FRIED RED POTATOES
If you want your fried red potatoes to be a bit creamy on the inside, with a crispy, crunchy, browned outside, here's the secret & what you need to know.

Steps:
- In the Instant Pot: Put about a cup of water in the bottom of the pot. Set a wire rack inside and place red potatoes on the rack. Close and seal the lid, then cook on STEAM for 5 minutes.
- In the oven: Place red potatoes directly on the oven rack. Turn oven on to 350 and bake for 30-40 minutes. Test with a fork; remove potatoes from the oven when a fork can pierce the potatoes somewhat easily.
- Set cast iron frying pan on high heat to warm.
- Cut potatoes into 1/2 - 3/4 inch cubes.
- Pour oil into frying pan, allowing it to heat up for a minute or so.
- Slide cubed potatoes into the hot frying pan. Use caution as the oil may splatter.
- Shake frying pan back and forth so the potatoes slide in the oil. Repeat several times. Sprinkle with salt and pepper.
- Allow potatoes to cook for about 10 minutes without disturbing them, then use a spatula to flip them. Cook for another 10 minutes, or until red potatoes are fried to a crispiness you like.

EASY SPICY ROASTED POTATOES
Slight twist to an old favorite. Chili powder gives the potatoes and onions in this recipe some zing! I make these for breakfast every Sunday, and my family loves them!

- Preheat the oven to 450 degrees F (220 degrees C).
- Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
- Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

CRISP SMASHED POTATOES WITH FRIED ONIONS AND PARSLEY
Some of you may be thinking, "Does the world need another crisp smashed potato recipe?" At least some of you are saying, "Yes, we do!" So here you go. Regular olive oil works if you don't have chicken fat around, but this recipe is so good, it's worth roasting a chicken. A few tips: Don't over-steam the potatoes or they will fall apart, but don't under-steam or you'll never be able to crush them. Also, let the potatoes cool a bit before you smash them so they dry out a bit; this, too, helps them stay intact. Finally, the chicken fat (or oil) must be very hot. If it is not hot enough, it will soak into the potato rather than crisp it. These are the best. And the crispiest. Make them. You'll be so happy. (This recipe is adapted from "Dining In: Highly Cookable Recipes" by Alison Roman.)

- Bring 2 inches of salted water to a boil in a large heavy-bottomed pot fitted with a steamer basket. Add potatoes and season with salt. Cover and steam until the potatoes are totally tender, 8 to 10 minutes. (Check one of the smaller ones after 8 minutes to see how tender it is; you should be able to insert a fork into it easily.) If you don't have a steamer basket, boil them in a large pot of salted water until tender, 10 to 15 minutes.
- Remove the potatoes from the steamer and let them cool slightly. Using the bottom of a bowl or cup or the palm of your hand, smash the potatoes until they're just crushed to expose the inside, but not so much that they fall apart. You're going for maximum crispy surface area here.
- Heat the chicken fat (or olive oil or peanut oil) in a large skillet over medium-high heat. Add potatoes in a single layer (work in batches, if you need to) and season with kosher salt and black pepper. Cook until both sides are very browned and very crispy, about 5 minutes per side.
- Remove potatoes with a slotted spoon or spatula and transfer to a serving bowl or platter. Add the butter to skillet and let it melt and foam. Add the onion rings in a single layer and season with kosher salt and black pepper. Cook, swirling skillet occasionally until the onions have turned golden brown and started to crisp, 3 to 5 minutes.
- Remove the skillet from the heat and add Aleppo pepper or red pepper flakes, swirling the skillet a few times to combine. Pour the onions and any butter in the skillet over the potatoes and top with flaky sea salt and parsley.

CRISPY FRIED POTATOES
This recipe comes from the Aquavit cookbook that I borrowed from the library. I planned to make these soon, but when a request came for spicy fries, I immediately thought of this recipe and decided to go ahead and post it in response to the request. You can adjust the seasoning to suit your taste. Please note that this recipe requires a one hour freeze time between fries. It should be started well ahead of the rest of the meal, and finished just before serving.

- Peel potatoes and cut into sticks about 1/2" thick and 4" long.
- Drop them into a bowl of cold water immediately after cutting to prevent discoloration.
- Pour 3" of oil into a deep fryer and heat to 350.
- Meanwhile, drain the potatoes and pat with paper towels until dry.
- Add the potatoes to the hot oil in batches that allow the potatoes to fry in a single layer (not too many at a time).
- Fry for about 5 minutes, or until they just turn brown.
- Remove them from the oil and place on paper towels to drain.
- Continue cooking each batch until they are all fried.
- Be sure to bring the temperature of the oil back up between batches.
- Transfer the potatoes to a baking sheet, in a single layer, and place in the freezer for one hour.
- Process the corn flakes and panko in a blender or food processor until fine.
- Pour into a shallow bowl.
- Combine the flour, salt and cayenne in a second shallow bowl.
- In a third bowl, lightly beat the eggs.
- Roll the partially frozen potato sticks in the flour, then dip them in the eggs, shaking off the excess, and then roll in the cornflake mixture.
- Repeat this process a second time, and place each fry in a single layer on a baking sheet.
- Heat the oil to 375.
- Fry the potatoes in batches for 3- 4 minutes until golden brown.
- Remove and drain on paper towels.
- Sprinkle with salt and pepper and serve.

SPICY FRIED POTATOES
This recipe is a favorite in the house. Surprising considering the amount of spice in it. Overall if you like "Very Spicy" potatoes then you will love this. If you decide to tackle this job, make sure that you are not going to splatter, or if you do that you are wearing an apron. **The turmeric stains everything it touches. Keep that in mind. Even when serving.**

- Peel and slice potatoes thin about 1/4" thick.
- Melt butter or olive oil in deep dish fry pan.
- Mix all the spices together in a "disposable" container and keep to the side.
- Add the potatoes and sliced onions to the hot oil.
- Cover and let cook for about 5-7 minutes.
- Add the mixed spices with a table spoon by sprinkling over the top and mixing in real good. Try to cover as much of the potatoes as possible with the spice.
- Cook uncovered, while turning periodically until potatoes are as crispy or as done as you like them.

CRISP AND SPICY FRIED RED POTATOES
I love everything with a little spicy kick so I make these with my mexican foods as a side. (even though I use cajun spice) You can add as much or as little as you prefer, I like mine spicy! : ) These are simple easy and quick but pack an amazing taste!!

- Boil potatos for a few minutes but not all the way through. Just long enough to soften them a tiny bit. Then drain well, careful not to bruise (they should not be really soft) Allow to cool off completely.
- In a large bowl add potatoes and seasoning to taste. I add alot of garlic and cajun spice) and gently toss potatoes till completely covered. Add more seasoning if needed to cover all potatoes.
- In a large skillet heat veg oil and add potatoes. Fry until cooked through and the outsides are browned and crispy.
- Add a few pats of butter to top and gently toss potatoes. Fry a few minutes more.
