PULLED PORK (CROCK POT)
I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

Steps:
- Slice one onion and place in crock pot.
- Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
- Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
- Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
- Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
- TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
- Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
- Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
- Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
- Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

SOUTHERN YANK PULLED PORK BBQ
I'm a Yank. This is a Southern dish. We meet in the middle. Pulled pork shoulder slow-cooked in spices and sauces, great for a low-stress day, potluck, or any get-together. Put it on before work, ready when you get home! Fantastic over a bun, johnnycake, or just by itself.

CROCK POT PULLED PORK BBQ (EASTERN NC STYLE)
Everybody has a favorite type of barbecue. Eastern NC BBQ has a pure salty savoryness without any ketchup base. The following recipe is awesome served on large sandwich buns with potato chips. And it's easy--a great recipe to set in the crock pot and come home to an almost-finished meal. For cost savings, I often buy a large pork roast when it goes on sale and just cut in in two halves; use one for the recipe. Pick a nice lean cut; not a Boston butt. Even better as a leftover!!

CROCK POT SOUTHERN BBQ PULLED PORK
I make this about every couple of weeks. My kids love this, and so does my brother. My husband, who is not crazy about BBQ, even likes this dish... he can't help it, he is from up north and his family doesn't do BBQ. It has taken me a good 9 years to get him to eat a lot of our Southern cuisine, lol

Steps:
- Combine salt, pepper, garlic and onion powders, paprika, brown sugar, and poultry seasoning in a small bowl. This will be the dry rub for your roast.
- Make sure your kitchen sink is very clean. Wash your pork roast under cold water. While still in the sink (this makes for less mess), sprinkle your dry rub all over the roast, massaging it in as you go.
- Pour the 1/2 cup of water into Crock Pot, then place your roast into your Crock Pot. Let it cook on high for about 5 hours or medium for 8 hours, if you are not going to be home.
- Now for the BBQ sauce. In a medium saucepan, combine your mustard, butter, apple cider vinegar, white and brown sugars, and black pepper. Cook on med-low heat for about 5-10 minutes.
- Remove from heat and let it cool. Note: this sauce can be adjusted to your liking, you can use more or less of the vinegar and sugars according to your tastes.
- When the roast is done to the point of falling apart, remove it from Crock Pot.
- Take 2 forks and pull all the meat apart, so it looks shredded. Remove any bone or fat that may be left on the meat. Pour the juice from the roast into a bowl and use it to make rice or discard it.
- Place back into the Crock Pot. Pour as much sauce as you like over the meat. Mix thoroughly and cook on high for another 30 minutes. Serve with rice made from roast drippings or on buns for an awesome BBQ sandwich.
DELICIOUS CROCK POT BARBECUED PULLED PORK
I have made this a number of times over the years, a long marinating time and slow cooking is the secret here! this is an easy recipe with wonderful results! --- you must plan ahead the roast needs to marinate for 24 hours or even up to 3 days --- if you are a garlic lover cut slits in the roast and stuff with whole garlic cloves if desired, If you have plastic gloves then use them to rub the spices into the meat if not be careful the cayenne is very hot --- you will love this!

- Put roast in slow cooker and sprinkle salt and pepper over. Pour cider vinegar over. Cover with lid and cook on low for twelve hours (I cook it overnight). Remove pork roast and shred with forks (this will be very easy). Drain juices from slow cooker, reserving two cups of liquid. Return pork to slow cooker. To the reserved liquid add: Brown sugar, hot sauce, and crushed pepper flakes. Stir well. Pour over shredded pork and place lid back on. Place on low or warm setting until ready to serve. Can be made ahead of time and refrigerated, reheating in the microwave.
- *This sauce is not spicy. If you prefer a spicier sauce double the hot sauce and crushed red pepper flakes. Add more to taste.
