, second can with the juice
2 cups heavy cream
1 - 3 Tbl. cornstarch mixed with equal amounts of COLD water
chopped fresh parsley to garnish bowls
serve with oyster crackers if desired

Steps:

  • In large stock pot, add 2 Tbl. butter, salt pork and water and sauté over medium-high until fat has rendered, water has evaporated, and pork is getting crispy. (Lower heat to medium, then medium-low as water evaporates). Remove salt pork with slotted spoon and set aside. Add 4 Tbl. butter, scrape bottom of pan well, then add celery and onion. Sauté over medium heat until vegetables are soft. (About 5 minutes or so). Add salt pork back in. Add flour and stir to mix. Sauté over medium heat, stirring, for 5 minutes to cook out flour taste. Cook but do not brown. Add chicken broth and scrape bottom of pot again. Stir until all is blended. Add milk, potatoes, bay leaf, chicken base, thyme, white pepper, garlic powder, Old Bay Seasoning, onion powder, and 1/3 cup of clam juice or water. (*It will seem like too many potatoes, but there is more liquid to come later). Cover pot with tight-fitting lid, and bring just to a boil over medium heat. Turn down to LOW, and simmer until potatoes are fork tender. Stir occasionally to reduce foam and scrape bottom and sides of pot. Keep an eye on it. (I stir about every 7 minutes). Be sure to stir briskly so that edges of potatoes break down and help to thicken the chowder naturally. When potatoes are almost tender, after 15 - 20 minutes, remove lid and cook another 10 minutes until potatoes are fully done and crisp edges of potato are now rounded, stirring often. Add one can of clams with the juice, and the second can drained. Stir well. Stir in heavy cream and white pepper. Heat to a low simmer, and stir in cornstarch slurry, 1 Tbl. mixed with 1 Tbl. COLD water at a time, until you reach the thickness that you prefer. Remove from heat and cover. Let sit for 20 -30 minutes. Serve garnished with fresh chopped parsley and crusty bread for sopping, or oyster crackers if desired. Hot sauce can also be served at the table for those who would like some. *Leftover chowder will be super thick when chilled. DO NOT add any liquid. Chowder will thin out again when reheated.

½ cup chopped onion
4 potatoes, peeled and cubed
1 tablespoon all-purpose flour
1 cup bottled clam juice
1 cup half-and-half
2 (6 ounce) cans minced clams
salt and pepper to taste
½ cup heavy cream
2 tablespoons chopped fresh parsley

Steps:

  • In a large saucepan over medium high heat, fry the bacon until crisp, about 10 minutes. Drain on paper towels, reserving the bacon fat in the pan, crumble and set aside.
  • In the same saucepan with the bacon fat, saute the onion and potatoes for 3 to 5 minutes. Sprinkle with the flour and stir well to coat.
  • Pour in the clam juice, bring to a boil, reduce heat to low and simmer for about 15 minutes, or until potatoes are tender.
  • Add the half-and-half and minced clams and season with salt and pepper to taste. Finally, whisk in the heavy cream, if desired. Allow to heat through, about 5 minutes. Garnish with the parsley and crumbled bacon. (Note: Do not boil if adding cream.)

4 center-cut bacon strips
2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. 6 -7 pieces bacon, cut into small pieces
1 medium onion, chopped
2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed
2 (10 1/2 ounce) cans cream of celery soup
1 cup heavy cream
1 cup milk
1 tablespoon butter
1 teaspoon dried dill weed

Steps:

  • Add bacon to sauce pan and cook on medium low heat until crispy.
  • Add onion and cook until translucent.
  • Add clam juice from both cans.
  • Add potatoes.
  • Cook and cover until potatoes are fork tender, about 15-20 minutes.
  • Stir occasionally so potatoes won't stick.
  • Add clams, soup, cream, milk, and dill weed.
  • Stir together.
  • Add butter and let melt into the chowder.
  • Cook for about 30-45 minutes or until thickened.
  • Stir occasionally.

Most clam chowders have way too much potato and not enough clams for my taste. I (Bird) developed this recipe fix that. I use an immersion blender to cream the potatoes into the chowder, then add lots of clams. :)

2 slices bacon, cut into small pieces (using scissors makes this easy)
1 tablespoon butter
1 onion, chopped
1 stalk celery, chopped (or tsp celery seeds)
1 garlic clove, chopped
1 bay leaf
1 potato, diced
1/2 teaspoon white pepper
1/4 teaspoon kosher salt
1/4 teaspoon mace
4 (6 1/2 ounce) cans chopped clams, juice reserved
2 cups heavy cream

Steps:

  • In a large dutch oven, cook bacon until crisp and fat is rendered. Pour off all but 2 tablespoons of the bacon fat. Add the butter, onions, celery, garlic, and bay leaf and cook about 5 minutes until vegetables are tender.
  • Add the potatoes and the reserved clam broth and bring to a boil. Lower the heat, cover, and simmer about 30 minutes, until broth has thickened slightly and the potatoes are tender.
  • Remove bay leaf from pot. Using an immersion mixer (or blender), blend soup to a fine consistency. Stir in the clams and heavy whipping cream. Taste for saltiness, then season with white pepper, salt, and mace (to your liking).
  • Can be eaten right away, but it's best the next day. Just let cool and refrigerate overnight. The next day simmer the soup to re-heat, but do not boil.

2 cups water
2 dozen cherrystone, littleneck, or small quahog clams, scrubbed (2 cups clam meat)
1 ounce (2 tablespoons) unsalted butter
2 slices bacon, chopped
1 small white onion, chopped
1 1/2 celery stalks, tough fibers removed, cut diagonally into 1/4-inch pieces
2 stems fresh thyme
1 fresh bay leaf
9 whole black peppercorns
2 small russet potatoes, peeled and cut into 3/4-inch pieces
1 1/2 cups half-and-half
Coarse salt

Steps:

  • Bring water to a boil in a large pot. Add clams, cover, and cook until shells open, about 10 minutes. Transfer clams to a large bowl, reserving cooking liquid. Discard any clams that do not open. Remove meat from shells, and return to bowl. Discard shells. Pour reserved liquid through a fine sieve lined with cheesecloth into a large bowl (you should have 2 1/2 cups). Sprinkle a few tablespoons liquid over clams to keep them moist.
  • Melt butter in a large pot over medium heat. Add bacon, and cook, stirring, until golden brown, about 3 minutes. Pour off excess drippings, leaving just enough to coat bottom of pot. Add onion and celery, and cook until softened, 3 to 4 minutes.
  • Wrap thyme, bay leaf, and peppercorns in a piece of cheesecloth, and tie with kitchen string. Place cheesecloth in pot, and add potatoes and 2 1/2 cups reserved clam broth. Simmer over medium heat until potatoes are tender, 5 to 7 minutes.
  • Chop clams. Add clams and half-and-half to pot, and heat until just warmed through, about 1 minute. Discard cheesecloth, and season with salt. Serve immediately.
