SLOW COOKED STEAK DIANE CASSEROLE

Slow Cooked Steak Diane Casserole image

Slow Cooked Steak Diane Casserole - a great make-ahead meal, perfect for feeding a crowd! Cook in the oven, slow cooker or on the hob.

Provided by Nicky Corbishley

Categories     Dinner

Time 3h40m

Number Of Ingredients 15

2 tbsp vegetable oil
1.5 kg (3.3lb) braising beef or casserole beef ((chopped into bitesizechunks))
3 tbsp plain/all-purpose flour ((you can use gluten free plain flour if required))
½ tsp salt
½ tsp freshly ground black pepper
1 large onion ((peeled and chopped))
4 cloves garlic ((peeled and minced))
2 tbsp tomato puree/tomato paste
4 tbsp brandy or whisky
1 tbsp Worcestershire sauce
1 Litre (4 1/4 cups) beef stock ((3 stock cubes plus water is fine, or use homemade stock or bouillon for gluten free))
300 g (10 1/2 oz) chestnut mushrooms, thickly sliced ((thickly sliced))
1 tbsp cornflour cornstarch mixed with 3 tbsp cold water, to make a slurry ((optional))
120 ml (1/2 cup) double (heavy) cream
small bunch fresh parsley roughly chopped

Steps:

  • Preheat the oven to 160C/320F.
  • Heat the oil in a large casserole pan over a high heat.
  • Place the chopped beef in a bowl and sprinkle on the flour, salt and pepper. Toss everything together, then add the beef to to the casserole pan. Cook for 6-8 minutes, turning regularly until browned all over (you can do this in batches if you like, but I find it doesn't impact the look or taste for this recipe to cook it all in one go)
  • Once the meat is browned, turn down the heat to medium and add the onion. Continue to cook for a further 3-4 minutes, stirring regularly until the onion starts to soften.
  • Stir in the garlic and tomato puree, cook for a further minute, then add the brandy/whisky, Worcestershire sauce, beef stock and mushrooms.
  • Stir everything together, being sure to scrape up any bits that may have stuck to the bottom of the pan. Bring to the boil, stir again then place a lid on the pan and place the pan in the oven* to cook for 3 hours, until the beef is tender. Check a few times during the last hour of cooking to ensure casserole doesn't cook dry. Add good splash of boiling water or stock if it starts to look too dry.
  • Once the meat is tender, remove from the oven. If you'd like to thicken the sauce a little, stir in the cornflour slurry.
  • Add the cream and stir, then top with freshly chopped parsley and a sprinkling of black pepper.
  • Serve with mashed potato and green veg such as broccoli, green beans and kale

Provided by Guy Fieri

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

1 quart low-sodium beef stock
Four 6 to 8-ounce filet mignons
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
4 tablespoons butter
2 tablespoons extra-virgin olive oil
3 cups thinly sliced cremini mushrooms
2 shallots, sliced
4 cloves garlic, minced
1/2 cup brandy
1/2 cup dry red wine
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce

Steps:

  • Pairs well with: cabernet
  • Add the beef stock to a saucepan and reduce over medium-high heat to 1/2 cup, about 1 hour.
  • Sprinkle the steaks on both sides with the salt and pepper. In a large skillet or cast-iron pan over medium-high heat, heat 2 tablespoons of the butter and the olive oil. When the butter has melted and the oil shimmers, add the steaks. Brown the steaks on both sides, 3 minutes per side. Transfer the steaks to a plate and set aside, lightly covered with foil.
  • Add the mushrooms and shallots to the pan and cook for 2 minutes, stirring frequently, adding oil if needed. Add the garlic. When the garlic is lightly colored, add the brandy (be careful, it can ignite). Add the wine, mustard, Worcestershire and the reduced beef stock. Simmer for 2 to 3 minutes more. Return the steaks to the pan and finish cooking them to the desired temperature, 2 to 4 minutes, depending upon the size of the filets and desired temperature/doneness. For medium-rare, cook to 135 degrees F on an instant-read thermometer. Add the remaining 2 tablespoons butter to the sauce to melt.
  • To serve, place a steak on each plate and pour the sauce over the steak.

2 large rib-eye steaks about 1" thick
--
2 Tbls unsalted butter
2 C sliced mushrooms (buttons are fine)
2-4 thinly sliced shallots
1 Tbls chopped fresh chive
1 Tbls chopped fresh parsley
2 C low sodium beef broth
1 Tbls salt
1/2 Tbls fresh ground pepper

Cooking: 1) Heat a heavy pan on med-high to high until hot and then drop in the butter. Once it turns brown and starts to smoke a bit, add the beef (don't overcrowd the pan, work in batches if you need to) and brown on each side for 1 to 2 minutes. 2) Once browned, move the steaks to the crockpot. Add the sliced mushrooms, parsley, chive and pepper as a layer on top of the meat. 3) Keeping the pan hot, add the shallots to the pan and sweat for a few minutes, stirring constantly. Finish deglazing the pan with the beef broth and then pour the whole thing on top of the mushrooms and beef. 4) Cover and cook for 6 to 8 hours on low (4 to 5 on high). 5) 30 minutes before you're ready to serve, add the cognac, recover and smell the magic happen. 6) Remove the steaks to a large bowl and tent loosely with foil. 7) Using a colander over a saucepan, separate the mushrooms and the sauce. Add the mushrooms to the bowl with the beef and retent. 8) Using a roux or flour slurry, create a thickened gravy in the saucepan. Feel free to add more broth and reduce for a few minutes if you think you need more. 9) Serve with green beans and rice or homemade french fries, ladling the mushrooms and sauce and some additional fresh chopped parsley as you like it. 10) Enjoy.

GORDON RAMSAY'S STEAK DIANE RECIPE - (3.9/5)

Gordon Ramsay's Steak Diane Recipe - (3.9/5) image

Provided by ErinLayton

Number Of Ingredients 10

4 (7-ounce) sirloin steaks
3 shallots, peeled
4 ounces crimini mushrooms, cleaned (or button mushrooms)
1 tablespoon salted butter
1 garlic clove, peeled
1 to 2 tablespoons Worcestershire sauce, to taste
1 tablespoon Dijon mustard
1/3 cup brandy or cognac
1 cup heavy cream
small handful of flat-leaf parsley

Steps:

  • Using a rolling pin, roll out the steaks to flatten and cut off any excess fat. Season the steaks on both sides with salt and pepper. Heat a little olive oil in a skillet pan large enough to accommodate the 4 steaks in one layer. Quickly saute the steaks for up to a minute on each side then remove from the pan and set aside. To make the sauce for the steaks, heat some more olive oil in the pan. Slice the shallots and add to the pan; allow to soften briefly before adding sliced mushrooms with a tablespoon of butter. Crush in the garlic using a garlic press. Add the Worcestershire sauce, then the mustard and heat through for a minute. Turn up the heat and tilt the pan away from you. Pour the brandy into the far end and allow it to ignite. Once the alcohol has burnt off, swirl the juices around the pan. Add the cream and allow the sauce to thicken before turning down the heat. Introduce the steaks back into the pan and cook a little further depending on how well done you would like them. Remove steaks and spoon sauce over them. Sprinkle with parsley. Enjoy!
