- Preheat the oven to 450 degrees Fahrenheit.
- Slice each okra pod in half. Place the okra in a medium bowl and mix with the olive oil, garlic powder, paprika, and kosher salt.
- Line a baking sheet with parchment paper. Place the pods face-down on the baking sheet in an even layer. Roast for about 15 minutes until tender and lightly crisped at the edges. Serve immediately (best eaten right out of the oven, but you can refrigerate leftovers if desired).

CRUNCHY OVEN-FRIED OKRA

- Preheat the oven to 425 degrees. Combine the cornmeal, panko, salt, pepper, and Parmesan cheese in a gallon-size ziplock bag.
- In a separate bowl, gently toss the okra with the beaten eggs until evenly coated.
- Pour oil onto a rimmed baking sheet (15x10x1) and place in the preheated oven for just a few minutes to warm up the oil--be careful to not let it start to smoke.
- In the meantime, add the wet okra a little at a time to the bag and shake until coated. If needed, you may add additional cornmeal and panko breadcrumbs -- if the okra isn't coated as much as you like. Carefully add the okra to the hot baking sheet.
- Bake for 15-20 minutes, or until tender, turning the okra halfway through baking. To get a nice golden brown, increase oven heat to broil and watch carefully, stirring as needed.

ROASTED OKRA
As a good Southern gardener, I find myself bringing in okra by the armload nearly every other day. Stewed okra is great, but for a little variety, we like to roast ours from time to time. This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

- Mix all the ingredients together making sure the okra is well coated.
- Add the okra to a baking tray making sure the pieces are not touching each other.
