- In a small saucepan, bring water and broth to a boil. Stir in the bulgur, chili powder and 1/4 teaspoon Creole seasoning. Reduce heat; cover and simmer for 15 minutes or until tender., Meanwhile, in a large skillet, brown sausage in 1 teaspoon oil. Remove and keep warm., In the same skillet, saute onion and green pepper in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the beans, tomatoes, shrimp, Worcestershire sauce, sausage and remaining Creole seasoning. Cook for 3-5 minutes or until shrimp turn pink. Fluff bulgur with a fork; serve with sausage mixture.

HATTIE'S CREOLE JAMBALAYA

Steps:
- Coat a large, deep skillet with olive oil and keep on high heat until oil sizzles.
- Dredge chicken and shrimp in flour and add to skillet with andouille sausage. Lower heat and remove the par-cooked shrimp. Add garlic, peppers, celery, okra, and onion and cook on low heat for about 4 minutes, stirring constantly. Add all seasoning and diced tomatoes and Worcestershire.
- Add uncooked rice and simmer for 2 to 3 minutes on low heat. Add stock and tomato juice, then simmer for 5 minutes on medium heat, taking care to stir to prevent sticking. Once rice has completely cooked, add shrimp and crawfish; simmer for 2 minutes.
- Serve in a deep bowl and garnish with fresh chopped scallions and parsley.
CHEF JOHN'S SAUSAGE & SHRIMP JAMBALAYA
While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into a soup recipe. Serve garnished with green onion.

Steps:
- Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
- Stir in paprika, cumin and cayenne; cook for 1 minute.
- Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
- Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
- Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

SHRIMP AND CHORIZO JAMBALAYA
This spicy, zingy Creole dish with juicy shrimp can be frozen for up to 1 month. To freeze: transfer to a container, label and freeze for up to 1 month. To eat: defrost at room temperature for 8 hours, or in the fridge for 24 hours. Microwave in portions, 2 at a time, on full power for 3 minutes (for a 900W microwave), gently stirring halfway, until piping hot throughout. Serve with Tabasco and lime wedges.

- Cook the chorizo in a wide, deep frying pan over a medium-high heat, stirring occasionally, for 3-4 minutes. Remove with a slotted spoon and drain on kitchen paper.
- Add the peppers, onion, celery, garlic and chili to the pan and cook, stirring occasionally, for 5 minutes, until softened slightly. Stir in the thyme and rice, cook for 1 minute, then add the tomatoes, broth and Tabasco and bring to the boil. Cover, reduce the heat to low and simmer very gently, stirring occasionally, for 12 minutes, until most of the liquid has evaporated. Season to taste.
- Stir in the chorizo, shrimp and scallions and cook for 1 minute. Serve or cool completely to freeze.

Add the next 9 ingredients; bring to a boil over medium-high heat. CREOLE JAMBALAYA
I found a version of this in reader's digest many years ago. I have since revised it to my own tastes so many times that I no longer even remember what the original recipe was anymore. I love it very spicy so I use extra hot sauce at the table. Tabasco is my preferred brand but Frank's isn't too bad. Just not as spicy but with very good flavor.

- Cook onions, garlic, green pepper and celery in the bacon drippings or cooking oil until onion is browned.
- Add parsley, ham, thyme, and bay leaves; cook 5 minutes, stirring often.
- Add salt, hot sauce, tomatoes with juice, tomato sauce, and 2 cups of water; simmer 5 minutes.
- Add rice; reduce heat and simmer, covered for 30 minutes.
- Add shrimp and smoked sausage; cover and simmer 10 or 15 minutes longer or until rice is tender and liquid is absorbed.
- Season to taste with salt and more hot sauce.

- Using a little olive oil, cook the Andouille Sausage slices in a Dutch Oven until they are a little caramelized on both sides, then remove with a slotted spoon.
- Add crushed garlic, onion, bell pepper, and celery to the pan and saute until soft, about 3-4 minutes on a medium heat.
- Add the seasonings to the pan and stir well, then add the rinsed Jasmine rice and add that to the pan along with the chicken broth, fire roasted tomatoes and return the andouille sausages to the pan, mix well to combine.
- Bring it to a boil then reduce the heat to low, add the lid, and simmer for 20 -35 minutes or until rice is fully cooked.

- Cut both smoked and andouille sausages into quartered slices (each slice is 1/4 inch to 1/2 inch thickness, each disc is quartered. I like to quarter first, then slice the wedges.)
- Heat the oil in a large Dutch oven or black iron pot over medium heat, add half the prepped sausage per batch and saute for 8 to 10 minutes, until browned. Remove the sausage from pan (leave the oil and drippings) to a bowl, and set aside. Add remaining sausage to the same pot and cook 8 to 10 minutes, until lightly browned. Remove sausage from pan (again, leave the oil and drippings) and add to the bowl with first batch of sausage, and set aside.
- Add onion, celery and peppers to the same pot that you cooked the sausage in and saute for 8 to 10 minutes, until the onion is translucent. Add the tomato paste to pot, cook for about 1 minute while stirring. Add tomato, garlic, jalapeno or cayenne, oregano, and thyme, and cook until all the vegetables and herbs are blended well.
- Add the stock and bring to a full rolling boil. Stir in the rice, and add the sausages, bay leaves, salt, pepper and hot sauce. Return to a full boil, reduce the heat to low, stir well then simmer (covered) for 20 minutes.
