"WE HAD an enormous vegetable garden, so we enjoyed freshly picked cucumbers in summer. After the cucumber were sliced and soaked awhile in salt water. Mother added thick cream, which she carefully scooped from the top of some fresh milk."

3 medium cucumbers, peeled and thinly sliced
1 medium onion, sliced
2 cups water
1/2 teaspoon salt
3/4 cup heavy whipping cream
1/4 cup sugar
1/4 cup cider vinegar
Minced fresh parsley, optional

Steps:

  • In a bowl, combine cucumbers, onion, water and salt. Let stand for 1 hour; drain and rinse. In a serving bowl, beat cream, sugar and vinegar. Add cucumbers and onion; toss gently. Sprinkle with parsley if desired.

salt to taste
3 cucumbers, peeled and thinly sliced
1 (12 ounce) can evaporated milk
2 tablespoons white vinegar
ground black pepper, to taste

Steps:

  • Sprinkle salt over the cucumber slices in a large bowl, making sure all slices get some salt. Set aside until liquid drains from cucumber slices, 3 to 4 hours. Drain liquid. Squeeze cucumber slices with paper towel to express as much moisture from them as possible.
  • Mix evaporated milk and vinegar together in a glass bowl until thickened. Fold cucumber slices into the milk mixture; season with black pepper.

  • In a bowl, mix the mayonnaise, milk, sugar, and vinegar until smooth. Place cucumber slices in the bowl, and toss to coat with the dressing. Season with salt and pepper. Chill 30 minutes in the refrigerator before serving.

1 tablespoon vegetable oil
2 cups 1/4"-thick slices peeled lemon cucumber or any other cucumber.
Kosher salt
Freshly ground black pepper
2 peeled, seeded, coarsely chopped small tomatoes
4 thinly sliced scallions
2 thinly sliced red thai chiles (with seeds)
1 smashed garlic clove
1/2 cup unsweetened coconut milk
1 1/2 teaspoon honey
1/4 cup fresh cilantro leaves
Fresh lime juice

Steps:

  • Heat vegetable oil in a medium saucepan over medium heat. Add slices peeled lemon cucumber or any other cucumber. Sauté until beginning to soften, about 1 minute. Season with kosher salt and freshly ground black pepper. Add chopped small tomatoes, sliced scallions, sliced red thai chiles (with seeds), and smashed garlic clove. Sauté until vegetables are soft, 2-3 minutes. Add unsweetened coconut milk and honey; simmer until vegetables are cooked through, 2-3 minutes. Stir in fresh cilantro leaves and a squeeze of fresh lime juice. Season with salt and pepper. Serve with rice, if desired.

1 bunch green onions with tops, chopped
1 cup mayonnaise
1/4 cup evaporated milk
1/4 cup vinegar
1/4 cup sugar
2 drops hot pepper sauce
1 teaspoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion salt

Steps:

  • Combine cucumbers and green onions in a large bowl. Cover and let stand for 1 hour. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours.
