For a super flavorful chicken casserole, make these Chicken Crescent Rolls. Shredded chicken in a creamy sauce seasoned with ranch dressing, wrapped in crescent roll dough, then baked until golden--the whole family will love this chicken dinner!

2 8-ounce cans refrigerated crescent roll dough
2 10.5 ounce cans cream of chicken soup
8 ounce package cream cheese
3 cups fully cooked shredded chicken
1 package ranch dressing mix
2 green onions chopped

Steps:

  • Preheat oven to 375F. Prepare a 9x13-inch baking dish by spraying with non-stick cooking spray.
  • Pour the canned soup and cream cheese into a medium pot and heat on the stove over medium heat, stirring often, until the cream cheese is melted and incorporated into the soup. Add the ranch dressing mix and remove the sauce from the heat.
  • Reserve 1 cup of the sauce, then add the rest to a medium mixing bowl. Add the shredded chicken and green onions; stir well to combine.
  • Separate the crescent roll dough and scoop a spoonful of the chicken mixture onto the wide end of each crescent roll and fold the long point of the dough over and around the chicken to create a little packet. Place each packet into the prepared baking dish.
  • Pour the reserved gravy around the chicken packets in the pan.
  • Bake for 20-25 minutes until golden brown. Serve warm.

1 cup cooked, finely diced chicken ((or use canned chicken))
1 cup grated cheddar cheese, divided
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
¼ cup milk
1 (8 oz) tube refrigerated crescent roll dough (8 count)

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together soup, milk and ½ cup of cheese. Pour into the bottom of an 8-inch square baking dish. Set aside.
  • In a separate bowl, combine chicken and remaining ½ cup of cheese.
  • Unroll crescent roll dough and separate into 8 triangles. Place about 1-2 heaping tablespoons of the chicken mixture on the wide end of each crescent roll. Roll the dough up and place each crescent roll (seam-side down) in the bottom of the dish.
  • Bake, uncovered, until the liquid is bubbly and the tops of the crescent rolls are browned (about 25 minutes). The bottom of the rolls (that are submerged in the sauce) will stay soft - like dumplings -- but will still be cooked through.

2 (8 ounce) packages crescent roll dough, unrolled and divided into triangles

2 (10.75 ounce) cans condensed cream of chicken soup
2 ½ cups milk
1 cup shredded Cheddar cheese

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan heat cream of chicken soup, milk and 4 ounces of the cheese over low heat. Meanwhile, separate crescent rolls into triangles. 2 Tbsp. GREY POUPON Dijon Mustard
3 Tbsp. chopped fresh parsley
2 cups chopped cooked chicken
1-1/2 cups KRAFT Shredded Cheddar Cheese
1/4 cup chopped red peppers
1 can (8 oz.) refrigerated crescent dinner rolls

Steps:

  • Heat oven to 350ºF.
  • Mix first 3 ingredients until blended. Combine chicken, cheese and peppers in large bowl. Add mayo mixture; mix lightly.
  • Unroll crescent dough on baking sheet sprayed with cooking spray; firmly press perforations and seams together to form 12x8-inch rectangle. Spread chicken mixture onto dough to within 2 inches of edges. Use kitchen shears or sharp knife to make cuts, 1 inch apart, on long sides of dough to within 1/2 inch of filling. This will also work great with turkey; if you do not have chicken breasts, then use any leftover cooked chicken. If desired you can fill the crescents just with the filling mixture and omit the soup, just brush with butter before baking. They are wonderful just stuffed with the filling! A few members have experienced a soggy bottom, so you might want to consider just drizzling half (or even a little less) of the soup mixture on top and a little around the sides of the crescents, then save the rest of the soup mixture for another time (this will help prevent a soggy bottom). You may use the jumbo crescent rolls and stuff with more chicken mixture :)

2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
1/2-3/4 cup finely grated cheddar cheese

1/2 teaspoon ground black pepper (or to taste)
2 -4 tablespoons mayonnaise or 2 -4 tablespoons whipping cream
1 -2 cup grated cheddar cheese (for topping)

Steps:

  • Set oven to 350°F.
  • Butter a casserole dish (any size to hold crescent rolls).
  • In a saucepan, mix half and half cream, 3/4 cup grated cheese (can use more cheese if desired) and undiluted chicken soup (can season with black pepper if desired).
  • Heat just until the cheese melts (do not boil).
  • For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder (if using).
  • Add in the chopped chicken, onion and cheddar cheese; mix well until combined.
  • Add in 2 tablespoons whipping cream or mayonnaise; mix to combine (add in a little more if the mixture seems too dry).
  • Season with seasoned salt or white and black pepper to taste.
  • Unroll the crescent rolls.
  • Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end.
  • Drizzle a small amount of soup mixture on the bottom of the dish.
  • Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
  • Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired.
  • Bake for about 30 minutes.

This is my version of a recipe that was in a local magazine from our power company. I changed around a few of the ingredients and scaled it to feed two. Hope you enjoy. I love it because it is pretty quick and easy. Just add a salad and green beans and you have a wonderful meal.

2 boneless chicken breasts, poached and cut into four pieces.
1 can crescent roll
1 can cream of mushroom soup
1/4 cup milk
1 cup shredded cheddar cheese, divided
salt and pepper

Steps:

  • Poach the chicken for 15 minutes in enough water to cover; salt and pepper the water; remove from water, cool and cut into 4 pieces.
  • Divide the crescent rolls and roll chicken in the rolls (you will not use but 4 of the rolls, so you will have 4 left over to cook for your bread) Place the chicken into a 8x8 casserole dish which has been sprayed with pam or buttered.
  • Place seam side down.
  • Heat soup, milk and 1/2 cup cheese in a small sauce pan until cheese is melted.
  • Pour over chicken bundles and then sprinkle the other 1/2 cup cheese on top.
  • Bake at 350 degrees until rolls are golden brown, approximately 20 minutes.
  • NOTE: I always freeze the water that I use to poach the chicken in 2 cup servings.
  • I then use this in the place of water in soups and stews.
