- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

- Preheat oven 325 degrees Fahrenheit.
- In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

- In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.

TWENTY-FIVE INGREDIENT MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.
MEAT LOAF

- Heat oven to 350 degrees Fahrenheit. Grease a 9 by 5- inch loaf pan; set aside. In large bowl, beat eggs with milk and salt until well mixed. Stir in bread crumbs, let stand for 5 minutes to soften.
- Add turkey, onion, parsley and thyme to egg mixture; stir until well mixed. Transfer mixture to greased loaf pan. Bake 1 1/4 hours to 1 1/2 hours or until juices run clear when pierced in center of loaf.
- Meanwhile, prepare potato frosting: in 2-quart saucepan, heat yellow potatoes with enough water to cover to boiling over high heat. Reduce heat to simmer; cover and cook potatoes until tender-about 12 minutes.
- Meanwhile, microwave sweet potato on high until fork tender-6 to 8 minutes. Cut sweet potato lengthwise and scoop pulp into small bowl, avoiding fibrous layer next to skin; set aside to cool slightly. Drain cooked yellow potatoes and return to pan. With potato masher, mash potatoes until smooth. Add milk, 1/2 tablespoon salt, 1 tablespoon butter; mash until creamy. Separate egg, stirring egg white into mashed potatoes. Add egg white into mashed potatoes. Add egg yolk, remaining 1 tablespoon butter, and 1/4 teaspoon salt to sweet potato; mash until smooth and spoon into small pastry bag fitted with 1/4 inch wide star tip. Spoon some of mashed yellow potatoes into large pastry bag fitted with 1/4 inch wide star tip. Set both pastry bags aside.
- When meat loaf is done, cool 10 minutes. Carefully strain liquid from meat loaf into 2-quart saucepan and reserve to make gravy, if desired. Unmold meat loaf onto a pizza pan or oven safe serving platter.
- Heat oven to 450 degrees Fahrenheit. Pipe sweet-potato mixture lengthwise on top of loaf and around base. Pipe yellow potato mixture all over to cover meat loaf. Bake frosted loaf 15 minutes or until potato browns slightly.
- Meanwhile, prepare gravy, if desired. If loaf is baked on pizza pan, with 2 broad spatulas, carefully transfer to serving platter. Garnish with thyme sprigs, if desired. Use serrated knife and sawing motion to slice meatloaf.
- For Gravy.
- In saucepan with reserved meat-loaf liquid, whisk in 1 (14 1/2 ounce) can reduced sodium, nonfat chicken broth, 1 teaspoon Worcestershire sauce, and 1/4 teaspoon ground black pepper. Cook over medium heat, stirring constantly, until thickened and bubbly, about 5 minutes.
THE EASIEST MEATLOAF
My mother never used a recipe when making meatloaf so I never had one to go by when I grew up. I found this recipe in a magazine at least 35 yrs ago and have used it ever since. In fact, I don't actually use the recipe any more... since it's memorized. Recently, my son asked for the recipe so I suppose I need to enter this in the db for future reference. This is comfort food around here... served with either mashed potatoes or rice, gravy, and peas & carrots. Also makes the best meatloaf sandwiches!

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix ground beef, mayonnaise, bread crumbs, mustard, onion, salt, and pepper together in a large bowl until well combined. Transfer mixture to a 9x5-inch loaf pan with high sides. Form into a loaf by picking it up and forcing it down into the pan, making sure to knock out any air and square off all sides.
- Bake in the preheated oven for 30 minutes. Spin pan and bake for an additional 30 minutes.
- Mix steak sauce, ketchup, and sugar together in a small bowl.

HOMESTYLE MEATLOAF
I got this recipe out of the Fannie Farmer Boston Cooking School cookbook. It is now my only meatloaf recipe and my family is constantly requesting it. I did change slightly and you can change the ketchup and water to just water or just milk. The Parmesan cheese can be omitted as well. If you prefer you can use any other type of ground beef. And the original recipe called for bacon placed on top.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.
