Crispy tenderstem broccoli with lemon and almonds image

This roasted tenderstem broccoli with lemon and sliced almonds is a flavorful but healthy side dish that comes together in less than 20 minutes.

1 Bunch broccolini
1 tbsp Olive oil
1/4 t. Kosher salt
1/2 Lemon
1 1/2 tbsp Sliced almonds

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Snip a 1/4 inch off the broccolini stems and then carefully spread them apart on a sheet pan. If the stems are very thick, half them lengthwise. Drizzle 1 tbsp of olive oil and sprinkle 1/4 t. kosher salt over the broccolini.
  • Carefully massage the oil into the broccolini stems and florets - tossing them around gently.
  • Place them evenly spread apart on the sheet pan and roast for 12 minutes. Carefully remove the pan and sprinkle sliced almonds on top.
  • Roast 5 more minutes until almonds are brown and nutty. Remove from the oven and squeeze fresh lemon juice on the broccolini. Serve immediately.

16 ounces (450 g) tenderstem broccoli (broccolini)
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425°F/220°C. For easy cleanup: line a large baking sheet with foil or parchment paper, if desired.
  • Place broccoli on baking sheet. Drizzle oil over the top. Toss until each floret has been lightly coated in oil. Spread out in an even layer across the baking sheet. Sprinkle with salt and pepper.
  • Place in the middle of the oven and bake for 15 minutes until the edges have slightly charred.
  • Season with additional salt and pepper if desired and serve immediately.

  • Place broccoli into baking dish and pour in water. Cover tightly with plastic wrap. Cook at 100 percent for 8 minutes. In a 1 cup glass measuring cup, melt butter with lemon juice, almonds and salt and pepper. Cook for 1 minute and 30 seconds.
