CRISPY SMASHED FINGERLING POTATOES
Steps:
- Bring the potatoes to a boil in salted water, then reduce to a simmer until they can be pierced with a paring knife, but are not fully cooked; about 15-20 minutes.
- Carefully transfer the hot potatoes to a cutting board and let them cool enough to handle and dry off any excess water.
- Smash the potatoes on a cutting board with the back of a spatula to slightly flatten them.
- Heat enough canola oil to cover the bottom of a 12" cast iron skillet over medium-high heat just until it starts to shimmer. A good amount of oil is required to crisp the potatoes without burning them.
- Carefully place the par-cooked potatoes into the hot skillet and cook on each side until golden brown and crispy.
- Remove the potatoes from the skillet with a slotted spatula, then immediately season well with kosher salt & freshly ground pepper, and toss with fresh herbs.

- Place scrubbed and dried potatoes in a dutch oven or large stock pot and fill with water until covered by about 1 inch. Sprinkle in 1 tbsp of salt and bring pot to a boil.
- Continue cooking until potatoes are just fork tender, about 15-20 minutes.
- Drain the potatoes in a colander and let sit until they are cool enough to handle.
- Spread out a large piece of parchment paper on the counter and use another piece of parchment or a flat bottom glass to gently smash the potatoes until they are about 1/3 to 1/2 inch thick, being careful not to crush them to the point of falling apart.
- Let any remaining steam escape from the smashed potatoes for about 5 minutes.
- Meanwhile, preheat the oven to 425 degrees and pour avocado oil directly onto the sheet pan. Place the pan inside the oven and let the oil heat up until it's shimmering.
- Carefully remove the pan with the hot oil from the oven and place on a heat safe surface. Using a spatula, carefully transfer the cooled, smashed potatoes from the parchment to the baking sheet. You may need to use two sheets depending on how many potatoes you have. Do not overcrowd or they will not reach maximum crispiness!
- Return the baking sheet back to the oven and roast the potatoes for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Sprinkle them with flaky salt and plenty of fresh chives and serve hot.

- Preheat the oven to 425°F.
- Wash the fingerling potatoes well to get rid of any dirt on the outsides.
- Place the potatoes in a large pot, add a generous pinch of salt, and cover with at least 1 inch of water. Bring the pot to a boil on the stove over medium-high heat, and let the potatoes boil for about 15 minutes, until they can easily be pierced with a fork.
- Use a slotted spoon to remove the potatoes to a large plate or cutting board lined with paper towels. Use a large spoon or spatula to gently press down on each potato, smashing them into little patties. Aim for about 1/2 - 3/4-inch - you don't want to smash them too thin or you won't get the fluffy insides.
- Drizzle about 1 tablespoon of olive oil onto a large baking sheet and spread evenly to coat the pan. Place the potatoes in a single layer, giving them some room so they will evenly crisp up. Drizzle with the remaining olive oil, thyme, salt, and pepper.
- Bake the potatoes for 15 minutes, flip, then bake for an additional 10-15 minutes until crispy and golden brown.
- Optional: to make the garlic yogurt dipping sauce, mix together all ingredients in a small bowl.

- Microwave the potatoes for the time instructed on the package, minus 2 minutes. Allow to cool slightly to handle, then cut the longer potatoes in half, leaving the smaller potatoes intact.
- In a large pan on medium-high heat, add the oil, butter and rosemary stalks. Using the bottom of a dry cup measure or something similar, gently smash each potato portion to about 1/4 inch thick and scrape off with a butter knife. Slide a smashed potato right into the bubbling fat and repeat with the remaining potatoes. Cook until the potatoes are golden and crisp on one side, about 3 minutes, then flip and continue to cook, adding more butter if needed, until golden on the other side, about another 3 minutes. While cooking, mind the rosemary stalks and flip and turn them as well. Once they are lightly crisped, remove them to a drying rack above a baking sheet along with any crisped potatoes. Season gently with salt and pepper.
- Crinkle the rosemary leaves with your fingers or chop gently and add to a large metal bowl with the parsley. Coat the inside of the bowl with the garlic. Transfer the potatoes to the bowl and toss gently until coated. Serve warm.

- Lightly scrub potatoes. In pot of boiling, salted water, cook potatoes until tender, about 10 minutes. Drain and let cool.
- On cutting board, and using bottom of heavy saucepan, gently smash each potato until slightly flattened but not falling apart. Transfer to baking sheet. (Make ahead, Cover and refrigerate for up to 24 hours).

CRISPY FINGERLING POTATOES

- Put the potatoes into a large pot and cover them with water. Add a big pinch of salt, then cover, and put over high heat. Bring to a boil, uncover, and cook just until the potatoes start to soften but are not cooked all the way through, about 10 minutes. Drain the potatoes and return them to the warm pot. Shake the potatoes around to roughen up the sides and to let them dry out. Put them into a bowl.
- Preheat the oven to 425 degrees F. Put a baking sheet in the oven to preheat.
- Add the olive oil, grill seasoning, paprika and pepper, to taste, to the potatoes and toss to coat. Spread the potatoes out onto the preheated baking sheet and roast them until they are cooked through and crispy, about 20 to 25 minutes, flipping the potatoes once halfway through the cooking time. Remove the potatoes from the oven to a serving bowl and serve.
SMASHED FINGERLING POTATOES
Steps:
- Slip the potatoes into a large pot of cold water, and bring to a boil. Add a few large pinches of salt, and simmer until just tender, about 10 minutes. Drain, and let cool for about 20 minutes.
- Once the potatoes are cool enough to handle, place them on a sheet tray and gently press them down to flatten. (It helps to use the edge of a large clean chef's knife, pressing the potatoes down flat one at a time, until they flatten to a 1 1/2-inch thickness.) Drizzle on the olive oil, and add the garlic, rosemary, salt, and pepper. Gently toss until the potatoes are well coated.
- Heat your grill to medium heat. Remove the potatoes from the sheet tray, and grill them until they are golden brown and crisp, about 4 or 5 minutes per side.
- Remove the crispy potatoes to a platter. Give them a taste, and add more salt and freshly ground black pepper if necessary.
- NOTE
- The trick here is to not overboil your potatoes. You don't want the potatoes to crumble and fall through your grill grates!

- Add the potatoes to a large pot and cover with cool water by at least 1 inch. Generously season the water with salt and stir in the baking soda. Bring the water to a boil and cook the potatoes for 18-20 minutes, until a fork can be easily inserted into a potato, but they are not so soft that they fall apart when pierced. Drain the potatoes and let cool until safe to handle, about 20 minutes. Transfer the potatoes to an airtight container and refrigerate overnight for best results.
- Preheat the oven to 425°F (220°C).
- Melt together the butter and 3 tablespoons of olive oil in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic, and salt. Cook for 30-60 seconds, until fragrant, then remove the pot from the heat.
- On a clean surface, evenly press down on each potato using a flat-bottomed 1-cup measure or plate until they are about ¼ inch thick.
- Brush 2 large baking sheets with about 2 teaspoons of olive oil each. Arrange the smashed potatoes on the baking sheets in a single layer, spacing evenly. Using a pastry brush or small spoon, top each potato with some of the butter-herb mixture. Season with the black pepper.
- Roast the potatoes for 35-38 minutes, gently flipping once, until golden brown and crispy.
- While the potatoes are roasting, make the whipped feta dip: Add the feta, crème fraîche, olive oil, lemon zest, lemon juice, and salt to a food processor. Process until completely smooth, about 2 minutes, scraping down the sides of the bowl occasionally. Transfer the dip to a small bowl and top with a drizzle of olive oil, black pepper, lemon zest, and minced rosemary.
- Arrange the potatoes on a platter and top with any remaining butter-herb mixture, if desired. Serve with the whipped feta dip.

- Wash/scrub the fingerling potatoes and boil, unpeeled, for 12 minutes. Drain and let cool.
- Take each fingerling between your hands and squash it between your palms. The idea is to beak the skin and flatten the potato, but not to crush it completely; it should still stay intact as much as possible.
- Heat a skillet with ½" to 1" of oil on high heat. When the oil is hot, about 350F, deep-fry each fingerling, turning them over midway when each side is browned. Drain on paper towels.
- In another pan, melt butter and add minced garlic and parsley. Stir briefly over medium heat to release flavors, then toss fingerling potatoes into this mixture.
