6 boneless skinless chicken breasts
12 ounces thinly sliced mushrooms (more if you want)
2 tablespoons butter
1 (14 1/2 ounce) can chicken broth
2 (10 1/2 ounce) cans condensed cream of mushroom soup
8 ounces cream cheese
2 garlic cloves, minced
salt
black pepper

Steps:

  • Mix together dressing mix, chicken, mushrooms, butter, and chicken broth in crock pot.
  • Cook on high 5-6 hours.
  • About 1 hour prior to serving, mix mushroom soup, cream cheese, and garlic; add to crock pot.
  • Cook on high for 1 more hour.
  • Season with salt and pepper to taste, and serve over rice or noodles.

3 lbs chicken pieces
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter (divided)
1 small onion, chopped
1 garlic clove, chopped
1 (10 1/2 ounce) can cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth

Steps:

  • Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
  • Cook on low for 4-6 hours.
  • Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
  • Add this mixture to crock pot and cook on low for an additional hour.

6 boneless, skinless chicken breast halves
1 (4-ounce) jar sliced mushrooms (drained)
1 (10-ounce) can condensed cream of chicken soup
1/2 cup diced Swiss cheese

Steps:

  • Gather the ingredients.
  • In a large skillet, fry the bacon until crisp.
  • Remove the bacon from the skillet and drain on paper towels. (Don't clean out the skillet.)
  • Crumble the bacon and set it aside, covered, in the refrigerator.
  • In the skillet with the bacon drippings, cook the chicken breasts over medium heat for 3 to 4 minutes per side, until the outside has formed a nice light brown coating.
  • Place the browned chicken in a 4- to 6-quart slow cooker . Top with the drained mushrooms.
  • Using the same skillet you used to brown the chicken, heat the soup, mixing well and scraping up the pan drippings.
  • Pour the soup sauce over the chicken.

  • After 4 to 5 hours, top the chicken with the diced cheese and sprinkle with the reserved bacon.
  • Cover again and cook on high for 10 to 15 minutes or until the cheese has completely melted.

1 chicken, 3 - 4 lbs
1 cup chicken broth/water
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1 - 2 tsp parsley, dried
1/2 tsp poultry seasoning
as desired, salt and pepper
2 celery stalks or carrots *optional

Steps:

  • Pat dry the chicken with some kitchen paper (paper towel)
  • Season the chicken with the paprika, garlic and onion powder, parsley, salt and pepper, and poultry seasoning if using
  • Optional step: Take the celery or carrots and place them in the bottom of the slow cooker bowl as a 'rack' for the chicken to sit on.
  • Add the chicken broth / water to the slow cooker bowl
  • Place the seasoned chicken in the bowl, resting on the vegetables if you used them.
  • Cover with the lid and cook on high for 4 - 5 hours. Test your chicken at the 4 hour mark with a thermometer in the thigh area. When the juices run clear and the chicken reaches 165F, the chicken is done.
  • Remove the chicken carefully and let it rest, tented with foil. If you are making a gravy with the drippings, now is the time to do so.
  • Let the chicken rest 10 minutes, and then carve! Enjoy!

1 pound baby Yukon gold potatoes (or baby red potatoes)
1 pound baby carrots
1 ½ pounds boneless skinless chicken breasts (or boneless skinless thighs)
4 tablespoons unsalted butter
3 cloves garlic (minced, about 1 tablespoon)
2 ½ teaspoons Italian seasoning
½ teaspoon kosher salt (plus additional as needed)
¼ teaspoon black pepper (plus additional as needed)
Zest and juice of 1 medium lemon
¼ cup grated Parmesan cheese
Chopped fresh parsley (optional for serving)

Steps:

  • Cut any potatoes that are larger than a ping pong ball into quarters; if smaller than a ping pong ball, cut in half. You want the pieces to be a rough 1-inch dice. Lay them in a 6-quart or larger slow cooker.
  • Stir the carrots into the slow cooker with the potatoes, then spread them into an even layer. Arrange the chicken in the center, placing it on top of the vegetables.
  • In a small saucepan, melt the butter over medium-low heat. Remove from the heat and stir in the garlic, lemon juice and zest, Italian seasoning, salt, and pepper. Pour the mixture over the top of the chicken and vegetables.
  • Cover the slow cooker. Cook on HIGH for 1 1/2 to 2 hours or low for 4 to 5 hours. (The total amount of time you need will vary based upon your slow cooker model and the size of your chicken breasts. If your slow cooker runs hot-mine often does-check early to avoid drying out the meat). The chicken is done when it reaches 165 degrees F at the center with an instant read thermometer. The moment the chicken is done cooking, remove it to a plate, and cover to keep warm. Test the vegetables to see if they are tender. If they are not yet tender, give them a stir, recover the slow cooker, then continue cooking until they are tender and pierce easily with a fork, up to 1 additional hour on high or 2 hours on low. When ready to serve, return the chicken to the slow cooker. Sprinkle the Parmesan and parsley over the top. Enjoy warm.

  • Cut the ends off the onion, peel it, and then cut it in half lengthwise. Slice the halves thinly.
