CUBAN STEAK SANDWICHES
Steps:
- Cut the steak into 2 even pieces and place in a sealable plastic bag or container. Place the olive oil, cilantro, basil, parsley, lime juice, garlic, and 1 tablespoon salt in a blender and mix until smooth. Reserve 1/2 cup of the herb-oil mixture and refrigerate. Add the remaining mixture to the meat, distribute evenly, and marinate in the refrigerator for at least 3 hours.
- Preheat oven to 375 degrees F.
- Slice ciabatta loaf lengthwise and remove excess bread from inside, if desired.
- Remove the meat from the marinade; discard marinade. Place on a paper towel, wiping off any excess marinade. Heat a grill pan over medium-high heat and add 1 tablespoon canola oil. Once the pan is hot, add meat and cook until medium-rare, about 4 to 5 minutes per side, depending on thickness. Place meat on a cutting board and cover with foil. Repeat with other piece of meat, only adding more oil if necessary.
- Place bread directly on oven rack and toast, about 5 minutes.
- Heat remaining tablespoon of oil in the grill pan over medium-high heat. Add onions and cook until just beginning to brown but still crisp, about 1 minute. Remove from heat and season with salt, to taste.
- Take the reserved herb-oil mixture and brush the inside of both halves of bread. Slice steak thinly on the bias and place on the bottom half of the bread. Top with onions and then remaining bread. Slice into quarters and serve.

- Slice the onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.
- Slice the cube steak against the grain. Sprinkle with seasoning salt.
- Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add the meat in a single layer. Cook one side until brown, and then flip and cook until brown, about a minute on both sides.
- Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes hot sauce and 2 tablespoons butter. Add the cooked onions. Stir to combine.
- Butter the halved French rolls and brown in a skillet.
- To assemble, lay the bottom half of a French roll on a plate. Place the meat mixture, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half and devour!

- Melt margarine in large nonstick skillet on medium heat. Add rolls, cut-sides down; cook 3 min. or until golden brown. Remove from skillet; set aside.
- Add vegetables and garlic to skillet; cook and stir on medium-high heat 3 min. or until crisp-tender. Remove from skillet; cover to keep warm. Add steaks to skillet; cook 30 sec. on each side or until done, brushing with steak sauce for the last 10 sec.

STEAK SANDWICHES - PIONEER WOMAN
A simple, decadent steak sandwich. Credit goes to a rancher's wife known as Pioneer Woman. :) Based on comments received, I have reduced the amount of worcestershire sauce from 1/2 cup, to 1/4-1/2 cup. I suggest starting with the lower amount and adding more if you like.

- Melt 2 TBSP butter over medium heat in large skillet. Slice onions and cook until soft and light brown (7-8 minutes). Remove and set aside.
- Meanwhile, slice cube steak thinly against the grain. Sprinkle with seasoned salt.
- After onions have been removed from skillet, melt another 2 TBSP butter over high heat.
- Add meat in single layer. Cook one side until brown (at least one minute), then flip and cook until brown, another minute.
- Add 1/2 cup worcestershire sauce, 5 dashes of Tabasco, and 2 more TBSP butter. Add cooked onions. Stir to combine.
- Using last 2 TBSP butter - butter halved French rolls and brown on skillet or griddle.
- Put bottom half of French rolls on plates. Put one fourth of meat mixture on each, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and enjoy!
EASY STEAK SANDWICH
I tried for years to make a cheese steak as good as the takeout sub shops of southeastern Massachusetts. I think this is about as close as you can come at home. Freezing the steak the day before makes it easy to cut into very thin slices.

- Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms. Cook and stir until softened, then add the bell pepper and cook just until tender, about 3 minutes. Remove from the pan with a slotted spoon, and set aside.
- Add the remaining butter to the skillet. No need to clean the pan, just let it heat up a little bit. Place the steak in the skillet along with the pickled peppers. Season with salt and pepper. The steak cooks really fast, just a couple of minutes. Once the steak is mostly browned, return the onion and pepper to the pan. Cook until heated through.
- Turn off the heat, and place the slices of cheese over the top of the pile so they can melt. Scoop the whole pile into the awaiting bread, making sure to pour some of the juices onto that wonderful sandwich.

CUBE STEAK SANDWICH
Steps:
- Heat frying pan on medium heat and add butter. Cut up onion and saute in frying pan, sprinkle Cavanders Greek seasoning on onions. Sprinkle Cavanders Greek Seasoning on cube steak.
- In oven, broil cubed steak until done till likeness. Cut loaf of French bread long way in half and place cooked steak on bread. Add onions on top of steak and Kraft Extra Sharp Cheese on top of onions.
- Place sandwich on Bakers sheet and put back in oven till cheese is melted. Take from oven and add one thin line of A.1. Steak Sauce across the top side of bread. Add leaf lettuce, close bread and cut to serve.

- Pound steaks to 1/4-in. thickness. Sprinkle with 1 teaspoon salt and pepper. Place in a greased 13x9-in. baking dish. Spoon salad dressing over steaks. Cover and chill for 1 hour. , In a large saucepan, combine the vegetables, broth and remaining salt. Cover and cook over medium heat for 6-8 minutes or until tender. Drain, reserving liquid. , Spoon 1/4 cup vegetable mixture onto each steak; roll up and secure with toothpicks. In a large nonstick skillet, brown meat rolls in oil on all sides. Cover and simmer for 35-40 minutes or until meat is tender. Remove with a slotted spoon; keep warm. , Combine cornstarch and reserved cooking liquid until smooth; stir into pan drippings. DIP N' DUNK STEAK SANDWICHES
Something different to do with cube steaks. I'm not a big fan of cube steaks, but these really are very good and great if you are on a budget! If you are feeling really naughty, melt a slice of Swiss cheese on top.

- In a large skillet, melt the butter over medium-high heat. Then gently, place all the steaks in the skillet in a single layer.
- Cook until the cubed steaks are golden brown, aprroximately three minutes each side. Season with salt and pepper.
- When the cubed steaks are done, transfer them to the work surface.
- For the gravy, drain the fat from the skillet. Pour water in the skillet and instant beef bouillon.
- Set the oven at 550 degrees Fahrenheit or at broil mode. Place buttered French bread or hamburger bun halves on the baking sheet.
- Sprinkle some garlic salt into the bread. Place the sheet into the broiler rack for about 4 inches from the heat.
- Toast the bread until crispy and golden brown.
- Sandwich the steaks over two toasted bread slices; cut in half.
- Pour the gravy in small bowls.
- The best part, each person can dunk the crispy cubed steak sandwich in the gravy.
