BLUEBERRY FRENCH TOAST
This recipe is so different and delicious! Easy to prepare the night before and bake in the morning. Perfect for Easter or Christmas brunch. This recipe is a family tradition. You may use either fresh or frozen blueberries for this dish.

Steps:
- Place half of the bread cubes in a lightly greased 9x13 inch baking pan. Sprinkle cream cheese on top of bread cubes. Top with 1 cup blueberries and remaining bread. In a large bowl, beat together eggs, milk and maple syrup. Pour egg mixture over bread. Cover pan and refrigerate overnight.
- The next morning, remove pan from refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
- Cover pan with aluminum foil and bake in preheated oven for 30 minutes. Uncover pan and bake for an additional 30 minutes, until golden brown and center is set.
- To make Sauce: In a saucepan, combine sugar and cornstarch, add water. Boil over medium heat for 3 minutes, stirring constantly. Stir in blueberries and reduce heat. Simmer 8 to 10 minutes, or until the berries have burst. Stir in butter until melted. Serve the sauce over squares of french toast.

CRISPY FRENCH TOAST FINGERS WITH BLUEBERRY MAPLE SAUCE
Steps:
- For the crispy French toast fingers: In a food processor, pulse the almonds until coarsely ground. Add the cornflakes, cinnamon, nutmeg, and salt and pulse until the cornflakes resemble the texture of oats. Transfer the cornflakes mixture to a shallow bowl.
- In a medium bowl, whisk together the eggs, milk, maple syrup, and vanilla until well combined.
- Spray a large nonstick skillet or griddle with cooking spray and preheat over medium heat. Working with one piece at a time, dip the bread into the egg mixture until completely moistened and coated but not falling apart, about 30 seconds each. Coat each slice of bread in the cornflakes mixture gently pressing it onto the bread. Place each slice of bread in the skillet and cook over medium-low heat, turning once, until the outside is golden brown and the center is warm, about 6 minutes total.
- For the blueberry maple sauce: In a medium saucepan, combine the blueberries, maple syrup, and orange juice. Bring the mixture to a gentle boil.
- Reduce the heat to medium low and simmer, stirring occasionally, for 2 minutes.
- Transfer the mixture to a blender, or use an immersion blender, and blend until almost smooth. Add more maple syrup to taste depending on the sweetness of the fruit.
- Serve the Crispy French Toast Fingers with the Blueberry Maple Sauce on the side for dipping, if desired.
EXTRA CRISPY FRENCH TOAST
You know how regular French Toast is made, and sometimes using too much syrup or egg batter may make the bread soggy - even when it's thoroughly cooked! This recipe makes the toast crispy, well, extra crispy that is :-D

Steps:
- Mix together the flour, sugar, vanilla, salt and cinnamon.
- Mix in the eggs and milk to the flour, sugar, vanilla, salt and cinnamon mixture.
- Heat a deep, large skillet, fill up with Canola Oil just enough to cover the Texas toast thick bread.
- If the oil smokes, your pan is too hot; turn down the heat.
- With tongs, dip the slice of bread into the batter for 30 to 45 seconds or more, depending on how crispy you want it!
- Let the oil drip off, as much as possible.
- To serve, put on plate, dust with powdered sugar. Serve with butter and hot syrup.

BLUEBERRY FRENCH TOAST SOUFFLE
This is the most impressive, yet easiest, brunch dish. You make it the night before, then just pop it in the oven. Everyone raves! I have used skim milk and reduced fat cream cheese with excellent results. I have also used raspberries and it was delicious. When berries are not in season, I use unsweetened frozen berries and it is perfect!!! Cooking time does NOT reflect the overnight stay in the refrigerator.

Steps:
- For the casserole: Arrange half of bread in a greased 9x13 casserole.
- Scatter cream cheese over bread and sprinkle with blueberries.
- Scatter remaining bread cubes.
- Whisk eggs, syrup and milk together and pour over bread and chill overnight covered.
- Preheat oven to 350.
- Bake covered for 30 minutes.
- Uncover and bake another 30 minutes.
- Serve with Blueberry Sauce.
- Blueberry Sauce: Stir together sugar cornstarch and water and cook over medium heat for 5 minutes, stirring occasionally.
- Add berries and simmer for 10 minutes or so until berries start to burst a bit and it thickens up.
- Stir in butter until melted.
- Serve with the casserole.

We've all heard of blueberry pancakes but how about blueberry French toast? A simple stovetop syrup of blueberries, butter, and maple syrup make a delectable topping for a breakfast of warm French toast.

- Preheat oven to 250 degrees.
- In a large shallow dish, whisk together eggs, milk, sugar, liqueur, and a large pinch of salt. Add 4 slices of bread in a single layer, turning to coat, soaking about 1 minute per side.
- Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Lift bread from egg mixture, allowing excess to drain off. Cook, undisturbed, 5 to 6 minutes. Flip and continue cooking until golden, 4 to 5 minutes more. Transfer to a baking sheet lined with a wire rack. Soak and cook remaining slices of bread. Place French toast in oven to keep warm. Reserve skillet.
- Return skillet to medium-high heat; melt 4 tablespoons of butter. Add blueberries, maple syrup, lemon juice, and a pinch of salt. Boil until thickened slightly and berries start to burst, about 5 minutes. Serve warm with French toast.
FRENCH TOAST FINGERS
Steps:
- In a shallow bowl, whisk together eggs, milk and salt. Spread preserves on 4 slices of bread; top with remaining bread. Trim crusts; cut each sandwich into 3 strips. , Preheat griddle over medium heat. Lightly grease griddle. Dip both sides of strips in egg mixture; place on griddle. Cook bread strips until golden brown, about 2 minutes per side. If desired, cut into squares and alternately thread onto skewers with halved strawberries. If desired, dust with confectioners' sugar.
