CUCUMBER-DILL COCKTAIL SANDWICHES
These open-faced sandwiches are perfect for showers, ladies' teas or brunches. My mom used to make these for me as a little girl for our "tea parties". I use the Neufchatel Cheese because its a lighter taste and less fat than cream cheese. They are also good topped with a single, chilled cocktail shrimp. If you can't find cocktail bread, then a regular slice will do - just cut it in half.

- Blend together cream cheese and dressing mix. Spread 1-2 teaspoons of cream cheese mixture on bread.
- Top each slice with a sliver of cucumber.
- Sprinkle with dill.
- Chill for up to 1 day.
EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

- Mix cream cheese, sour cream, mayonnaise, ranch dressing mix, and dried dill in a bowl until creamy and smooth.
- Cut crusts from bread slices; cut sliced bread into decorative shapes (such as rounds or flowers) with cookie cutters. Spread each piece of bread with cream cheese mixture and top with a cucumber slice. Top each canape with a few fresh dill leaves.

- Beat cream cheese, mayonnaise and dressing mix until blended; let stand 30 minutes. , Spread cream cheese mixture on bread. Top each with 2 cucumber slices and, if desired, dill and red onion slivers. Refrigerate, covered, until serving.

- In a small bowl, mix whipped cream cheese and dry Italian-style dressing mix. Spread equal portions of the mixture on slices of the cocktail rye bread. Top each with a slice of cucumber.

- To assemble the sandwiches, begin by very lightly buttering each slice of bread all the way to the edges. Then, spread a scant tablespoon of the dill sauce across each slice of bread. Reserve/use any leftover spread as a vegetable dip, if desired.
- Divide the sliced cucumber over half of the bread slices, slightly overlapping them. Top with the remaining bread slices and cut into triangles or rectangles. Serve and enjoy!
