CREAMY TOMATO BASIL CHICKEN BREASTS



Creamy Tomato Basil Chicken Breasts image

These Creamy Tomato Basil Chicken Breasts are a simple, one-pan meal that comes together in a total of 25 minutes. This recipe is made with tender, juicy chicken breasts simmered in a rich, creamy, and flavourful sauce.

2 tablespoons canola oil
2 boneless skinless chicken breasts ((roughly 1 lb or 454 grams))
salt and pepper
1 tablespoon minced garlic ((2-3 cloves))
¾ teaspoon salt
½ teaspoon dried basil
¼ teaspoon black pepper
1 pinch crushed red pepper flakes ((optional but adds great flavor!))
398 ml canned diced tomatoes with Italian herbs
¾ cup tomato pasta sauce ((marinara or other seasoned tomato sauce))
¾ cup whipping cream ((whole milk or half and half also work*))
1 tablespoon corn starch
2 tablespoons freshly chopped basil ((1 tablespoon basil pesto is a great substitute if you can't find basil))
freshly grated Parmesan for garnish as desired

Steps:

  • Halve chicken breasts the long way, so that you have two thin pieces of chicken breast (see video for a visual) -- this helps them to cook more evenly. (You can also use 4 chicken breasts flattened to the same thickness, but you will need a large skillet to cook them)
  • Heat oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
  • Brown chicken breasts on each side. This will take about 2-4 minutes per side.
  • Remove chicken breasts from the pan and keep covered.
  • Add the garlic, salt, basil, pepper and pepper flakes if using. Cook 1 minute -- do not let the garlic burn!
  • Add diced tomatoes and tomato sauce. Scrape and browned bits off the bottom of the pan with a wooden spoon.
  • Whisk together the cream and corn starch and add to the pan. Stir to combine.
  • Add the chicken breasts back to the pan. Bring to a low simmer, then reduce the heat to medium-low and cover. Cook until chicken breasts reach an internal temperature of 165 degrees F and the sauce has thickened slightly. Serve.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
3 teaspoons butter, divided
8 plum tomatoes, seeded and chopped
1 small onion, finely chopped
1 garlic clove, minced
1/2 cup reduced-sodium chicken broth
1 cup uncooked whole wheat orzo pasta
1 cup evaporated milk
1/2 cup loosely packed basil leaves, julienned
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken in 2 teaspoons butter until no longer pink. Remove and keep warm. In the same skillet, saute tomatoes and onion in remaining butter until onion is softened. Add garlic; cook 1 minute longer., Stir in broth. Bring to a boil; add orzo. Reduce heat. Cover and simmer for 10-12 minutes or until orzo is tender. Stir in the chicken, milk, basil, salt and pepper; heat through (do not boil). Sprinkle with cheese just before serving.

2 tablespoons butter
2 teaspoons chopped garlic
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
4 boneless skinless chicken breasts
1 cup coarsely chopped tomatoes, eg.red yellow and or 1 cup orange tomatoes
1/4 cup coarsely chopped basil leaves
1/2 cup whipping cream

Steps:

  • In 10-inch skillet melt butter until sizzling; stir in garlic, salt and pepper. Add chicken breasts. Cook over medium-high heat, turning once, until golden brown (8 to 12 minutes).
  • Add tomatoes, 1/4 cup basil and whipping cream. Continue cooking, stirring occasionally, until sauce is heated through (4 to 5 minutes).
  • Serve with pasta and garnish with basil leaves, if desired.
  • Makes 4 servings.

  • Cut the chicken in half lengthwise so you have 4 thinner cutlets. Sprinkle them with the garlic powder and salt & pepper. Coat the chicken in flour.
  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the chicken and cook it for about 4-5 min/side until the chicken is nice and golden. Remove the pan from the heat, and take the chicken out of the pan and set it aside.
  • Add the garlic, Dijon mustard, and chicken broth to the pan and return it to the heat. Let it bubble for about 30 seconds, while stirring to scrape up the brown bits from the bottom of the pan and incorporate the mustard.
  • Add in the cream, tomatoes, Italian seasoning, and basil. Once it starts to bubble, add the chicken back in and cook it for another 5 minutes or so (sauce will thicken up a bit and the chicken will cook through). You may need to reduce the heat if it's boiling too furiously. Season with extra salt & pepper as needed. You can serve this dish with some parmesan cheese grated over top if you wish.

  • Mix the garlic powder, salt, and pepper together and season each side of each chicken breast with it evenly.
