Doubly delicious with chocolate in both the crust and filling, refreshing slices of silky pie satisfy a sweet a tooth.

1 1/4 cups chocolate cookie crumbs
1/4 cup butter or margarine, melted
1 bag (12 oz) semisweet chocolate chips (2 cups)
1/2 pint (1 cup) whipping cream
1 teaspoon vanilla
2 egg yolks
1/2 cup whipping cream
1 tablespoon powdered sugar
Unsweetened baking cocoa, if desired

Steps:

  • In small bowl, mix cookie crumbs and butter. In ungreased 9-inch glass pie plate, press crumb mixture in bottom and 1 inch up side.
  • In double boiler set over hot simmering water, heat chocolate chips 2 to 3 minutes, stirring frequently, until melted and smooth. Gradually add 1 cup whipping cream, stirring constantly, until combined. Stir in vanilla and egg yolks until well blended. Cook over medium-low heat 5 to 6 minutes, stirring frequently, until thickened and hot. Pour filling into crust. Refrigerate at least 3 hours or until firm.
  • In medium bowl, beat 1/2 cup whipping cream and the powdered sugar with electric mixer on high speed 1 to 2 minutes or until soft peaks form. Top individual servings with whipped cream. Dust with cocoa.

2 cups semisweet chocolate chips
1-1/2 cups heavy whipping cream, whipped, divided
1/4 cup confectioners' sugar
1 tablespoon vanilla extract
1 chocolate crumb crust (9 inches)
Whipped cream and chocolate-covered peppermint candies, optional

Steps:

  • In a microwave-safe dish, combine the chocolate chips and 1/2 cup of cream; cook on high for 1-2 minutes, stirring every 30 seconds until smooth. Cool to room temperature. , Stir in sugar and vanilla; set aside. In a small bowl, beat remaining cream until soft peaks form. Beat in chocolate mixture on high, one third at a time; mix well. Spoon into crust. Refrigerate for at least 3 hours. Garnish with whipped cream and candies if desired.

Puffed rice cereal and chopped hazelnuts add crunchy texture to these easy dark chocolate truffles. The cream is infused with vanilla, but you can switch things up and infuse with coffee, whole spices or tea leaves. Store the candies in mini muffin liners for the perfect addition to a homemade treat box.

1/2 cup heavy cream
1 vanilla bean
4 1/2 ounces dark chocolate (70-percent cacao)
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
2 cups puffed rice cereal, such as Rice Krispies
1/2 cup finely chopped hazelnuts
1 teaspoon finely grated orange zest

Steps:

  • Add the heavy cream to a small saucepan. Use a paring knife to split the vanilla bean lengthwise. Scrape the vanilla beans seeds from the pod and add to the cream along with the empty pod. Heat over low until just starting to simmer.
  • Meanwhile, use a serrated knife to finely chop the chocolate and put in a heatproof bowl.
  • Remove the vanilla pod, squeezing it to release any cream. Discard or reserve for another use.
  • Pour 1/3 cup of the hot vanilla cream over the chocolate (measure, as some cream will have evaporated) and use a rubber spatula to stir in small, circular motions until combined. Add the butter and continue to make circular motions until the mixture is completely melted and combined with no bits or streaks of butter. Stir in 1 cup of the puffed cereal, the hazelnuts and orange zest. Cover the bowl with plastic wrap and refrigerate the ganache for 1 hour to firm up.
  • Put the remaining 1 cup cereal in a resealable plastic bag and crush with a rolling pin or the back of a pot. Transfer to a shallow bowl.
  • Line a sheet pan with parchment. Use a tablespoon to scoop the ganache and roll it into a ball with both hands. Dip the ball in the crushed cereal to coat. Transfer the truffle to the prepared pan. Repeat with the remaining ganache and cereal. Put the truffles in mini muffin liners, if you like.
  • Store the truffles in an airtight container in the refrigerator for up to 2 weeks, or at room temperature for up to 4 days.

Steps:

  • Heat oven to 325°F.
  • Microwave chocolate and cream in microwaveable bowl on HIGH 2 min. or until chocolate is almost melted; stir until completely melted. Cool.
  • Whisk in eggs, sugar and flour. Pour into 9-inch pie plate sprayed with cooking spray.
  • Bake 35 min. or until edge of pie is puffed but center is still slightly soft; cool. Serve topped with COOL WHIP.

1/2 cup cookie butter spread
1/2 cup marshmallow creme
4 oz cream cheese, softened (from 8-oz package)
1/4 teaspoon ground cinnamon
Additional Cinnamon Toast Crunch cereal
8 oz semisweet baking chocolate, melted

Steps:

  • Line cookie sheet with waxed paper. In food processor, place 3 cups cereal. Cover; process with on-and-off pulses until finely ground.
  • In medium bowl, stir together cookie butter spread, marshmallow creme, cream cheese and cinnamon until smooth. Stir in finely ground cereal until well combined. Shape into 1-inch balls; place on cookie sheet. Refrigerate about 1 hour or until firm.
  • Coarsely crush additional cereal. Using 2 forks, dip and roll each ball in melted chocolate to coat; return to cookie sheet. Immediately sprinkle with coarsely crushed cereal. Refrigerate about 1 hour or until chocolate is set. Store in refrigerator.

1/2 cup shortening
3 tablespoons cold water

TRUFFLES:
2 cups (12 ounces) dark chocolate chips, divided
1/3 cup heavy whipping cream
1/2 cup crushed pretzels
1 tablespoon shortening
2 teaspoons coarse sugar
1/2 teaspoon kosher salt
FILLING:
1-1/3 cups semisweet chocolate chips, divided
1-1/4 cups heavy whipping cream, divided
1/4 cup sugar
2 large egg yolks
1/4 cup butter, softened
2 tablespoons vanilla extract
TOPPINGS:
1 cup heavy whipping cream
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Broken pretzels, optional

Steps:

  • In a small bowl, combine flour and salt; cut in the shortening until crumbly. Combine water and vinegar; gradually add to flour mixture, tossing with a fork until dough forms a ball. Wrap in plastic. Refrigerate for 1 hour or until easy to handle., Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. Cool on a wire rack., For truffles, melt 1 cup dark chocolate chips in a microwave; stir until smooth. Pour over chocolate; whisk until smooth. Pour into crust. Refrigerate for 15 minutes or until set., Meanwhile, in a small heavy saucepan, cook and stir sugar and the remaining chocolate chips and cream over medium heat until smooth. Whisk a small amount of hot mixture into the egg yolks. Return all to the pan, stirring constantly. Cook and stir over low heat until mixture reaches 160°. , Pour into a large bowl; stir in butter and vanilla. Place bowl in an ice-water bath, stirring frequently until cooled. Remove bowl from ice water. Beat mixture until stiff peaks form. Spread into crust; chill completely., For topping, in a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until soft peaks form. Spoon over filling. Garnish with truffles and broken pretzels if desired. Serve with any remaining truffles.

12 ounces firm silken tofu
1/2 cup pure maple syrup
1 cup creamy peanut butter
9 inches graham cracker pie crust

  • Place chocolate chips in a microwave-safe bowl and microwave 30 seconds. Stir and heat 30 seconds more. Repeat stirring and heating until chocolate is just melted. Set aside.

2 cups chopped pecans
⅓ cup white sugar
¼ cup unsalted butter, melted
½ cup miniature semisweet chocolate chips
1 ⅓ cups semisweet chocolate chips
½ cup unsalted butter, at room temperature
4 egg yolks
¼ cup white sugar
½ teaspoon vanilla extract
¼ cup heavy cream
⅓ cup semisweet chocolate chips
1 tablespoon brandy

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together the pecans, 1/3 cup sugar, 1/4 cup butter and miniature chocolate chips. Press into the bottom and up the sides of a 9 inch pie plate. Bake for 8 to 10 minutes in the preheated oven. Cool completely.
  • In a metal bowl set over a pan of simmering water, combine 1 1/3 cups chocolate chips and 1/2 cup butter. Stir occasionally until melted and smooth. Remove from the heat and stir in the vanilla.
  • In a separate bowl, beat egg yolks with 1/4 cup sugar until thick and pale using an electric mixer, at least 3 minutes. Stir into the melted chocolate and set it back over the pan of simmering water. Whisk constantly until thick, 3 to 4 minutes. Pour into the cooled crust and smooth the top.
  • Heat the heavy cream in a small saucepan. When warm, stir in the remaining chocolate chips until melted. Remove from the heat and stir in the brandy. Pour over the truffle filling. Refrigerate for several hours to set before serving.
