CUCUMBER VODKA COOLER

Steps:
- To make simple syrup, bring the sugar and 1/2 cup water to a simmer in a saucepan on medium heat, then turn off the heat and let cool to room temperature.
- In a tall thermos, add the cucumbers, mint and simple syrup. Stir with the handle of a wooden spoon. Add the lime juice and vodka, then cover and shake vigorously for about 30 seconds. Chill until ready to serve.
- Pour over ice in glasses, then top off with the club soda. Serve immediately.

Steps:
- Muddle cucumber slice and mint leaves with 2-3 ice cubes until well macerated
- Add the rest of the ingredients and shake vigorously in shaker
- Strain over ice in a Collins Glass
- Garnish with cucumber slice and mint leaf
- ENJOY!
- 4 Cups Lime Juice
- 2 Cups SOM Pomegranate Drinking Vinegar
- 1 Cup Simple Syrup* (recipe below)
- Whisk ingredients together to combine
- 2 Cups Granulated Sugar
- 1 Cup Water
- Bring sugar and water to a boil, then turn off stove and cool to room temperature

- Cut 3-4 very thin slices of cucumber for garnishing. I used a vegetable peeler and peeled along the length of the cucumber to get thin long slices. You can also use a sharp knife to cut the slices. Peel the remaining cucumber and chop it into small pieces. Add the chopped cucumber to a blender along with sugar, mint leaves, and 1 cup of water.
- Strain the mixture using a soup strainer. Use a spoon to mash the pulp and get the maximum liquid out of it. Discard the pulp.
- Take 2 glasses and add one thin slice of cucumber to each glass. Add a few ice cubes to each glass. Pour the drink into the glasses. Garnish with lime ring and mint leaves. Serve immediately.
