Classic Spaghetti Bolognese made in the slow cooker is extra rich and luscious, with beef that literally melts in your mouth!

2 tablespoons olive oil
4 garlic cloves (, crushed)
2 onions (diced)
2 lb ground beef
1 cup red wine such as a cabernet sauvignon or merlot ((or chicken or beef broth))
2 28oz cans crushed tomato
4 tablespoons tomato paste
3 beef bouillon cubes (crushed)
2 teaspoons Worcestershire Sauce
3 teaspoons dried oregano
2 teaspoons dried thyme leaves
3 dried bay leaves
2 teaspoons red pepper flakes ((optional))
1 teaspoon salt
½ teaspoon pepper
½ lb spaghetti (dried)

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add garlic and onion, and cook until translucent and sweet - around 7 minutes. Transfer to slow cooker.
  • Heat 1 tbsp oil in the same skillet and increase heat to high. Add beef and cook, breaking it up as you go, until browned. Cook in 2 batches if your skillet is not large enough. Transfer to slow cooker.
  • Return skillet to the stove, turn the stove down to medium and add red wine. Bring to simmer and scrape all the brown bits off the bottom of the skillet into the wine, then pour the mixture into the slow cooker.
  • Add remaining ingredients into the slow cooker. Cook on Low for 6 hours.

First try of spag. bol. in my slow cooker and it worked out great. Easily adaptable recipe, like lots of tomatoes, add extra! I didn't use oil to brown the mince as I used a non stick pan, certainly can be used though.

750 g beef mince
2 medium carrots
2 (425 g) cans chopped tomatoes
1 onion, sliced
2 stalks celery, chopped
2 red capsicums, roasted, skinned and chopped
2 garlic cloves, finely sliced
1/2 cup beef stock
2 teaspoons dried oregano
6 -8 fresh basil leaves
3 dried bay leaves
fresh ground black pepper
1 teaspoon salt (optional)

Steps:

  • Peel and chop carrot then use a food processor until very finely diced.
  • Brown mince in batches and drain.
  • Add carrots, tomato, onion, celery, roast capsicum, garlic, beef stock, oregano, basil, bay leaves, pepper and salt if using to slow cooker.

4 celery stalks, chopped
2 carrots, chopped
2 onions, chopped
Kosher salt and freshly ground black pepper
6 cloves garlic, chopped
One 6-ounce can tomato paste
1 cup dry red wine
4 pounds ground beef
2 cups whole milk
Two 28-ounce cans crushed tomatoes
1 tablespoon dried oregano
1 tablespoon dried basil
2 teaspoons dried thyme
2 teaspoons red pepper flakes
1/2 teaspoon ground nutmeg
1 Parmesan rind, optional, plus grated Parmesan, for serving
Cooked spaghetti, for serving
Chopped fresh basil, for serving
Chopped fresh parsley, for serving

Steps:

  • Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the celery, carrots and onions, season with salt and pepper and cook until softened, about 10 minutes. Stir in the garlic and cook for 30 seconds. Add the tomato paste and cook for a minute. Pour in the red wine and cook until it is mostly evaporated, about 3 minutes. Pour this mixture into a slow cooker.
  • Pour the remaining 2 tablespoons oil into the skillet, add the beef and season with salt and pepper. Cook, breaking up any lumps, until it is nicely browned, about 15 minutes. Drain off any excess fat. Stir in the milk and cook until it is mostly absorbed by the meat, about 5 minutes. Add this to the slow cooker along with the tomatoes, oregano, basil, thyme, red pepper flakes, nutmeg and Parmesan rind if using. Add some salt. Give it a good stir, cover and cook on low for 6 hours.
  • Skim off any fat on top and check the consistency. If it is too thick, add a bit of water. If it is too thin, cook for another 30 minutes with the cover off.
  • Remove the rind and serve over spaghetti with lots of grated Parmesan and topped with fresh basil and parsley. Extra sauce can be frozen for later use.

1 can (6 oz) Muir Glen™ organic tomato paste
1 tablespoon balsamic vinegar

16 oz uncooked spaghetti
3/4 cup shaved Parmesan cheese (3 oz)

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch skillet, cook sausage, beef, onions, carrots and garlic over medium-high heat 8 to 10 minutes, stirring occasionally, until sausage and beef are thoroughly cooked; drain.

1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
3 (14.5 ounce) cans stewed tomatoes
1 cup red wine
1 cup sliced green olives
4 teaspoons sea salt
2 tablespoons dried basil
2 teaspoons dried oregano
½ teaspoon Hungarian paprika
½ teaspoon cayenne pepper
3 tablespoons olive oil
1 cup finely chopped sweet onion, divided
1 clove garlic, crushed and chopped
⅔ cup chopped fresh parsley
⅔ cup sliced fresh mushrooms
1 teaspoon brown sugar
3 tablespoons olive oil
3 (4 ounce) links Italian sausage links, casings removed
2 cloves garlic, crushed and chopped
1 teaspoon ground white pepper
½ teaspoon ground cumin
1 cup red wine, or more if needed

Steps:

  • Mix together the crushed tomatoes, tomato sauce, stewed tomatoes, 1 cup of red wine, green olives, 4 teaspoons of sea salt, basil, oregano, paprika, and cayenne pepper in a slow cooker. Set the cooker to Low.
  • While the cooker is warming up, place 3 tablespoons of olive oil in a skillet over medium heat, and cook 3/4 cup of sweet onion until the onion just begins to soften, about 2 minutes; stir in 1 clove of garlic. Cook the mixture for 3 more minutes before mixing in parsley and mushrooms. Reduce heat, and simmer the mixture for about 10 minutes. Stir in the brown sugar, and mix to dissolve.
  • While the parsley and mushrooms are simmering, heat 3 more tablespoons of olive oil in a skillet over medium heat, and stir in the remaining onion and the sausage. Brown the sausage, breaking the meat up into crumbles as it cooks, about 10 minutes; season the mixture with white pepper and cumin. Pour 1 cup of red into the skillet, and scrape the pan with a wooden spoon to dissolve any brown flavor bits into the wine. Simmer for about 10 minutes; pour the sausage mixture into the skillet with the parsley and mushrooms. Bring to a simmer over medium-low heat just until all the ingredients have had time to introduce themselves to each other, about 10 minutes. Pour the sausage mixture into the slow cooker.
  • Cook on Low for 8 hours to overnight. Add more red wine or water if needed to prevent the sauce from getting too thick and burning on the bottom.

6 smoked bacon rashers, chopped
1 ½kg lean minced beef (or use half beef, half pork mince)
4 onions, finely chopped
3 carrots, finely chopped

4 x 400g cans chopped tomatoes
6 tbsp tomato purée
2 tbsp dried mixed herbs

Steps:
