CUBAN SANDWICH BITES
All of the rich, delicious flavor of a Cuban sandwich in one bite-sized appetizer. Perfect for game day or holiday parties!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on a rimmed baking sheet.
- Mix yellow and Dijon mustards together and spread evenly over baguette slices. Top 1/2 of the bread slices with 1/2 of the Swiss cheese and place on the rack on the baking sheet. Top each with pickle slices, ham, pork loin, and remaining cheese. Top sandwiches with remaining baguette slices.
- Spread mayonnaise over the tops of the sandwiches and sprinkle with garlic powder. Spray the bottom of a second baking pan with cooking spray and place upside-down on top of the sandwiches. Weigh down the top pan with a heavy, oven-safe item such as a cast iron skillet.
- Bake in the preheated oven for 25 minutes. Remove top pan and bake until golden brown, about 5 minutes more.

CUBAN SANDWICH APPETIZER SQUARES
Finger food doesn't get any more fun than Cuban Sandwich Appetizer Squares. With crescent dinner roll dough substituting for a sandwich bread and topped with a dill chip, Cuban Sandwich Appetizer Square aim to please. Try some at your next get-together.

Steps:
- Heat oven to 375°F.
- Unroll 1 can crescent dough onto baking sheet sprayed with cooking spray; firmly press perforations and seams together to form 12x10-inch rectangle. Bake 5 to 6 min.
- Top baked crust with ham to within 1/2 inch of edges; cover with layers of cheese and roasted pork. Spread with mustard.
- Unroll remaining can of crescent dough as directed, except substitute sheet of parchment paper for the baking sheet. Flip dough and parchment over meat- and cheese-topped crust; remove and discard parchment. Press edges of dough together to seal, tucking under if necessary. Brush with butter; sprinkle with pepper.
- Bake 25 to 30 min. or until golden brown. Let stand 5 min. before cutting into 32 squares. Top each with pickle chip.

- Preheat oven to 350°. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Layer with ham, cheese and pickles; replace top halves of rolls. , In a microwave, melt butter; stir in onion and mustard. Drizzle over rolls. Bake, covered, 10 minutes. Uncover; bake until golden brown and heated through, 5-10 minutes longer.

ANTIPASTO SQUARES
Layers of roasted red bell pepper and deli meats cheeses are baked inside a crescent roll crust.

Steps:
- Preheat oven to 350 degrees F (175 C).
- Unroll one package of crescent roll dough, and cover the bottom of a 9x13 inch pan. Layer the ham, provolone cheese, Swiss cheese, salami, pepperoni, and red peppers, on top of the dough.
- In a bowl, beat the eggs lightly, and stir in the parmesan cheese and black pepper. Pour 3/4 of this mixture over the peppers. Unroll the second package of dough, and place over the top of the peppers. Brush with the remaining egg mixture. Cover with aluminum foil.
- Bake for 25 minutes in the preheated oven. Remove foil, and bake another 10 to 20 minutes, or until dough is fluffy and golden brown. Cut into squares. Serve warm, or at room temperature.

- Bolitas de Yuca (Cheese Stuffed Fried Yuca Balls) Yuca, also called cassava, is another common ingredient found in Cuban dishes, and these fried yuca balls are super yummy and can be ready in about 20 minutes.
- Guava Cream Cheese Cuban Pastries (Pastelitos de Guayaba y Queso) If you’re looking for something a little sweeter, try these fantastic cream cheese and guava-filled pastries.
- Tostones. Peel and slice a few plantains, fry them in oil, and sprinkle them with sea salt. It doesn’t get much simpler than that. Plus, they taste fantastic.
- Cuban Sliders. This is another recipe that requires minimal cooking, which means it’s one of my favorites. Load up some Hawaiian rolls with ham, Swiss cheese, and dill pickles.
