2 chipotle chiles in adobo sauce (from 11-oz can), drained, chopped
1/2 teaspoon grated lime peel
1 tablespoon fresh lime juice
4 boneless skinless chicken breasts
1/4 to 1/2 teaspoon salt

Steps:

  • Heat gas or charcoal grill. In 1-quart saucepan, mix preserves, chiles, lime peel and lime juice. Cook over low heat just until preserves are melted, stirring constantly.
  • Sprinkle chicken with salt; place on grill. Cover grill; cook over medium heat 5 minutes.
  • Turn chicken; brush with preserves mixture. Cook 10 to 15 minutes longer, turning and brushing with preserves mixture once or twice, until juice of chicken is clear when center of thickest part is cut (170°F). Discard any remaining preserves mixture.

Steps:

  • Preheat an outdoor grill to medium-high heat.
  • Combine salt, cinnamon, nutmeg, and cloves in a small bowl. Season chicken breasts on all sides with the mixture.
  • In a food processor, puree peach, chipotle, and lemon juice to make a glaze. Set aside.
  • Make the relish by combining diced peaches, bell peppers, onion, and cilantro in a bowl. Spoon a tablespoon of the glaze over and toss. Set aside.

6 bone-in, skin on chicken thighs, (or 4 breasts)
1 tbsp oil, (for browning the chicken)
1 cup fresh peach slices, (or frozen, thawed and drained)
1 1/2 tsp chipotle peppers in adobo sauce
2 tbsp honey
zest of 1 lime
1 tbsp lime juice (freshly squeezed)
fresh or grilled peach slices for garnish, (optional)

Steps:

  • Preheat oven to 375F.
  • Pat chicken pieces dry.
  • Heat a large heavy-bottomed oven-proof skillet on the stove. When heated, add oil to barely cover the surface. Sear chicken on both sides till golden brown and crispy. Drain excess oil.
  • Place skillet in oven (or transfer chicken to a baking dish) and bake for 20 minutes.
  • Meanwhile, put the remaining ingredients in a blender or food processor and blend until smooth. If you want a chunkier peach sauce, blend for just a few seconds.
  • Remove chicken from oven, drain excess oil and baste with the Chipotle Peach Glaze.
  • Return to the oven and bake for another 10 minutes or until meat thermometer indicates an internal temperature of 165°F. Serve garnished with fresh or grilled peach slices.

  • Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.

1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil

4 ripe peaches, halved and pitted

Steps:
