SLOW COOKER OR INSTANT POT LEMON ARTICHOKE CHICKEN



Slow Cooker or Instant Pot Lemon Artichoke Chicken image

Number Of Ingredients 13

1.5 lbs boneless, skinless chicken breast or thighs
1 cup chicken broth or white wine
Juice of 1 large lemon (about 1/4 cup)
2 tsp garam masala
1 tsp turmeric
1 clove garlic (crushed)
7 oz can hearts of palm (drained)
7 oz jar artichoke hearts (drained)
3 twigs of fresh thyme
2 tsp lemon pepper
Slices of 1 lemon
3 tbsp arrowroot powder*
2 tbsp water

Steps:

  • Salt and pepper both sides of chicken. Place on the bottom of the slow cooker.
  • In a small bowl, mix together chicken broth (or wine), lemon juice, garam masala, garlic, and turmeric. Pour on top of the chicken.
  • Cover chicken with hearts of palm, artichoke hearts, fresh thyme, slices of lemon, and sprinkle with lemon pepper. Cook for 4 hours on low.
  • At 4 hours, mix together arrowroot powder with 2 tbsp water. Add arrowroot powder with water and whisk. Then add mixture to the slow cooker, and continue to cook for another 30 minutes or until thickened. Remove thyme sprig (leaves should have fallen off into the dish).
  • Serve chicken on top of rice, pasta, or with vegetables.
  • Salt and pepper both sides of your chicken. Place in the bottom of your Instant Pot.
  • In a small bowl, mix together chicken broth (or wine), lemon juice, garam masala, garlic, and turmeric. Pour on top of the chicken.
  • Cover chicken with hearts of palm, artichoke hearts, fresh thyme, slices of lemon, and sprinkle with lemon pepper. Secure the lid, ensuring the valve is sealed. Select the manual (or pressure button on some models), and cook on high pressure for 9 minutes.
  • Use a quick release, ensuring the steam is completely released before opening the lid. Whisk together arrowroot with 2 tbsp of water, and add to the sauce. Continue to stir until thickened. Remove thyme sprig.
  • Serve chicken on top of rice, pasta, or with vegetables.

2 ½ cups uncooked white rice
2 cups sliced carrots
1 pinch chopped fresh parsley, or to taste

Steps:

  • Turn a slow cooker to High. Combine chicken broth, lemon juice, garlic, garlic powder, and cayenne in the bottom of the cooker until mixture heats through, about 5 minutes.
  • In the meantime, heat oil in a skillet over medium-high heat. Season both sides of chicken thighs with salt and pepper and place in the hot skillet. Cook, turning occasionally, until crisp on both sides, 5 to 7 minutes total. Remove chicken from the pan and set aside.
  • Turn slow cooker to Low and add rice, carrots, and chicken. Cover and cook until chicken is no longer pink at the bone and the juices run clear, about 4 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Steps:

  • Place the chicken, salt, pepper, oregano, rosemary, and thyme into the slow cooker and mix together with your hands.
  • Add the garlic, lemon, and water.
  • Place the lid on and cook on high for 3 hours.
  • Remove the chicken, lemon, and garlic, and stir in the chicken stock and cornflour mix.
  • Stir until you reach your desired consistency for chicken gravy.

¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.

1 lb boneless skinless chicken breast (Frozen)
1 (16 ounce) package frozen artichoke hearts
2 fresh portabella mushrooms
10 garlic cloves
1/4 cup fresh lemon juice
2 cups low sodium chicken broth
1 (8 ounce) package hollandaise sauce mix
1 teaspoon rosemary
1 pinch sea salt
2 teaspoons fresh ground black pepper
1/2 cup light sour cream

Steps:

  • Put chicken breasts in bottom of Crock Pot.
  • Put frozen Artichoke hearts on top of chicken. Chop Portabello's into cubes and add. Mince garlic and add.
  • In a bowl pour in the chicken stock. Add envelope of Powdered Hollandaise Sauce and whisk to combine. Add juice of 1 lemon, Rosemary and Salt and pepper. Add to crock pot.
  • Cover and cook on low 6-8 hours or high 4-6 hours.
  • When done remove chicken and Veggies with a slotted spoon onto plate and cover with foil to keep warm. Turn to high and whisk sour cream into juices in crock pot. Let simmer 15 minutes and serve.

1 whole chicken, based on the size of your slow cooker - a 1.3kg chicken should just about fit into a 3.5L slow cooker - while a 6.5L would probably fit a 2kg chicken
4 lemons
10 cloves garlic, 8 whole and 2 halved
4 sprigs fresh rosemary
salt
pepper

Steps:

  • Remove any giblets etc. from the cavity of the chicken, sometimes in a small bag.
  • Stuff chicken with 1 sprig of rosemary, 1 lemon (quartered) and 4 cloves garlic.
  • Season all sides of the chicken with salt and pepper.
  • Remove both ends of a lemon, cut in half to create very thick slices.
  • Line the bottom of the slow cooker with 4 lemon slices, 4 whole garlic cloves and a sprig of rosemary.
  • Put the chicken in the slow cooker.
  • Cut 2 garlic cloves in half and put all four pieces on top of the chicken along with the 2 remaining lemon slices.
  • Garnish with 1-2 more sprigs of rosemary. Put the lid on the slow cooker and set to high for 4 hours.
  • Place cooked chicken under the grill (broil) for 10 minutes to crisp the skin (optional).
  • Allow chicken to rest for 10 minutes before carving and serving. Leftover juices in the slow cooker are mostly lemon juice with a bit of chicken fat and can be used sparingly as a strongly flavoured sauce.
  • Enjoy!

Steps:

  • Rinse chicken and dry on paper towels.
  • In a small bowl combine the oregano, salt, and pepper; sprinkle on chicken and pat inches.
  • In a large skillet brown the chicken in the oil; transfer to crockpot when browned.
  • Add water, lemon juice, and garlic to the skillet; bring to a boil and pour over chicken.
  • Cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours.
