Cooking bacon on a rack in the oven is much easier than frying it in a pan. This method raises the meat in the pan so the strips aren't loaded with grease.

- Preheat oven to 400 degrees F.
- Set cooling racks on top of jelly roll pans and spray lightly with non-stick spray.
- Arrange the bacon on racks in baking pan. Be careful not to overlap.
- Bake for about 20 minutes.
- Transfer cooked slices to paper towels to absorb excess grease.

- Line two rimmed baking sheets with parchment paper. For crispier bacon, place an oven safe baking rack on top of the parchment paper.
- Arrange bacon on top and bake until bacon is crisped to your liking, about 15 minutes for regular cut bacon and 22-24 minutes for thick-cut bacon

- Preheat the oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with foil and place a wire rack on top.
- Arrange the bacon slices on the wire rack in a single layer. Instead of using a rack, you can arrange them directly on parchment paper.
- Spices can be sprinkled on top of the bacon if desired, but this is entirely optional. Normally, I don't.
- Bake until the bacon is crispy to your liking. I put it in the oven for 20 minutes.
- If you didn't use a rack, drain the cooked bacon briefly on paper towels before serving.

- If making an amount of bacon that will fit on a single baking sheet without overlapping (about 6 to 8 slices, depending upon the bacon and sheet), place a rack in the center of your oven. If making a larger amount, place the racks in the upper and lower thirds. Preheat your oven to 400 degrees F.
- Line a large, rimmed baking sheet with foil for easy clean up (if you prefer to bake the bacon without foil, leave the foil off), then place an ovenproof baking rack on top. Spritz the baking rack lightly with nonstick spray. Arrange the bacon in a single layer on the baking rack.
