Creamy Pasta Bake with Cherry Tomatoes and Basil image

One of my favorite midweek pasta bakes - my whole family loves it and there is not much prep. Once the pasta bake is in the oven, you can make a salad or set the table and then it's time to eat.

1 (16 ounce) package penne pasta
1 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
3 (6 ounce) cans tomato sauce
2 tablespoons tomato paste
¾ cup heavy whipping cream
½ cup grated Parmesan cheese
salt and freshly ground black pepper
1 pinch white sugar
1 pound cherry tomatoes, halved
1 ¼ cups shredded mozzarella cheese
1 small bunch fresh basil, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
  • Heat olive oil in a large skillet over medium heat and cook onion until soft and translucent while penne is cooking, about 5 minutes. Add garlic and cook an additional 30 seconds. Stir in tomato sauce and tomato paste and cook until slightly reduced, about 5 minutes. Add cream and Parmesan cheese and season with salt, pepper, and sugar.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
  • Stir some pasta cooking water into the sauce and add cooked penne. Remove from heat and stir in cherry tomatoes, 1/2 the mozzarella cheese, and basil. Pour penne mixture into the prepared baking dish and cover with remaining mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, about 20 minutes.

This dish was inspired by combining several different recipes. (Note - we don't like a lot of extra sauce- just enough to cover the pasta - so if you like a lot of sauce, you may want to make a little more).

2 cups farfalle pasta, uncooked
1 teaspoon olive oil
1/4 onion, peeled and chopped
1 garlic clove, minced
2 tablespoons sun-dried tomatoes, drained and chopped
7 ounces diced tomatoes (canned or fresh)
black pepper, to taste
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
4 ounces cream cheese
2 tablespoons milk
2 tablespoons parmesan cheese
2 boneless skinless chicken breasts, cut into bite-sized pieces, cooked

Steps:

  • Heat teaspoon of oil over medium-high heat.
  • Add onion and sauté until starting to brown.
  • Add garlic and sun-dried tomatoes; sauté 3 more minutes.
  • Add tomatoes, pepper, and other herbs. Stir well, reduce heat, cover and simmer about 20 minutes.
  • Meanwhile, cook pasta according to directions.
  • Add cream cheese, milk, and parmesan to tomato pot and melt over low heat until cheeses are incorporated.
  • Add chicken and drained pasta, and mix until blended.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups frozen broccoli and cauliflower florets, thawed, drained
4 oz. (1/2 of 8 oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup CLASSICO Tomato and Basil Pasta Sauce
2/3 cup fat-free reduced-sodium chicken broth
2 cups hot cooked penne pasta
1/2 cup KRAFT Shredded Mozzarella Cheese
6 round buttery cracker, crushed (about 1/4 cup)
2 Tbsp. KRAFT Grated Parmesan Cheese
1 Tbsp. butter, melted

Steps:

  • Heat oven to 350ºF.
  • Cook chicken in large nonstick skillet on medium heat 5 to 6 min. or until done. Add vegetables; cook and stir 2 to 3 min. or until heated through.
  • Whisk Neufchatel and pasta sauce until smooth; gradually whisk in broth. Add to skillet; cook and stir 3 min. Stir in pasta and mozzarella. Spoon into 2-qt. casserole sprayed with cooking spray; cover.
  • Bake 15 min. Meanwhile, mix cracker crumbs, Parmesan and butter.
  • Stir casserole; top with crumb mixture. Bake, uncovered, 5 min. or until topping is golden brown.

16 oz fusilli pasta, or any similar pasta, 1 box
28 oz crushed tomato, 2 cans
½ cup water
¼ cup olive oil
½ cup fresh basil, torn
2 tablespoons dried oregano
4 cloves garlic, minced
2 teaspoons salt, plus more for sprinkling
1 teaspoon black pepper
4 large tomatoes, thinly sliced

Steps:

  • Preheat oven to 450°F (230°C).
  • In a large bowl, mix together the crushed tomatoes, water, olive oil, basil, oregano, garlic, salt, pepper, and fusilli.
  • Pour the pasta mixture into a greased roasting pan and smooth the top into an even layer.
  • Line the top of the mixture with the sliced tomatoes and sprinkle with salt.
  • Bake in the oven for 40-45 minutes, until the pasta is fully cooked. Serve and sprinkle with garnish of choice.

1 pound fettuccine (use your favorite gluten free brand if needed)
1 tablespoon butter
1 cup chunky basil pesto (or store bought)
1-2 (8 ounce) jars of your favorite pasta sauce
1/3 cup enchilada sauce
1/2 cup oil-packed sun-dried tomatoes, oil drained
8 ounces sheep's milk feta cheese, crumbled (may sub regular feta, but the sheep's milk is creamier)
6 ounces fontina cheese, finely diced or shredded
2 ounces cream cheese, softened
1/2 cup heavy cream
salt + pepper
6 ounces (or more) fresh mozzarella cheese, sliced
fresh basil, for serving
tom-tom (grape/cherry) tomatoes, halved, for serving

Steps:

  • 1.Preheat oven to 350 degrees F. Bring a large pot of salted water to a boil. Cook the pasta to al dente. Drain the pasta and add it right back to the hot pot. To the pot add the butter, chunky basil pesto , pasta sauce , enchilada sauce, sun-dried tomatoes, sheep's milk feta cheese, fontina cheese, cream cheese and heavy cream. Season with pepper and a tiny pinch of salt. Using a large wooden spoon toss everything together until a creamy sauce has formed, about 3-5 minutes. If pot is not oven safe, transfer the pasta to a 9x13 inch baking dish. Place the mozzarella slices (or shredded mozz) on top of the pasta. 2.Bake for 10 to 15 minutes, then turn the broiler on and broil for 1 to 2 minutes or until cheese is golden and bubbly. 3.Remove from the oven and top with fresh basil ribbons. Allow to sit five minutes and then serve with fresh tom-tom tomatoes.
