A volunteer at a Red Cross Blood Drive gave my sister this recipe years ago. This recipe will literally make a dishpan full of cookies. You will probably want to halve this recipe.

Ingredients

2 cups light brown sugar
2 cups white sugar
2 teaspoons vanilla extract
2 cups vegetable oil
4 eggs
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 ½ cups quick cooking oats
4 cups cornflakes cereal
1 cup chopped pecans
1 cup flaked coconut

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a LARGE bowl, cream brown sugar, sugar, vanilla, oil and eggs together. Add flour, soda, salt and oats. Mix well. Stir in corn flakes, coconut and pecans.
Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.
Makes 10 dozen (2 inch) cookies. Caution: Halve this recipe if you don't want a ton of cookies.

●2 1/4 cups quick oats, uncooked
●1 cup chopped dried apple slices, or raisins

Steps:

Preheat oven to 375º F.
Combine flour, baking soda, salt and cinnamon in small mixer bowl. Beat sugar and shortening in large mixer bowl until creamy. Beat in eggs. Gradually add flour mixture and water. Stir in morsels, oats and apples. Spread batter into ungreased 15 x 10-inch jelly-roll pan.
Bake for 18 to 20 minutes or until lightly browned. Cool completely in pan on wire rack. Cut into bars.

1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/4 cups granulated sugar
1 cup butter flavor shortening
2 eggs
2 tablespoons water
1 (12 ounce) package semi-sweet chocolate chips
2 1/4 cups uncooked quick oats
1 cup chopped apples, slices or 1 cup raisins

Steps:

Preheat oven to 375.
Combine flour, baking soda, salt & cinnimon in small bowl and set aside.
In large mixer bowl beat sugar & shortening until creamy. Add eggs. Gradually add flour mixture and water. Stir in chocolate chips, oats & fruit.
Spread in ungreased 15 1/2" x 10 1/2" baking pan.
Bake 18-20 min or untill lightly browned.
Cool completely and cut into 2" squares.

This recipe came from Nestle's Website. My husband is in Iraq and I have been looking for some home baked goodies I can send him. These cookies are what they consider to be "desert safe". They have been tested and meets Middle East Guidlines, as well as US Postal Service mailing regulations.

2 cups NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
