CRUNCHY PEANUT BUTTER BARS
Steps:
- Line an 8 x 8 baking sheet with foil or parchment paper.
- In a large bowl, mix together the butter (melt in the microwave), graham cracker crumbs, powdered sugar, and peanut butter. Mix well.
- Stir in the rice krispies cereal and then press in the bottom of the pan.
- In a small microwave safe bowl, add the chocolate chips and coconut oil (measure when melted). Microwave in bursts of 15 seconds, stirring in between bursts for 15 seconds.
- Pour the melted chocolate over the peanut butter layer and allow to completely firm up.
- Cut into bars and enjoy!

- Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with aluminum foil with a 1-inch overhang on all sides. Spray lightly with baking spray.
- Combine both flours, oats, wheat germ, chia seeds if using, salt and cinnamon in a medium bowl. Set aside.
- Combine the peanut butter, brown sugar, vegetable oil and egg white in another medium bowl. Beat with a hand mixer until creamy, about 2 minutes. Bake until golden, 25 to 30 minutes. Let cool completely. Drizzle with the chocolate. Let the chocolate harden and break into eighteen 2-inch even pieces.

- Preheat oven to 350°F (175°C).
- Place crackers on a greased, parchment paper-lined baking sheet so that the entire surface is covered.
- In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling, then boil for 3 minutes.
- Pour the caramel over the crackers, spreading evenly with a spatula.
- Bake for 5 minutes.
- Pour the chocolate chips over the crackers and cover with tin foil for 3 minutes.
- Remove the foil and spread the softened chocolate over the top evenly.
- Sprinkle with pecans, cover with foil, and freeze for 1 hour.
- Break the bark up into pieces.

- Line a 10cm x 20cm loaf tin with non-stick baking paper.
- Place the dates, peanut butter and vanilla in a food processor and process for 2-4 minutes or until the mixture comes together into a paste. Transfer to a large bowl, add the puffed rice and peanuts and mix to combine. Using the back of a spoon, press the mixture into the base of the tin (see note).
- Place the chocolate in a heatproof bowl over a saucepan of simmering water (the bowl shouldn't touch the water) and stir until melted. Pour the chocolate over the slice and spread evenly. Refrigerate for 20-30 minutes or until set. Remove the slice from the tin and cut into bars using a hot knife. Refrigerate until ready to serve.

- Mix white chocolate chips and peanut butter together in a microwave-safe bowl; heat in microwave until half-melted, 30 seconds to 1 minutes. Stir.
