TROUT IN ALMONDS SAUCE - CROATIAN WAY
This is northern Croatian recipe. In Mediterranean part they put garlic on trout (they put garlic on everything) but garlic as a very strong spice damages the delicate trout taste. Almond sauce is my invention, but as you can see, there is not much to invent. This gentle flavour combines very nicely.

Steps:
- In order to prevent trout's to be slimy, after you clean them, cover them with salt and leave them for 1 hour or to become white. (Salt extracts liquid).
- Wipe trout's with paper towel and cover them with corn flour.
- Fry trout's on butter (add some oil to prevent butter burn).
- When they are done on one side (if you have space in a pot) add cleaned almonds (white), or you can remove all trout's aside to hot place and than fry almonds until get brow.
- Add brandy, flambé it and add cream and mix well.
- Pour the sauce over trout's.
- Serve with cooked potato.

BEST CAROLINA BBQ MEAT SAUCE
I can't take all the credit for this stuff. I have had to search, and snoop and experiment to get it right. (Thanks Big Daddy's!) But I've had barbeque in some of the best little places in the Carolina's, and this stuff rules there! Fantastic on pork! Or try brushing some on chicken as it finishes off the grill! Use fresh ground peppers for the best flavor. This will keep in fridge for a couple of weeks.

- In a heavy non-reactive saucepan, stir together the mustard, brown sugar, vinegar, and beer. Season with chili powder and black, white, and cayenne peppers. Bring to a simmer over medium-low heat, and cook for about 20 minutes. DO NOT BOIL, or you will scorch the sugar and peppers.
- Mix in the Worcestershire sauce, butter, and liquid smoke. Simmer for another 15 to 20 minutes. Taste, and season with hot sauce to your liking. Pour into an airtight jar, and refrigerate for overnight to allow flavors to blend. The vinegar taste may be a little strong until the sauce completely cools.

Lamb liver is usually regarded as meat surplus or just trash. But whoever tries lamb liver will change this unjust bias. (You can try this meal with pork or veal liver, but it is not so good). This is very simple BBQ recipe.

- Cut liver into 1 cm thick stakes, removing small veins. Soak liver in milk for 1 hour.
- Drain the milk dry with paper towel, soak in oil and put on fire. Livers are done when they are rose inside.
- Salt after otherwise livers will be hard. Serve with fresh cut onion rings.
- At the end, just pour over some olive oil over the livers and add some minced garlic.

- Cut chickens into pieces, not too big.

- Take twice grounded beef. Very finely mince garlic and onion and put them into meat. Season it with salt, pepper and paprika. Add water. Mix well with hand and let it stay in refrigerator for 2-3 hours.
- Make burgers and put them on fire. They must be rose inside, do not overdo it.
- Serve with fresh salted onion and bread.
- Grate goat cheese and sprinkle over warm pljeskavica and serve.
