Kosher salt as needed
1/4 cup extra-virgin olive oil
1 large broccoli head - (1 1/4 to 1 1/2 lbs) stems removed, and florets trimmed to 2" long with a
stem abt 1/2" thick - (4 to 5 cups)
1 quart chicken stock (preferably homemade)
1 teaspoon hot red pepper flakes - (to 2) or to taste
1/2 pound fresh capellini
1 cup freshly-grated Parmigiano-Reggiano
Freshly-ground black pepper to taste

Steps:

  • Bring a large pot of salted water to boil for the pasta. Meanwhile, heat the oil in a large skillet over high heat until just smoking. Add the broccoli and season with salt, to taste. Cover and cook until just crispy and brown around the edges, about 3 minutes. Remove the cover, stir, and reduce the heat to medium-high. Cover and cook until the florets are crisp but tender, about 5 minutes. Add the chicken stock and pepper flakes. Add the capellini to the boiling water and cook until al dente, 2 to 3 minutes. Drain the pasta and add to the skillet with the broccoli and stock. Stir in 1/2 cup of the cheese and season with salt and pepper, to taste. Divide among 4 warmed soup plates and sprinkle with the remaining cheese. This recipe yields 4 servings.

A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

1 ½ pounds fresh broccoli, cut into bite size pieces
⅓ cup butter
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
¼ teaspoon ground black pepper
2 cloves garlic, minced
⅓ cup chopped salted cashews

Steps:

  • Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
  • While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

1 (16 ounce) package frozen broccoli, thawed
2 tablespoons butter
¼ teaspoon salt
2 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese, cubed
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.
  • Sprinkle 1/2 cup of crushed crackers over the bottom of a 1 1/2 quart casserole dish. Slowly pour the broccoli mixture into the dish, and top with remaining crushed crackers.
  • Bake in preheated oven for 30 minutes.

Basic Quiche And Tart Pastry (see recipe)
1 cup small broccoli florets
3 eggs
2 green onions, including some
of the tender green tops thinly sliced
1 1/2 cups milk
1/4 teaspoon salt
1/4 teaspoon freshly-ground black pepper
1/8 teaspoon freshly-grated nutmeg
6 ounces creamy fresh goat cheese

Steps:

  • Preheat an oven to 425 degrees. On a lightly floured work surface, roll out the pastry dough into a round 12 inches in diameter. Drape the round over the rolling pin and carefully transfer to a 9-inch tart pan with removable bottom. Gently ease the pastry into the pan. Trim the pastry even with the pan rim. Prick the bottom and sides of the pastry shell with fork tines. Form a double-thick 12-inch square of aluminum foil, poke a few holes in it, then press it into the pastry-lined pan. Bake for 8 minutes. Remove the foil and bake until the pastry looks dry but not brown, about 4 minutes longer. Remove from the oven; reduce the temperature to 325 degrees. Bring a saucepan three-fourths full of lightly salted water to a boil. Add the broccoli and cook until tender-crisp, about 5 minutes. Drain well, pat dry, and set aside. In a bowl, using a fork, beat the eggs until lightly frothy. Stir in the green onions, milk, salt, pepper, and nutmeg. Scatter the broccoli evenly in the pastry shell. Drop small clumps of the goat cheese evenly among the florets; carefully pour in the egg mixture. Bake until a knife inserted into the center comes out clean, 35 to 40 minutes. 2 bunches broccoli or 4 -5 cups broccoli florets
2 tablespoons olive oil
1 teaspoon coarse salt
1 teaspoon cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cayenne pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven and a baking sheet to 375.
  • Cut broccoli into florets, the smaller the size the quicker it will cook and crispier it will be.
  • Toss florets with olive oil to coat.
  • Add remaining ingredients and toss well.
  • Spread into a single layer on the hot baking sheet.
  • If desired sprinkle additional parmesan cheese and black pepper on top.
  • Bake for 10-12 minutes for small florets or 15-20 for larger pieces.
