A totally retro dessert with cubes of fresh orange juice gelatin seemingly floating in a sea of wobbly vanilla ice cream. Naturally gluten-free!

2 envelopes unflavored gelatin
1/2 cup cold water
1/2 cups boiling water
1/2 cup sugar
2 cups freshly squeezed orange juice
2 cups vanilla ice cream
3 envelopes unflavored gelatin
1/2 cup cold water
1 cup boiling water
1/4 cup sugar

Steps:

  • Sprinkle the 2 packets of gelatin over the cold water. Let sit until absorbed and softened.
  • Pour the boiling water over the gelatin and stir until completely dissolved.
  • Stir in the sugar and orange juice, and stir to dissolve the sugar.
  • Pour into a 9x13 baking dish and refrigerate for at least 4 hours, or until firm.
  • Cut into small cubes and transfer to a jello mold or square baking dish. Store in the refrigerator.
  • Melt the vanilla ice cream in a small saucepan on the stove or in the microwave. Set aside to come to room temperature.
  • Sprinkle 3 packets of gelatin over the cold water. Let sit until absorbed and softened.
  • Pour the boiling water over the gelatin and stir until completely dissolved.
  • Add in sugar and stir to dissolve.
  • Stir in the melted ice cream.
  • After ensuring the mixture is at room temperature, pour the ice cream mixture over the orange cubes and refrigerate overnight.
  • Cut into slices or cubes.

6 ounce package Orange Jello
1 cup boiling water
1 pint (2 cups) orange sherbet (, softened but still very cold)
8 ounce container Cool Whip topping (, defrosted)
nonstick cooking spray

Steps:

  • In a large bowl, completely dissolve the gelatin in the boiling water. Place in the refrigerator for about 15 minutes to cool.
  • Stir in the cold orange sherbet.
  • Gently fold in the Cool Whip until thoroughly combined.
  • Transfer to a nonstick Jello mold lightly coated with cooking spray; place in the refrigerator to set, about 4 hours.
  • Loosen Jello and invert onto a serving plate. Slice and enjoy!

This deceptively simple recipe makes a delicious jello salad my husband can't get enough of. My mother gave me this recipe - it was standard fare at any potluck and was gobbled up in no time! This recipe is easily doubled for larger crowds.

1 cup water
1 (3 ounce) box orange Jell-O
1 (11 -12 ounce) can mandarin oranges (with juice)
1 cup sour cream

Steps:

  • Boil water.
  • Remove from heat and add jello and whisk until dissolved.
  • Add juice from mandarin oranges.
  • Add sour cream and whisk together until sour cream is thoroughly mixed in (should have smooth consistancy).
  • Pour into serving bowl or jello mold.
  • Refrigerate until set (2-4 hours).

3 ounces cream cheese, softened
1 package (3 ounces) lime gelatin
1 cup boiling water
1/4 cup mayonnaise
1 can (15-1/4 ounces) fruit cocktail, drained
1/2 cup chopped pecans

Steps:

  • In a bowl, beat cream cheese and gelatin. Add water, stir until gelatin is dissolved. Refrigerate until thickened, about 1 hour, stirring frequently. Add mayonnaise; whisk until smooth. Stir in fruit and pecans. Pour into a 1-qt. mold that has been coated with cooking spray. Chill until firm. Unmold onto a serving platter.

1 can (20 ounces) unsweetened crushed pineapple, undrained
3 tablespoons sugar
1 package (6 ounces) orange gelatin
2 cups buttermilk
1 carton (8 ounces) frozen whipped topping, thawed
1 cup chopped nuts

Steps:

  • In a saucepan, combine pineapple and sugar; bring to a boil, stirring occasionally. When mixture boils, immediately add gelatin and stir until dissolved. Cool slightly. Stir in buttermilk. Chill until partially set. Fold in whipped topping and nuts. If necessary, chill until mixture mounds slightly. Pour into a lightly oiled 8-1/2-cup mold. Chill overnight.

1 package (6 ounces) orange gelatin
2 cups boiling water
6 ounces cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1 carton (8 ounces) frozen whipped topping, thawed
Maraschino cherry, fresh mint stem and mandarin oranges, optional

Steps:

  • In a bowl, dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Gradually blend in the hot gelatin mixture, beating on low speed until smooth. Stir in milk; fold in whipped topping. , Transfer to a 2-1/2-qt. serving bowl. Refrigerate for 4 hours or until firm. If desired, garnish with a flower made of cherry, mint and oranges.
