MAHI MAHI WITH HONEY MUSTARD TARRAGON SAUCE
Mahi Mahi filets are seared and served with a honey mustard, Dijon, tarragon sauce. Easy recipe for a quick dinner.

Steps:
- Heat a fry pan over medium high heat until hot. Add oil. When oil is hot, add the Mahi Mahi filets and sear about 2 minutes per side.
- In the meantime in a small saucepan, combine the honey mustard, the Dijon, drained capers and a generous sprinkle of dried tarragon. Heat on low until warmed and combined.
- To serve, place filets on a warm plate and drizzle with the honey mustard sauce. Serve with your favorite sides.

Steps:
- Preheat oven to 425°F. Prepare foil lined baking sheet and lightly grease with olive oil ( Please note: If baking in a convection oven/ convection setting reduce heat to 400°F)
- Rinse fish and pat dry. Place fillets on baking sheet skin side down.
- Squeeze a little of the lemon juice on top of fish.
- Mix the remaining lemon juice with mayonnaise, honey, finely chopped onions, garlic powder, cayenne and black pepper in small bowl. Spread Mixture on fish. Sprinkle with Panko breadcrumbs
- Bake at 425°F for 18-20 minutes.
- Serve with rice and fresh veggies. Sauteed Kale makes a great side with this.

BAKED MAHI MAHI
I have used this method for fresh albacore, yellowtail, and dorado (mahi mahi). I am sure it would work for any firm white fish. Don't fear the mayonnaise! I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Stir mayonnaise, soy sauce, and garlic together in a bowl.
- Place mahi mahi in a baking dish. Spoon mayonnaise mixture over the fish, then turn to coat. Sprinkle saltines over top.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.
