- In a large bowl, combine cheeses, oregano and basil; set aside. In a large skillet, saute the onion, green pepper and garlic in oil until tender; add to cheese mixture. In the same skillet, cook sausage over medium heat until no longer pink; drain and stir into cheese mixture. , Divide each loaf of dough into four portions; roll each into a 6-in. circle. Spoon 2 tablespoons of filling on half of one circle; fold dough over filling and seal edges. Repeat with remaining dough and filling. Brush with butter. Place on greased baking sheets. , Bake at 350° for 25 minutes or until golden brown. Serve with spaghetti sauce for dipping.

SAUSAGE CALZONES

- Preheat oven to 425 F.
- Brown sausage in a small skillet in a drizzle of olive oil. Transfer the cooked crumbled sausage to a paper towel lined plate to drain.
- Combine sausage with ricotta, parsley, garlic, Parmigiano, nutmeg, pepper, and pimento. Roll out doughs and halve cross-wise. Place a dough rectangle on a nonstick cookie sheet. Use 1/2 cup mozzarella on half of each dough rectangle and pile a mound of filling on half of the total area. Fold dough over and pinch edges to seal. The result is a rectangular turnover.
- For half-moon shaped calzones, trim excess dough. Roll dough bits into strips, tie in knots and brush with garlic oil and cheese. Garlic knots are fun to dip at the table.
- Bake calzones 15 minutes or until golden all over. Serve calzones with warm tomato, marinara, or pizza sauce for dipping.
- Cook's Note: For an additional time saver, 2 packages precooked sausage crumbles, 8 ounces each, may be substituted for raw Italian sausage used in the above recipe.
- Add olive oil to medium saucepan over moderate heat. Add garlic and crushed pepper to the heated olive oil; when pepper snaps and garlic sizzles, stir in crushed tomatoes. Season sauce with salt, pepper, and Italian seasoning. Cook for five minutes and stir in parsley. Serve.

CHEF JOHN'S HAM AND CHEESE CALZONES
Today calzones are most commonly stuffed with the exact same toppings that go on a pizza which, besides the crust issue, was one of my main problems with it. I mean, why not just fold a pizza in half, and call it a day? So, I decided to do what I hear is a more traditional filling featuring ricotta, fresh mozzarella, and ham. The result was as enjoyable as it was surprising.

- Preheat oven to 500 degrees F (260 degrees C). Line a baking sheet with parchment paper.
- Divide dough into 4 equal portions; shape each into a ball. On a lightly floured surface, flatten each dough ball into a flat circle and roll out into an 8- or 9-inch circle.
- Place 2 prosciutto slices on one half of each circle of dough, leaving a 1-inch empty border. Spoon ricotta cheese on prosciutto. Season with a pinch of salt, pepper, and cayenne pepper. Top with chopped ham, mozzarella slices, and a drizzle of olive oil.
- Moisten edge of dough with a bit of water using your fingertip. Fold the empty half of the dough over the filling and lightly seal edges. Crimp the edges up to completely seal the calzone.
- Sprinkle lined baking sheet with cornmeal. Transfer calzones to baking sheet. Cut several small slits in the top of the crust with the tip of a knife to allow for venting.
- Beat egg with water to make egg wash. Brush the calzones with egg wash. Dust with grated Parmigiano-Reggiano cheese. Remove excess cornmeal and grated cheese from around calzones to avoid smoke from the hot oven.
- Bake in preheated oven until browned, about 15 minutes. Let cool 15 minutes before serving. Serve with heated marinara sauce for dipping.

- Unroll pizza dough onto an ungreased baking sheet; pat into a 14x11-in. rectangle. - Heat oven to 450°F. In 10-inch skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in mushrooms and 1/2 cup of the pizza sauce; cook until thoroughly heated.
- In medium bowl, stir Bisquick mix, boiling water and oil until dough forms (add additional tablespoon of water if needed). Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape dough into a ball; knead about 10 times or until smooth. Roll dough into 12-inch round.
- On ungreased cookie sheet, place dough round. Top half of dough with sausage mixture to within 1 inch of edge. Sprinkle mozzarella cheese over sausage mixture. Fold dough over filling; press edge with fork to seal. Sprinkle with Parmesan cheese.

- Preheat oven to 200ºC. Put flour and semolina in the large bowl of an electric mixer. Attach dough hook. In a jug whisk together water, oil and yeast.
- NOTE: If don't have mixer, you can knead for 15 minutes on a floured surface; check dough texture as you go along.
- Turn mixer on low and pour in yeast mixture. Once all liquid has been added, increase speed to high, add salt and mix for 5 minutes until dough is soft and silky. Remove dough hook and cover bowl with plastic wrap. Put bowl in a warm place and allow dough to prove for 40 minutes or until doubled in size.
- Oil spray a frypan. Add sausage meat (out of skin) and cook over a high heat for 5 minutes or until brown. Add onion, reduce heat to low and cook for 25 minutes. Add oregano and season with extra salt and pepper.
- NOTE: I diced red onion finely.
- NOTE: I made sure the sausage was in fine crumbles and also added about 1/4 cup water in small batches along the way to make the meat moister and also so would not stick to the pan.
- Taste, taste, taste :).
- Divide dough into 4 portions and roll out into rounds. Divide ricotta between rounds, tear over cherry bocconcini and drizzle with a little oil. Season with salt flakes and pepper. Sprinkle over parmesan and top with sausage mixture.
- NOTE: I used a total 150 grams of combined cheese ie romano, peccorino, parmesan.
- Fold over dough rounds to form half-moon shapes, then rope-twist the edges or press with a fork to seal. Put calzones on a heavy tray or preheated pizza stone and bake for 30 minutes. Stand for 10 minutes, before serving.
- ENJOY!
- NOTE: cooked two batches; one on a flat tray sprayed with oil; the second on a flat tray with holes thorughout; the latter came out better.
- NOTE: Make sure to trap filling and and make sure there are no holes for the filling to slip out while is baking.

- In large bowl, dissolve yeast in water& milk.
- Add oil, salt, sugar and 2 cups of flour; beat until smooth.

- Allow both crust pouches to stand at room temperature 15 to 20 minutes.
- Meanwhile, in large skillet brown sausage with onions and garlic; drain. Stir in basil, Italian seasoning and pepper. In small bowl, beat eggs with fork. Reserve 1 1/2 tablespoons; set aside. Add ricotta cheese to remaining eggs; mix well. Stir into sausage mixture. Add mozzarella cheese, red peppers and 3 tablespoons of the pine nuts; mix well.
- Preheat the oven to 400 degrees.
- Remove crusts from pouches; unfold. Press out fold lines. If crusts crack, wet fingers and push edges together. Place one prepared crust on end of large ungreased cookie sheet with about 1/3 of crust hanging over edge. Spoon half of sausage mixture over half of crust on cookie sheet, leaving about 1-inch border and mounding filling towards center. Fold pie crust half over filling; press edges with fork to seal. Cut four 1-inch slits in top of crust. Repeat with second crust and remaining filling at opposite end of cookie sheet. Brush with reserved 1 1/2 tablespoons egg. Sprinkle with remaining pine nuts.
- Bake 20 to 25 minutes or until crust is golden brown. To serve, cut each calzone in half or into 3 wedges.

CRESCENT CHEESY SAUSAGE CALZONE
I have been making this so long and it's one of the first recipes my Godmother ever shared with me. She is probably one of the other great cooks I know. She made this all the time and one day she shared it with me when I was I was about 13. I make it for my family now, it's one of my best friend's favorite foods too. It's so easy to make and is jam packed with flavor. My Godmother didn't put cream cheese with her original recipe but I added to it. I think it's an awesome addition, however I always make both by cutting the cream cheese amount in half and adding into the pan after I added the first half into the first crescent sheet dough. Note: I now buy the crescent dough in sheet form from Pilsbury, this makes covering the dough so much easier than the perforated crescent dough.

- Preheat oven to 350'F. Unroll dough onto parchment paper lined cookie sheets, gently stretching dough on each side.
- In a skillet brown sausage until no longer pink and in crumbles. Add in garlic and mix around for about a 2 minutes.
- Turn off heat and add to sausage, romano cheese, then mix around, then add 1 cup shredded mozzarella/pizza cheese blend and mix around. Add in cream cheese in about 1 ounce pats so that it will be easier to mix and coat the sausage.
- Split sausage and cheese mixture in half and place in middle of crescent dough leaving 1 inch untouched at ends, sprinkle on top of sausage mixture 1/2 cup of shredded mozzarella/pizza cheese blend
- Take one side of dough and stretch over meat mixture and do the same with other side of dough carefully not to rip dough. Fold open edges up and flip calzone over so that the double layer of dough is on bottom. (This will guarantee the dough to fully cook.) Scoot over calzone to lay 2nd. sheet of crescent dough and do the same steps. (This will allow you to bake both on the same sheet at the same time.)
- Bake for 15-20 minutes until golden brown. Let calzones set for about 10 minutes. Then cut with a sharp knife into strips and serve! You can serve with marinara sauce but these are so good by themselves and make a great party snack!
- Note: If you want to make 1 cream cheese calzone, add half of the sausage blend to first calzone before adding cream cheese, then mix in 4 ounces of cream cheese to sausage mixture in pan and mix then add to second sheet of crescent dough. (Still top both with shredded cheese before wrapping dough)
