Slow-Cooker Chicken Cordon Bleu Pasta image

This slow-cooker dish is comfort food defined. We took classic chicken cordon bleu and turned it into a seriously delicious pasta casserole. The creamy Alfredo pasta sauce, cheesy ham and chicken, and crispy bread crumb topping will hit the spot on a cold day. It just might be your favorite new dish this winter.

2 cups Progresso™ chicken broth (from 32-oz container)
1 jar (15 oz) Alfredo pasta sauce
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
1 package (16 oz) boneless skinless chicken breasts, cut into 1-inch pieces
8 oz uncooked penne pasta (about 2 1/4 cups)
3/4 cup coarsely chopped deli-sliced ham (about 4 oz)
1 cup shredded Swiss cheese (4 oz)
1 tablespoon butter
1/2 cup Progresso™ Panko Italian style crispy bread crumbs

Steps:

  • Spray 5-quart slow cooker with cooking spray. In slow cooker, mix broth, Alfredo sauce, Dijon mustard and pepper. Stir in chicken. Cover; cook on High heat setting 1 1/2 to 2 hours or until chicken is cooked through (at least 165°F).
  • Stir pasta and ham into slow cooker. Cover; cook on High heat setting 25 to 30 minutes or until pasta is tender, stirring twice.
  • Stir in cheese until cheese melts. Let stand covered 5 to 10 minutes or until slightly thickened. Stir mixture.
  • In 8-inch skillet, melt butter over medium heat. Add bread crumbs; cook 3 to 5 minutes, stirring frequently, until toasted. Top pasta with bread crumb mixture before serving.

1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
4 ounces sliced ham
4 ounces sliced Swiss cheese
1 (8 ounce) package herbed dry bread stuffing mix
¼ cup butter, melted

Steps:

  • Mix together the cream of chicken soup and milk in a small bowl. Pour enough of the soup into a slow cooker to cover the bottom. Layer chicken breasts over the sauce. Cover with slices of ham and then Swiss cheese. Pour the remaining soup over the layers, stirring a little to distribute between layers. Sprinkle the stuffing on top, and drizzle butter over stuffing. Cover, and cook on Low for 4 to 6 hours, or 2 to 3 hours on High.

6 chicken breasts (pounded to 1/4 inch thickness)
6 slices swiss cheese
6 slices shaved deli ham
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup milk
1/2 cup Italian seasoned breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • Place one slice of cheese and ham on each chicken breast.
  • Roll up and secure with toothpick, place in bottom of crock pot.
  • Mix soup and milk.
  • Pour over chicken.
  • Stir seasonings into breadcrumbs.
  • Sprinkle chicken with breadcrumbs.
  • Cook on low for 6-7 hours.
  • Serve over your favorite pasta or rice.

1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup milk or 1/4 cup white wine
3 tablespoons milk (optional)
1 tablespoon sherry wine (optional)
1/4 teaspoon seasoned pepper (optional)

Steps:

  • Put ham and cheese on chicken.
  • Roll up and secure with a toothpick.

1 c croutons, crushed
1/4 c butter, melted

Steps:

  • ◾In a small bowl mix together the cream of chicken soup and milk. ◾Pour enough of the soup mixture into your crock-pot to cover the bottom. ◾Place chicken breasts in the bottom of the crock-pot and drizzle with additional sauce. (I had some leftover.) ◾Fold slices of ham in half and put two slices on top of each chicken breast. ◾Cover the ham with the shredded Swiss. ◾Sprinkle the crushed croutons over the top. ◾Drizzle with melted butter. ◾Cover, and cook on low heat for 4-6 hours, or on high heat for 2-3 hours. Be sure your thermometer reads 160º when stuck in the thickest part of the chicken breast.
