LIME-SHAPED MARGARITA GELATIN SHOTS

One 3-ounce packet lime flavored gelatin
1/2 cup orange liqueur, such as Cointreau
1/2 cup chile-infused tequila
15 limes
Kosher salt, for sprinkling
Special equipment: mini muffin tin

Steps:

Bring 1 cup water to a boil in a saucepan. Add the lime gelatin and stir until the gelatin dissolves. Pour into a liquid measuring cup and mix in the orange liqueur and tequila.
Meanwhile, cut the limes in half lengthwise and scoop the flesh out of both halves. Place each half in the cups of a mini muffin tin and pour the gelatin mixture into each half. Place the muffin tin in the fridge until set.
Cut each half into 2 wedges, sprinkle with salt and shoot!

1 (6 ounce) box lime Jell-O gelatin (large box)
2 cups boiling water
7/8 cup cold water
1/8 cup fresh-squeezed lime juice
3/4 cup clear tequila
1/4 cup triple sec

Steps:

Mix boiling water and Jello. Stir for a minute until dissolved. Add rest of ingredients, stir.
Pour into small paper dixie cups, cool on one or two cookies sheets stacked in the refrigerator.
Unless you use ice and water for the cold water, allow 5 or more hours for Jello to cool and set.
For every party I throw, I'll make this recipe and one more from Hazel's site to satisfy the partygoers.

I had to make hundreds of Jell-O® shots for a wedding, so I decided to have fun with them and try out some new mixes. This was my margarita-flavored shot, a bit strong but good if you want variety with your selection. If you want them more palatable, substitute water for a bit of the alcohol.

1 cup boiling water
1 (3 ounce) package lime-flavored gelatin mix (such as Jell-O®)
⅓ cup tequila

Steps:

Combine boiling water and gelatin mix in a bowl. Stir to dissolve. Add tequila, triple sec, and water. Stir again.
Pour mixture into shot glasses. Refrigerate until set, about 5 hours.

1/3 cup sugar
3 limes, 2 juiced and 1 cut into small wedges
2/3 cup seltzer water
One 1/4-ounce package unflavored gelatin (about 2 1/2 teaspoons)
2/3 cup tequila
2 tablespoons orange liqueur
Flaky sea salt, for serving

Steps:

Combine the sugar, lime juice and 2/3 cup regular water in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the sugar is dissolved, about 2 minutes. Add the seltzer water to the syrup mixture, sprinkle the gelatin on top and leave it to bloom for 5 minutes.
Microwave the bloomed gelatin mixture until dissolved, about 30 seconds. Sir in the tequila and orange liqueur. Divide the mixture among twelve 2-ounce glasses. Refrigerate until set, at least 3 hours.
Before serving, garnish each shot with a small pinch of flaky sea salt and a lime wedge.

3 envelopes unflavored gelatin
1 can (12 ounces) frozen limeade concentrate, thawed
1 cup tequila
1/4 cup Triple Sec
Optional: kosher salt and lime wedge

Steps:

In a small saucepan, sprinkle gelatin over cold limeade; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Remove from heat. Stir in tequila and triple sec. , Pour into 2-oz. shot glasses; refrigerate until set. If desired, garnish rim with salt and lime. To serve in lime wedges instead of shot classes, halve and juice 6 limes (save juice for another use). Scrape out pulp. Arrange halves in muffin tins for stability. Fill with gelatin mixture. Refrigerate until set; cut each lime half into 2 wedges.

Cut a three inch length of cucumber and coarsely chop (set remaining cucumber aside to make cucumber ribbons). Place the chopped cucumber in cocktail shaker and muddle vigorously. Add the tequila to the cocktail shaker, shake for a minute or so and set aside (no ice is needed).
Pour water and limeade concentrate into a small saucepan and sprinkle with the gelatin. Allow the gelatin to soak for a minute or two. Heat over very low heat until gelatin is dissolved, stirring constantly, about 5 minutes. Remove from heat.
Strain the tequila mixture, and stir into gelatin mixture along with the Cointreau. Pour mixture into loaf pan. Place in refrigerator to set (several hours or overnight).
To serve, cut into squares, and if desired, tie each with a cucumber ribbon (see below for instructions). Mix the ingredients for cayenne sprinkle and serve along side, for dipping.
