GRILLED PORK BELLY TACOS

1/4 cup soy sauce
2 tablespoons cider vinegar
1 tablespoon adobo sauce
1 tablespoon honey
2 teaspoons tamarind paste
1/2 teaspoon ground cumin
2 scallions, sliced
1 pound slab pork belly, sliced into 1/4-inch thick pieces
Oil, for oiling the grill
Corn tortillas, warmed
Fresh cilantro leaves, for serving
Lime wedges, for serving

Steps:

  • For the marinade and pork: In a shallow baking dish, whisk together the soy sauce, vinegar, adobo sauce, honey, tamarind paste, cumin and scallions. Add the pork, turning to coat on all sides. Cover and let marinate at room temperature for 1 to 2 hours.
  • Prepare a charcoal or gas grill for direct high-heat grilling. Lightly oil the grill grates. Remove the pork belly from the marinade and place on the grill. Cook for 2 minutes, then flip and cook for 2 minutes on the other side.
  • For the tacos: Serve the pork with warm tortillas, cilantro and lime wedges for building tacos.

Steps:

  • This recipe recommends the pork belly to be cooked at 500F/260C for fifteen minutes, then 250F/120C for four hours.
  • Once cooked, slice into one inch thick slices and begin to build your tacos.
  • Place a few slices of pork belly on your flatbread, top with kimchi, sriracha mayonnaise and fresh coriander. Enjoy!

  • Preheat the oven to 250°. In a large ovenproof saucepan, combine all of the ingredients and bring to a simmer over moderate heat. Cover, transfer to the oven and braise the pork until very tender, about 3 hours. Transfer the pork to a plate to cool slightly; discard the braising liquid.
  • In a large cast-iron skillet, heat the canola oil. Add the pork belly, skin side down, and weigh it down with another heavy skillet. Cook over moderately low heat until golden and crisp, about 10 minutes. Transfer the pork, skin side up, to a cutting board and let cool slightly. Slice across the grain 1/4 inch thick, then halve the slices crosswise. Top each tortilla with a few pieces of pork belly and a little pico de gallo and serve warm.
