CHICKEN DIJON WITH ANGEL HAIR PASTA AND FRESH ZUCCHINI

Steps:
- Fill a large pot with water and begin to heat for pasta.
- Cut chicken breasts into thin slices, then into 1 inch pieces.
- Peel and quarter onion, then slice thinly.
- Trim stems off of mushrooms and slice thinly.
- Drain artichoke hearts and cut into small pieces.
- Trim zucchini and cut into 1/4 inch pieces.
- Place in a microwaveable dish and set aside.
- Place 1 tablespoon butter & 1 tablespoon vegetable oil in a wide frying pan or wok over medium high heat.
- Press garlic and add; add red pepper flakes, too.
- Then add chicken pieces and cook for 1-2 minutes.
- Microwave zucchini on high for 6 minutes.
- To pan with chicken, add onion slices and cook 1 minute more.
- Add mushroom slices and artichoke pieces.
- Continue cooking until chicken pieces are no longer pink (approximately 4 minutes) and remove pan from heat.
- Reduce burner temperature to low.
- Put pasta in boiling water and cook 1-2 minutes or until done.
- Add Dijon mustard, wine, & tamari to chicken mixture and stir carefully.
- Place pan back on burner and add light sour cream.
- Stir gently until sauce forms.
- Remove from heat.
- Remove zucchini from microwave.
- Season lightly with small amount of butter or margarine, salt, if using, black pepper, if using,
- Drain pasta in a large colander.
- Serve Chicken Dijon over pasta accompanied by fresh zucchini and green onions.
- Serve with bread sticks, a salad of European greens with raspberry vinagrette, and White Zinfandel wine.

EASY CRISPY DIJON CHICKEN
This is sooo easy to make, and everyone thinks you spent a lot of time making it. The cooking technique is what really makes this recipe work so well. You'll probably end up using this technique a lot; I sure do. (I made Kittencal's Easy and Delicious Ranch-Parmesan Chicken this way and it was amazing.) OK, back to the recipe; I use only 1/2 as much butter as the original recipe called for but I am posting it exactly as I received it. I think 2 tablespoons butter is plenty but you judge for yourself. So, keep in mind that you can cut the fat considerably by reducing the butter. I also use regular 1 or 2% milk instead of half and half when that's all I have around. It always comes out delicious. You can use this recipe for pork chops, too.

- Preheat the oven to 450 degrees Fahrenheit.
- Put the butter in a 9 or 10 inch square baking dish and put it in the oven while it is heating up.
- Don't use a dish that is too big or the butter will end up spreading out too far from the chicken. This whole first part is very important and will help make your chicken end up crispy.
- In one bowl, whisk together the mustard and half and half.
- In another bowl, mix together the cracker crumbs and the cheese.
- When the oven is completely heated up and the butter is sizzling in the baking dish, remove the pan from the oven and set it on a trivet on the counter next to your two mixtures.
- Dip the chicken in the wet mixture; dredge in the crumb mixture.
- This step is important. Put the chicken down in the dish and turn it over right away. The idea is to put it in the butter briefly and turn it over so the butter side is up. It makes the chicken get evenly crispy. I use this technique for all of my oven "frying" because it works so well.
- Bake for approximately 45 minutes or so, depending on the thickness of the chicken breasts.
- Leave them in there until the coating is browned real nicely. Mine are usually perfect at 45 minutes.

This one's for you Dijon lovers. Not just for fancy-ing up your hot dogs, we use this iconic condiment as the glue for panko breadcrumbs on a crispy chicken breast that's got some serious bite. Cool things off with a creamy Parmesan cauliflower mash and tender green beans.

- Before You Cook Turn oven on to 400 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Ingredient(s) used more than once: Dijon Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Cut cauliflower florets into bite-sized pieces, if necessary.Halve garlic cloves.Trim ends off green beans.Pat chicken breasts dry, and season both sides with a pinch of pepper. 2 Prepare the Cauliflower Mash Bring a medium pot with cauliflower, garlic, 11/2 cups water, and 1/4 tsp. salt to a boil over high heat. Reduce heat to medium-high and stir occasionally until water evaporates completely, 15-17 minutes. Roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 12-15 minutes.Rest chicken 3 minutes. While chicken rests, return pan used to sear chicken to medium-high heat and add cream. Bring to a simmer and cook until thickened, 2-3 minutes.Remove from burner and swirl in remaining Dijon.Plate dish as pictured on front of card, spooning sauce over chicken. Bon appétit!

CRISPY PAN-SEARED CHICKEN AND ZUCCHINI WITH OLIVES AND LEMON
This recipe will amaze the zucchini-averse and anyone who thinks they've had zukes every which way. Crosshatching and salting the zucchini for 10 minutes before cooking removes excess moisture and lets the seasoning penetrate all the way through. - Cut zucchini in half lengthwise. Using the tip of your knife, deeply score cut sides in a crosshatch pattern, spacing about 1/2" apart. Toss zucchini and 1 tsp. salt in a colander set over a bowl. Let sit 10 minutes, then pat dry with paper towels (discard any liquid in bowl).
- Meanwhile, coat a large cast-iron skillet with 1 Tbsp oil. Season chicken on all sides with 1/4 tsp. pepper and remaining 1/2 tsp. salt and arrange in cold skillet (skin side down) in a single layer. Heat over medium and cook, undisturbed, until skin is deep golden brown and chicken is almost cooked through, 10-12 minutes. Turn chicken and continue to cook just until cooked through and lightly browned underneath, about 5 minutes. Transfer to a platter (skin side up).
- Arrange zucchini (cut side down) in hot chicken fat in skillet. Increase heat to medium-high and cook until surfaces are charred, 6-8 minutes. Turn and continue to cook until skin side is browned, 2-3 minutes. Transfer to platter with chicken.
- Heat garlic and remaining 6 Tbsp. oil in a small saucepan over medium until garlic is sizzling and just barely beginning to brown, 3-4 minutes. Add chile and olives and cook, stirring occasionally, until chile starts to sizzle and brown slightly, 2-3 minutes. Remove from heat and stir in oregano and lemon zest.
- Spoon garlic oil over zucchini and chicken. Squeeze some lemon juice over and serve with additional wedges alongside.
