WHITE BEAN AND ROASTED MUSHROOM SOUP
A satisfying soup, that uses a healthy pureed white bean and broth base instead of cream, so it can be enjoyed often, guilt-free.

Steps:
- Preheat oven to 450-degrees F.
- Arrange mushrooms, garlic and onion separately in single layer on large baking sheet. Drizzle with olive oil, and sprinkle with 1 teaspoon salt, and 1 teaspoon pepper. Toss to coat, keeping mushrooms separate from garlic and onions. Add sage leaves and stems of thyme. Roast in 450-degrees F oven for 10 minutes, toss and roast for additional 15 minutes.
- While vegetables are roasting, add broth, beans, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 tablespoon fresh thyme leaves to a large stock pot over medium heat and simmer.
- When vegetables are done roasting, let cool slightly. Retrieve 2 cups of the white beans, and 1 cup of broth from the stock pot, add to a blender along with the roasted onions, garlic and herbs. Cover and blend until smooth.
- Add pureed bean mixture back to stock pot, whisking in until smooth. Add roasted mushrooms to soup. Salt and pepper to taste.
- Keep warm over low heat until ready to serve.
CREAMY ROASTED MUSHROOM AND CANNELLINI BEAN SOUP
Steps:
- Soak the dried porcini mushrooms in the boiling water until soft, about 20 minutes. Strain the mushrooms, reserving the liquid. Finely chop the porcinis and set aside.
- While the porcinis soak, preheat the oven to 375° F/190° C.
- Toss the the baby portabella mushrooms with 3 tablespoons of the olive oil and a sprinkle of kosher salt and black pepper. Arrange on the prepared baking sheet and place the rosemary and thyme sprigs on top of the mushrooms. Roast until the mushrooms begin to release their liquid, then drain off the liquid and combine with the porcini broth. Return the mushrooms to the oven and continue roasting until brown and tender, about 20 to 30 minutes. Discard the herbs. Chop about 1 cup of the mushroom quarters and set aside.
- Warm the remaining two tablespoons of olive oil and sauté the onions, carrots, and celery until soft. Add the porcinis, quartered baby portabellas, cooked cannellini beans, and mushroom broth. Bring to a boil, then reduce heat and cook covered until the beans are soft, about 20 minutes. Stir in the milk and parsley and allow it to warm. Season with additional kosher salt and freshly ground pepper to taste. Puree in the blender, dividing into batches as necessary.
- Serve with some of the chopped roasted mushrooms on top.

CREAMY TUSCAN CHICKEN, MUSHROOMS AND CANNELLINI
I got this recipe from a Bush's Beans e-mail. It's good as it is, but I like it best with spinach or broccoli added.

Steps:
- Heat oil in a 10-inch skillet over medium-high heat. Add chicken breast pieces; brown slightly. Stir in mushrooms; cook 2 minutes. Transfer mixture to a plate.
- Add soup, broth, milk, garlic powder and beans to skillet; simmer for 2 minutes. Stir in cream cheese and season with pepper to taste.
- Return mushrooms, chicken (and any juices) to the skillet. Cook 15 minutes.
- Serve topped with cheese.

"CREAMY" MUSHROOM SOUP
What luscious flavor from such basic ingredients! Pureed soft tofu or white beans make a deceptively rich base for a soup sure to please mushroom enthusiasts. Serve this soup as an introduction to light pasta or potato dishes.

Steps:
- Heat the margarine in a soup pot, and add the onion. Sauté over medium heat until the onion is golden and soft.
- Transfer the onion to a food processor along with the tofu or cannellini beans. Process until smoothly pureed, add the vegetable broth, and process again briefly.
- In the same soup pot, combine the mushrooms with enough water to keep the bottom of the pot moist. Cover and steam the mushrooms until tender, 8 to 10 minutes.
- Transfer the mixture from the food processor back to the soup pot and stir to combine with the mushrooms. Add a little more water if too thick and heat slowly until heated through. Season with salt and pepper and serve. Or, if time allows, let the soup stand off the heat for an hour or so, then heat through as needed.

CREAMY ITALIAN WHITE BEAN SOUP

Steps:
- In a large saucepan, heat oil. Cook onion and celery in oil for 5 to 8 minutes, or until tender. Add garlic, and cook for 30 seconds, continually stirring. Stir in beans, chicken broth, pepper, thyme and 2 cups water. Bring to a boil, reduce heat, and then simmer for 15 minutes.
- With slotted spoon, remove 2 cups of the bean and vegetable mixture from soup and set aside.
- In blender at low speed, blend remaining soup in small batches until smooth, (it helps to remove the center piece of the blender lid to allow steam to escape.) Once blended pour soup back into stock pot and stir in reserved beans.
- Bring to a boil, occasionally stirring. Stir in spinach and cook 1 minute or until spinach is wilted. Stir in lemon juice and remove from heat and serve with fresh grated Parmesan cheese on top.

CREAMY MUSHROOM SOUP WITH LITTLE WHITE BEANS
This is a great healthy soup recipe that can easily be vegan - just use veggie broth and skip the dairy! You can use plain old button mushrooms but I really enjoyed this with oyster and baby portobello mushrooms. I also chose sherry and evaporated milk and it turned out great. This is a modified version of a recipe that I got from our health region's magazine. Enjoy!

Steps:
- Clean the mushrooms. Slice half of them and finely chop the other half.
- In a large pot, heat olive oil over medium-high heat. Add mushrooms, onion and garlic. Stirring frequently, saute until the moisture evaporates and the mushrooms begin to turn golden, about 10 minutes.
- Add the sherry and cook until it evaporates. Add the flour and cook, stirring, for 1 minute. Add the stock and beans and bring to a simmer. Reduce the heat to low and cook for about 15 minutes.
- Turn the heat off and stir in milk or cream. Salt and pepper to taste.
