1/4 cup butter, cubed
2 tablespoons chopped chipotle peppers in adobo sauce
1/4 cup all-purpose flour
1/8 teaspoon pepper
2-1/2 cups 2% milk
1-1/2 cups shredded Colby-Monterey Jack cheese
Hot cooked potatoes or eggs

Steps:

  • In a small saucepan, melt butter over medium heat. Add chipotle peppers; cook and stir for 2 minutes. Stir in flour and pepper until blended; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in cheese until melted. Serve over potatoes.

1 1/2 pounds ground beef, 80/20
1/4 teaspoon dried oregano, preferably Mexican
1/4 teaspoon kosher salt
1/8 teaspoon garlic powder
Freshly ground black pepper
1/2 cup sour cream
3 chipotle chiles in adobo sauce, finely chopped, plus 3 tablespoons adobo sauce
1/3 cup finely chopped white onion
1 cup loosely packed fresh cilantro leaves, finely chopped
1/4 teaspoon kosher salt
Freshly ground black pepper
4 whole-wheat buns, split
2 tablespoons unsalted butter, softened
4 slices Cheddar
1 avocado, thinly sliced
Tomato slices, for topping
Green-leaf lettuce leaves, for topping
Red onion slices, for topping

Steps:

  • To make the patties: Combine the beef, oregano, salt, garlic powder, and pepper to taste in a medium bowl and mix well. Shape into patties a little more than 1/2-inch thick, place on a plate, and refrigerate for at least 1 hour.
  • To make the sauce: Stir together the sour cream, chipotles, adobo sauce, onions, cilantro, salt, and pepper to taste in a small bowl. Set aside.
  • To make the burgers: Oil a grill rack and preheat the grill on high for 5 minutes. Spread the bun faces lightly with the butter. Grill the burgers over direct heat on medium-high (on a charcoal grill, set the burgers just outside the center of the grill rack), with the grill covered, for 4 minutes. Flip the burgers, top each with a slice of Cheddar, and grill, covered, 4 minutes more. Remove the burgers to a plate.
  • Grill the buns, buttered-side down, over indirect heat, until golden, about 2 minutes. Set a burger on each bun bottom and top with avocado, tomato, lettuce, red onion and a dab of chipotle sauce. Top with the remaining bun halves and serve.

2 tablespoons vegetable oil
1/2 yellow onion, peeled and roughly chopped
1 green bell pepper, seeded and coarsely chopped
1 jalapeno pepper, seeded and chopped
3 garlic cloves, crushed
2 teaspoons ground cumin
1 teaspoon kosher salt
2 1/2 teaspoons whole black peppercorns
2 cups whole milk
1 tablespoon tomato paste
1 teaspoon red wine vinegar
2 cups cheddar cheese, grated
2 cups Velveeta cheese, grated
1/4 cup tomatillo salsa
1 teaspoon lime juice, from one lime
1/4 teaspoon dried oregano
1 (13 ounce) bag tortilla chips, for serving

Steps:

  • In a large saucepan over medium, heat oil. Add onion, bell pepper, garlic, cumin, salt, and black pepper. Cook, stirring occasionally until onion has softened about 5 to 7 minutes. Slowly whisk in the milk, tomato paste, and vinegar, until well combined; allow to steep for 20 minutes.
  • In a large heatproof bowl, combine grated cheeses, tomatillo salsa, lime juice and oregano. Place a fine mesh strainer over the bowl containing the cheese. Strain milk mixture into the bowl. Discard solids from strainer.
  • Using a wooden spoon stir cheese mixture until smooth and saucy. If cheese doesn't melt completely, set bowl over a pot of simmering water and stir until cheese melts and mixture comes together. Transfer to a bowl and serve immediately.

2 tablespoons unsalted butter
1/2 cup onion, minced
1 teaspoon jalapeno, minced
1 teaspoon garlic, minced
1/4 cup red bell pepper, minced
1/2 teaspoon fresh oregano, finely chopped
1/2 teaspoon salt
1/4 teaspoon ground cumin
1 teaspoon chipotle chile in adobo, minced
1 cup heavy cream
4 ounces cream cheese
1/2 cup grated monterey jack cheese

Steps:

  • In a saucepan over medium heat, melt the butter.
  • Add onion and saute until translucent.
  • Add jalapeno, garlic, and red pepper and saute until soft.
  • Add oregano, salt, cumin and chipotle.
  • Decrease heat to low, add cream and cream cheese.
  • Simmer for 5 to 10 minutes.
  • Remove pan from heat and stir in the jack cheese.
  • Stir until melted and well incorporated.
  • Keep warm on lowest heat.

1 small white onion, peeled, quartered
5 large garlic cloves, unpeeled
4 pounds tomatoes (about 15 medium)
5 canned chipotle chiles
2 tablespoons canola oil
1 teaspoon fine sea salt

Steps:

  • Line heavy large skillet with foil; heat over medium heat. Place onion and garlic in skillet; cook until onion softens and blackens in spots, turning often with tongs, about 15 minutes. Transfer onion and garlic to medium bowl. Peel garlic.
  • Place same foil-lined skillet over medium-high heat. Working in 2 batches, cook tomatoes in skillet until tender and skins blister and blacken, turning occasionally, about 20 minutes. Transfer to large bowl; cool and peel. Working in batches, puree tomatoes, onion, garlic, and chiles in blender until smooth.
  • Heat oil in heavy large deep skillet over medium-high heat. Carefully add tomato puree to skillet (mixture will bubble vigorously). Stir in salt. Reduce heat; simmer gently until sauce thickens slightly, stirring often, about 15 minutes.
