CARAMEL APPLE QUESADILLA

Quesadillas don't always have to be savory! By combining a dessert cheese, like brie, with fresh apple slices and a little caramel, we can make a Caramel Apple Quesadilla that's perfect for snack-time, or as an after-dinner treat.

1 tablespoon butter
2 (10-inch) flour tortillas
4 ounces brie, rind removed and cut into thin slices
1 small apple, cored and thinly sliced
Caramel sauce for drizzling
1/4 cup chopped pecans

Steps:

  • In a large skillet over medium heat, melt butter. Place 1 tortilla in skillet and top with brie and apple. Top with remaining tortilla and press down lightly with spatula. Cook 1 to 2 minutes, or until golden brown. Flip quesadilla and cook another minute, or until golden brown and cheese is melted.
  • Slice tortilla into four wedges. Drizzles with caramel sauce and sprinkle with pecans. Serve immediately.

1 Granny Smith apple, thinly sliced
4 teaspoons extra-virgin olive oil
4 8-inch flour tortillas
8 ounces brie cheese, sliced (rind removed)
1 tablespoon whole-grain mustard
1 tablespoon maple syrup
2 strips bacon, cooked and crumbled

Steps:

  • Preheat a grill pan over medium-high heat. Toss the apple slices with 2 teaspoons olive oil and cook, turning occasionally, until marked and tender, 3 to 4 minutes.
  • Lay the tortillas on a cutting board. Top each with one-quarter each of the grilled apple and brie on one side, then fold the tortillas in half to cover the filling.
  • Heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium heat. Working in batches, cook the quesadillas until golden brown and the cheese melts, about 2 minutes per side. Meanwhile, mix the mustard and maple syrup in a bowl. Slice each quesadilla into wedges. Drizzle with the maple-mustard syrup and top with the bacon.

4 small flour tortillas
8 ounces soft mild brie
1 Gala apple (cored and thinly sliced)
1/2 cup Bear Naked Sea Salted Caramel Apple Granola
1/4 cup caramel sauce

Steps:

  • In a small sauté pan coated with cooking spray, heat one flour tortilla and top 1/2 of it with 2 ounces brie. Top the brie with 1/4 of the apple, 1/8 cup granola and drizzle with caramel sauce. Fold the other half of the tortilla over the quesadilla to form a "sandwich" and transfer to a platter with a spatula. Cut the quesadilla in half. Repeat with the remaining ingredients until all the tortillas have been used.
  • Serve immediately.

2 medium onions, sliced
1/4 cup balsamic vinegar
1/8 teaspoon sugar
1/8 teaspoon dried thyme
1/8 teaspoon dried rosemary, crushed
1 tablespoon vegetable oil
4 (10 inch) flour tortillas
2 medium tart apples, sliced
8 ounces brie cheese or 8 ounces camembert cheese, rind removed and quartered

Steps:

  • In a skillet over medium heat, cook the onions, vinegar, sugar, thyme and rosemary in oil for 10 minutes or until onions are golden.
  • Spoon the mixture over half of each tortilla and top with apples and cheese.
  • Fold over.
  • Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted.

1 sweet-tart apple, such as Fugi or Gala, thinly sliced
1 tablespoon brown sugar
¼ teaspoon ground cinnamon

Steps:

  • Melt 3/4 teaspoon butter in a large skillet over medium heat, tilting the skillet to evenly spread butter. Place 1 tortilla in the melted butter. Cover tortilla with Brie cheese slices and apple slices; sprinkle with brown sugar and cinnamon. Place the remaining tortilla over the filling.
  • Cook quesadilla until bottom tortilla is browned, 3 to 5 minutes. Spread the remaining 3/4 teaspoon butter on top tortilla; carefully flip quesadilla and cook until bottom tortilla is browned and cheese is melted, 3 to 5 more minutes. Slice quesadilla into quarters.
