A Real Cuban Mojito Recipe straight from my trip to Cuba. Learn the secret ingredient in these famous Cuban cocktails and what makes them authentic!

2 teaspoons white cane sugar
1/2 lime (juice only)
1 long mint sprig - The original Cuban recipe use spearmint or yerba buena (a mint variety very popular on the island of Cuba)
1 shot of white rum (good US or Puerto Rican brand, Cubans typically use Havana Club 3 year white rum)
3 drops aromatic bitters (Angostura brand is best)
sparkling water
wooden muddler (small wooden spoons work fine)

Steps:

  • In each glass: add 2 teaspoons of white cane sugar and the juice of half a lime. In Cuba, they don't place the lime into the glass, just the lime juice!
  • Place one long mint stem into each glass and simply muddle (push down and twist) the bottom of the stem only NOT THE MINT LEAVES into the sugar and lime juice. Two reasons for this: one you don't get a strong bitter taste when you over-muddle the leaves, and they stay pretty and green not brown and bruised. This tip came from the bartenders we met on our trip in Cuba and was confirmed with my good friend Abel who is a Cuban travel guide, and trust me, he knows a thing or two about mojitos!
  • Next, add 1 shot white rum, 3 drops aromatic bitters.
  • Add few ice cubes, in Cuba they don't add lots of ice because it is not commonly used, top with a splash of sparkling water, add mint garnish, mix, and sip away!

This is a traditional mojito recipe, very similar to the drinks I enjoyed in Varadero, Cuba. The muddling and the order of the ingredients helps ensure that all the flavors are well blended. Serve with a straw and a decorative stir stick to keep the different flavors well mixed together. Mint sprigs may be used for a garnish instead of lime wedges. Enjoy!

1 lime, cut into 4 wedges
4 sprigs fresh mint
½ cup white rum

  • Place 1 teaspoon of sugar into each of two 12 ounce glasses. Squeeze the juice from a lime wedge into each glass, drop in the wedge, and add 2 sprigs of mint. Use a spoon or muddler to mash the sugar, lime juice, and mint together in the bottom of the glasses. Fill each glass about half full with crushed ice. Pour 1/4 cup rum into each glass. 1 teaspoon superfine sugar or 1 teaspoon simple syrup
2 sprigs of fresh mint
6 tablespoons lime juice
2 ounces light rum

Steps:

  • Place sugar and mint in a tall glass and using a muddler or back of a spoon mash mint leaves into the sugar.
  • Add rum, lime juice and finish with a splash of club soda. Add ice and serve.

Steps:

  • In 4 highball glasses, add 4 mint leaves, 4 pieces of lime, and 2 teaspoons sugar to each glass. Muddle in the bottom of the glass using a muddler or a wooden spoon. Add ice to each glass, top with the seltzer water, and stir. Add 1-ounce rum to each glass, if desired.

6 to 8 tablespoons sugar
1/2 cup fresh lime juice
1 cup white rum
6 cups club soda
6 cups crushed ice

Steps:

  • Wash and stem the mint leaves, reserving 6 whole sprigs for garnish. Place the mint leaves in the bottom of a sturdy pitcher and add the sugar. Mash the mint leaves and sugar together, using the tip of a wooden spoon -- this extracts the mint oils. Add the lime juice and rum and stir until the sugar is dissolved. The recipe can be made several hours ahead to this stage. However, expect some discoloring in the mint leaves if you make the mojitos more than 20 minutes ahead.
  • Just before serving, add the club soda and gently stir to mix. Partially fill 6 highball glasses with ice. Add the mojito mixture and garnish each glass with a sprig of fresh mint.

1/2 fresh lime
1 teaspoon caster sugar
12 fresh small mint leaves
50 ml white cuban rum
1/2 cup ice cube (crushed or or and cubed ice)
1 dash sparkling water
1 sprig of fresh mint and lime wedge, to garnish

Steps:

  • Cut a round slice of lime, 1 cm thick and slice it into 4 equal parts. Put the four lime wedges into a glass, then add the sugar and muddle (squish everything together) to release the lime juice and aroma. Do it gently because hard squishing may release the bitterness from the white part of the lime.
  • Put the mint leaves on one hand and clap in order to lightly bruise the leaves to releases the aroma. Rub the mint leaves around the rim of the glass and drop them inches Use a muddler, bar spoon (or even a rolling pin) to gently push the mint down into the lime juice.
  • Half fill the glass with crushed ice and pour in the rum. Stir the mix together until the sugar dissolves.
  • Top up with crushed ice, a splash of the sparkling water and garnish it with a sprig of mint.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

Steps:

  • Combine the lime, sugar, and mint in a martini shaker or wide glass. Use a muddler or the handle of a wooden spoon to smash and crush everything together to release the oils and juice.
  • When there is a good amount of juice and the sugar begins to dissolve, add the rum and stir to combine.
  • Fill two glasses with ice, divide the mixture between glasses, and top off with some soda water. Garnish with a couple of mint leaves and sugar cane stalks.

1 lime, juice of (2 ounces)

1 sprig mint
havana club white rum (2 ounces)

Steps:

  • Place the mint leaves into a long mojito glass (often called a "collins" glass) and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime.
  • Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device *pictured on the website*, though you can also use the back of a fork or spoon if one isn't available).
  • Add ice (preferably crushed) then add the rum and stir, and top off with the club soda (you can also stir the club soda in as per your taste). Garnish with a mint sprig.

Traditional Cuban Recipe: Cuban Mojo (Cuban Marinade) image

There are many variations of mojo. It is the signature marinade of Cuba and it finds its way into many varied dishes. After searching through many recipes and cookbooks; I found this in on www.icuban.com and in "Three Guys from Miami Cook Cuban" by: three brothers-in-law, Glenn Lindgren, Raul Musibay and Jorge Castillo. Many mojos do not include oil; with or without oil the key element is "sour" orange, an almost bitter orange that grows throughout Cuba and now it flourishes in most Miami backyards. In a pinch use: 2 parts orange juice to 1 part lemon juice and 1 part lime juice. The key to a good mojo is in the proportions; garlic, salt, whole black peppercorns and sour orange juice are it's main ingredients.Update: 04/14/08 add a teaspoon of cumin (if you so desire) there are many recipes that call for it but we don't use it here! I have been using this mojo since I left my mother's house, as we always used it in Cuba and Haiti.:)

1 teaspoon black peppercorns (whole)
1 1/2 cups orange juice, sour orange (or 1 cup orange juice & 1/2 cup lemon juice & 1/2 cup lime juice)

1 cup Spanish olive oil

Steps:

  • Mash garlic, salt and peppercorns, using a mortar and pestle or use food processor.
  • Stir in juice.
  • Allow to sit for at least 30 minutes or longer at room temperature.
  • *If making it without the oil - stop at this point and this makes a perfect marinade for seasoning, chicken, fish, pork &/or beef.
  • Continue with preparing the mojo with oil - after you have stirred in juice add onion & oregano.
  • Allow to sit for at least 30 minutes or longer at room temperature.
  • In a saucepan heat olive oil to medium hot & then remove from heat.
  • Whisk oil in garlic-juice mixture, until well blended.
  • Stores for at least a week in the refrigerator.
