CRISP NORI CHIPS WITH TOASTED SESAME OIL

Steps:
- Heat oven to 250 degrees. Brush or spray one sheet of nori very lightly with a little water and sprinkle it with sea salt. Fold sheet in half and press two sides together (sheets will not bind perfectly; do not worry).
- Use a pizza cutter or sharp knife to cut layered nori into 1-by-3-inch strips (or any desired size). Transfer strips to a cookie sheet in a single layer. Bake them for about 15 to 20 minutes; they will crisp and darken.
- When chips are done, carefully slide them off cookie sheet onto racks (they cool quickly). To serve, brush chips gently with sesame oil. Without oil, chips will stay fresh in a covered container for a day or two.

Steps:
- Wash the spring greens and drip dry in a colander and then on kitchen paper.
- Remove the thick stems and finely shred the green leaves.
- Deep fry the spring greens in batches in hot oil for about 1 minute.
- Take care not to let it burn.
- Drain well and place in a large mixing bowl.
- Scatter sugar, salt and toasted sesame seeds and mix well.

A cheaper way to make those nori snacks you see in the store. This is quick and easy to make. These can be stored up to a week in an airtight container.

- Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet.
- Arrange nori smooth-side down on the prepared baking sheet. Lightly brush olive oil over nori; season with salt.
- Bake in the preheated oven until nori is dry and crispy, 3 to 4 minutes.

TOASTED NORI WITH SESAME SEEDS

Steps:
- Toast the nori by passing each sheet repeatedly over a hot burner untli it becomes crisp and the color dulls.
- Put the sheets together and using scissors, slice them into thin strips, then into squares.
- Toast the seeds and salt in a dry skillet over medium heat until the seeds begin to color. Grind them just enough for the salt to adhere. You can use a coffee grinder or a mortar and pestle(or your food processor). Combiine with the nori and pepper flakes.
- Cool, then store in a covered jar so they will stay crisp. Enjoy!

- Set a sheet of nori shiny side up on a cutting board. Dip a pastry or basting brush into the coconut aminos and very gently brush it all over the nori sheet. Do this very lightly, making sure the nori doesn’t get soggy. Then sprinkle the sesame seeds on top with a little bit of flaky salt. Place the nori on a sheet tray and bake for about 15 minutes. Let it cool for about 5 minutes, then break up into chips.
- These last about 2 days stored in an airtight container (but it rarely takes us two days to finish eating them).
