- Preheat oven to 350°. In a bowl, toss pork with oil and pepper. Place a large skillet over medium-high heat. Add pork; cook and stir 2-3 minutes or until browned. Remove from heat., To assemble, spread mustard onto center of tortillas; layer with ham, cheese, pickle, onion and pork. Fold bottom and sides of tortillas over filling and roll up. Place on an ungreased baking sheet; bake 4-6 minutes or until heated through.

CUBAN-STYLE ROAST PORK
Fragrant, savory, and succulent pork roast the whole family will love. Serve with cumin scented black beans, and mashed sweet potatoes.

Steps:
- Grind garlic, salt, black pepper, cumin, oregano, and coriander into a paste using a mortar and pestle.
- Transfer half of the garlic and spice paste to a bowl; add lime juice, orange juice, olive oil, and vinegar. Beat the mixture with a whisk until smooth.
- Cut several inch-long, deep slits into the fatty side of the pork roast. Rub the reserved garlic paste into the slits.
- Put rubbed roast into a gallon-size resealable plastic bag. Pour the liquid mixture over the roast, squeeze as much air from the bag as possible and seal; refrigerate, turning occasionally, 8 hours to overnight.
- Remove pork roast from refrigerator, put into a roasting pan, and let warm at room temperature for 30 minutes.
- Preheat oven to 400 degrees F (200 degrees C).
- Roast pork in preheated oven for 30 minutes, reduce heat to 375 degrees F (190 degrees C), and continue cooking until pork is no longer pink in the center, about 2 hours more. An instant-read thermometer inserted into the center should read at least 170 degrees F (75 degrees C).

FESTIVE TORTILLA ROLL UPS
These are absolutely delightful ! A friend of mine gave this recipe to me recently and I have already made these 3 times in 1 week! You can make these with plain tortillas but I used the red (sundried tomato tortilla) and green (spinach tortilla) to add some festive colour to the Holiday season! These have been gobbled up quickly wherever I take them and will not disappoint. They are almost too pretty to eat...but just try and stop them! Easy to make, festive looking and totally delicious ! What more could you ask for in an appetizer?

CUBAN PORK TORTILLA ROLL UPS
Steps:
- Trim fat from meat if necessary. Pierce meat with fork all over. In a small bowl add juices, bay leaves, water, oregano, salt, cumin, peper and garlic. Place meat in bag set in a shallow dish, pour marinade over pork for 24 hours. Turn occasionally. In slow cooker, place onion. Add meat and marinade. Cover and cook on low heat setting for 10-12 hours. Or High heat for 5-6 hours. Remove meat. Reserve juices. Using two forks shred the meat. Remove bay leaves. Serve with tortillas.

SLOW-COOKER CUBAN PULLED-PORK PANINI SANDWICHES
Cuban pulled pork-or lechon asado-meets traditional Cuban ham and Swiss sandwiches in these zesty, melty paninis. The pork absorbs loads of flavor while slow cooking in a garlic- and citrus-infused mojo sauce, which ultimately makes for one amazing hot sandwich. Unless you live in south Florida, Cuban bread will probably be rather difficult to come by. So use whatever type of bread tickles your fancy, and if you can't find a loaf that measures 2 feet (61 cm) long, two smaller loaves (about 12 ounces [340 g] each) of Italian or French bread, or even individual hoagie rolls, would work beautifully instead. Just make sure to start and end your sandwich layers with Swiss, since the cheese is what ends up holding together an otherwise messy panini.

- Pierce the pork roast all over with a small knife. Place the pork in the bottom of a large slow cooker. In a medium bowl, combine the garlic, orange juice, lime juice, olive oil, oregano, cumin and House Seasoning. Pour the mixture over the pork and rub it into the meat, turning to evenly coat it. Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 6 hours, until the pork is extremely tender.
- Transfer the pork to a cutting board. Remove and discard the fat and use 2 forks to pull the pork into chunks. Use a large spoon to skim the fat from the surface of the liquids in the slow cooker. Return the pulled pork to the slow cooker and stir well. Taste the meat and adjust the seasoning, adding salt and pepper, if desired. Cover the slow cooker and cook on high for 15 to 30 minutes, so that the pork can further absorb the flavors of the cooking liquids while you prepare the sandwich ingredients.
- To assemble the sandwich, slice the loaf of bread in half horizontally. Spread a thin layer of mustard on the bottom half of the bread and then layer 1 package of the Swiss cheese, all of the pickle slices, all of the ham slices and a generous amount of pulled pork. Top the pork with the remaining 1 package of Swiss cheese and place the other half of the bread loaf on top of the Swiss cheese.
- Use a serrated knife to cut the loaf into approximately 6-inch (15-cm) lengths. Brush both sides of each sandwich with the melted butter and cook the sandwiches in a panini press or a hot skillet until the cheese melts and the exterior gets toasty. If you are cooking the sandwich in a hot skillet, cover the top of the sandwich with aluminum foil and place a heavy pot or cast iron skillet on top of the foil. Flip the sandwich once the bottom is toasted and toast the other side. Cut the sandwich into slices and serve hot.

Great tasting and easy to make. Buy an assortment of deli ham, turkey, and roast beef and make each roll up different if you like. Cook time is actually time spent for refrigeration.

- In a mixing bowl beat softened cream cheese and ranch dressing mix until smooth.
- Add red pepper, celery, onions, and olives (if using), mix well.
- Spread about 3/4 cups on each tortilla.
- Place slices of the deli meat on top of the cream cheese mixture.
- Roll up tightly and wrap in plastic wrap.
- Refrigerate for at least 2 hours.
- Slice into 1/2 inch pieces.

- Thaw out two puff pastry sheets. Roll each one out just a bit onto two large pieces of plastic wrap. (10 1/2 x 10 1/2 inches)
- Mix garlic powder, onion powder and mustard together in a small bowl. Spread this evenly across both puff pastry sheets, leaving a ¼-inch border all around the outside edges of the dough. Sprinkle 5 ounces (half) of the diced pickles on each pastry sheet, then layer on the cheese and the ham.
- Roll up the dough, making sure that the ham and cheese don’t slide out while you’re rolling. Wrap the plastic wrap tightly around the roll ups, place on a baking sheet seam-side down, and chill in the fridge for 30 minutes.
- Preheat your oven to 375F and set racks to the upper and lower thirds. Remove the plastic wrap from the roll up, and place it on a cutting board. Using a serrated knife, gently cut (using a saw like motion) it into ¾-inch slices. You should have about 12 slices per roll up – 24 total.
